Sull'altopiano di Meknès, dove il Marocco comincia a salire verso il Medio Atlante, c'è una delle zone vinicole storiche del paese. In the commune of Aït Bourzouine, just outside El Hajeb, a ninety-hectare estate farms its best parcels above 850 metres. It is called Villa Volubilia; for years we knew it as Domaine de la Zouina.

La tenuta conta novanta ettari di vigna e quindici di uliveto, su quelle che la cantina chiama le prime pendici dell'Atlante, a un passo da Boufekrane e a mezz'ora di strada da Meknès. Sono pochi ettari, in un paese dove le proprietà storiche si misurano in centinaia: lo Château Roslane, poco lontano nella stessa provincia di El Hajeb, ne ha settecento piantati a vite.The estate has ninety hectares of vines and fifteen of olive groves, on what the winery calls the first slopes of the Atlas, a step away from Boufekrane and half an hour's drive from Meknès. That is a small holding in a country where the historic properties are counted in hundreds of hectares: Château Roslane, not far away in the same province of El Hajeb, has seven hundred under vine.

Altitude is what brings cool nights and slows ripening down.

È un limite, non un vanto: dove l'acqua manca, ogni scelta in vigna diventa una scelta di sopravvivenza.The estate describes its own climate without sweetening it: rainfall that skirts the threshold at which a vine can survive, and days that, when the Chergui blows in from the Sahara, can reach fifty degrees for several days running. That is a limit, not a boast: where water is short, every decision in the vineyard becomes a decision about survival.
Da qui la linea che l'azienda si è data e che dichiara apertamente: adattare le pratiche agricole a un clima estremo invece di combatterlo, e guardare al proprio vigneto come a un banco di prova di quello che il riscaldamento porterà altrove. È una posizione che vale la pena ascoltare anche da fuori: quello che a Meknès è normale amministrazione — quota, notti fresche, acqua contata — comincia a somigliare al problema di molte zone del Mediterraneo. È la stessa domanda che si fanno, all'altro capo del continente, i piccoli produttori di Stellenbosch: come si prepara oggi una vigna al clima di domani.Hence the line the estate has chosen and states openly: adapt farming practices to an extreme climate rather than fight it, and treat its own vineyard as a testing ground for what warming will bring elsewhere. It is a stance worth listening to from outside as well: what counts as routine in Meknès — elevation, cool nights, water measured out — is starting to look like the problem facing much of the Mediterranean. It is the same question being asked at the other end of the continent by the small growers of Stellenbosch: how do you get a vineyard ready today for tomorrow's climate.

La tenuta nasce nel 2002 per iniziativa di Gérard Gribelin, per quasi trent'anni alla guida dello Château de Fieuzal, cru classé di Bordeaux. Nel 2005 entra Philippe Gervoson, proprietario dello Château Larrivet Haut-Brion a Pessac-Léognan, oggi azionista di maggioranza. La direzione operativa è fin dall'inizio di Christophe Gribelin.The estate was founded in 2002 by Gérard Gribelin, for nearly thirty years at the helm of Château de Fieuzal, a Bordeaux cru classé. In 2005 Philippe Gervoson came in, owner of Château Larrivet Haut-Brion in Pessac-Léognan and today the majority shareholder. Day-to-day management has been in the hands of Christophe Gribelin from the start.
Nel 2021 è entrato nel capitale Maxime Double, comproprietario dello Château de Beaupré in Provenza, con la direzione strategica. Ed è di questi anni anche il cambio di nome: sull'etichetta il nome che la tenuta usa oggi è Villa Volubilia, un rimando a Volubilis, la città romana poco a nord di Meknès.In 2021 Maxime Double, co-owner of Château de Beaupré in Provence, joined the ownership and took over strategy. The change of name dates from these same years: the name the estate now uses on the label is Villa Volubilia, a nod to Volubilis, the Roman city just north of Meknès.

La linea di casa si chiama Volubilia e nasce su suoli argillo-calcarei. Il rosso è un assemblaggio di Cabernet Sauvignon (45%), Syrah (40%) e Tempranillo (15%), affinato quindici mesi in vasca; il bianco mette insieme Chardonnay (90%) e Vermentino (10%); la versione rosata parte dal Mourvèdre (55%) con Caladoc, Marselan e un saldo di Cabernet Sauvignon, pressatura diretta e quattro mesi in vasca.The house range is called Volubilia and comes from clay-limestone soils. The red blends Cabernet Sauvignon (45%), Syrah (40%) and Tempranillo (15%), aged fifteen months in tank; the white puts together Chardonnay (90%) and Vermentino (10%); the rosé is led by Mourvèdre (55%) with Caladoc, Marselan and a touch of Cabernet Sauvignon, direct pressing and four months in tank.
La selezione Fleur de Volubilia viene invece dalle parcelle più alte, sopra gli 850 metri, su terreni argillo-sabbiosi: Cabernet Sauvignon e Syrah in parti uguali nel rosso, Viognier (70%) e Rolle — il nome francese del Vermentino — nel bianco, vendemmia a mano e diciotto mesi in anfore di gres da 750 litri. È l'unica etichetta per cui la cantina dichiara una denominazione: l'AOC Hauts plateaux de Meknès. Il gres non è la terracotta interrata dei qvevri georgiani, ma la ragione è la stessa: un contenitore che non cede legno né aromi. In Georgia l'anfora non ha mai smesso di lavorare, come si vede in una piccola cantina del Kakheti.The Fleur de Volubilia selection, by contrast, comes from the highest parcels, above 850 metres, on clay-sand soils: Cabernet Sauvignon and Syrah in equal parts for the red, Viognier (70%) and Rolle — the French name for Vermentino — for the white, hand harvesting and eighteen months in 750-litre stoneware amphorae. It is the only label for which the estate declares an appellation: AOC Hauts plateaux de Meknès. Stoneware is not the buried terracotta of the Georgian qvevri, but the reason is the same: a vessel that adds neither wood nor aromas. In Georgia the amphora never stopped working, as you can see in a small Kakheti winery.

The AOG — appellation d'origine garantie — are the initials you read most often on the Moroccan bottles that reach Europe: Guerrouane around Meknès, Zenata towards Casablanca. Among the AOC you come across Coteaux de l'Atlas and Côtes de Rommani. Villa Volubilia claims AOC Hauts plateaux de Meknès for its selection, and on its own fact sheets that is the only appellation to appear: for the Volubilia range the label simply says wine of Morocco.
