Few grapes have travelled so far. Born on Bordeaux's rive gauche from a chance crossing, Cabernet Sauvignon is today among the most widely planted red grapes on the planet — and in Italy it found a second home on the Tuscan coast, at Bolgheri.
Il carattereThe character
Dove cresceWhere it grows
A small, thick-skinned berry, Cabernet Sauvignon buds late and ripens late: it loves warm, dry climates where it reaches full ripeness. Its historic capital is Bordeaux's Médoc — Pauillac, Margaux, Saint-Julien — but it has conquered California's Napa Valley, Coonawarra and Margaret River in Australia, Chile's Maipo Valley and Stellenbosch in South Africa. In Italy it grows in Friuli, Veneto, Trentino-Alto Adige and Sicily, but it is on the Tuscan coast, at Bolgheri, that it wrote its most famous chapter with the Super Tuscans.
On the coastal strip of the Livorno Maremma the sea tempers the swings in temperature and the gravelly soils drain freely: Cabernet ripens slowly and fully, with dense but ripe tannins. Here, from the 1960s, the idea of vinifying Bordeaux grapes on their own or in a blend gave birth to the Super Tuscans. The Bolgheri Rosso rules allow up to 100% Cabernet Sauvignon; the Bolgheri Sassicaia denomination — the only Italian DOC that coincides with a single estate — requires at least 80%.

A tavolaAt the table
A structured wine with firm tannin, it calls for hearty dishes. It sits beautifully with a Florentine T-bone steak or a braise, where the juicy meat softens the tannin; it pairs with roast lamb and game; with an aged pecorino it meets a match of its own stature. Try it too on a grilled beef burger.

For centuries the origin of Cabernet Sauvignon remained a mystery. Only in 1997 did DNA analysis at the University of California, Davis, reveal that it was born from a chance, spontaneous crossing between a red grape, Cabernet Franc, and a white one, Sauvignon Blanc — a far younger relative than its fame suggests.
