Chardonnay

Born in Burgundy, it takes its name from the village of Chardonnay in the Mâconnais. DNA reveals it as a child of Pinot and Gouais blanc.

One of the world's most widely planted and versatile international whites: a blank canvas that takes on the face of the place and the hand that works it. From taut high-altitude bubbles to great creamy barrel-aged whites, Chardonnay can be everything — while always staying recognisable.

BoccaPalate
Chameleon-like: creamy and soft in warm climates and oak, taut and savoury at altitude; always with good structure and freshness.

Dove cresceWhere it grows

From a Burgundian grape it has become a citizen of the world: it is one of Champagne's three main grapes — 31% of the vineyard area — where on its own it makes the Blanc de Blancs of the Côte des Blancs, and it thrives in California, Australia, Chile, South Africa and New Zealand. In Italy it is most at home in Alto Adige and Trentino — where altitude gives it tension and finesse — then in Franciacorta, the Langhe and Alta Langa for classic-method sparkling, and in Tuscany and Sicily for fuller, sun-filled still versions. It favours poor, limestone soils, which sustain its acidity and its elegance.

La migliore espressioneWhere it shines
Bourgogne
Chablis · Meursault · Montrachet

It is here — in the Côte de Beaune grands crus like Montrachet and Corton-Charlemagne, in the premiers crus of Meursault, and in more mineral Chablis (100% Chardonnay, AOC since 1938) — that Chardonnay reaches its peak: limestone soils, a cool climate and skilled hands give it depth and an ageing potential the rest of the world chases. Honestly: its true homeland remains French.

Fermo, in acciaioStill, in steel
Senza legno: agrumi, mela e fiori, profilo teso e diretto. Without oak: citrus, apple and flowers, a taut and direct profile. The fresh style of much Alpine Chardonnay and of the Chablis model.

Barrique and lees add hazelnut, butter and creaminess: the great whites of Burgundy, Tuscany and California. Balance and a light hand are needed not to bury the fruit.
Spumante Metodo ClassicoClassic-Method sparkling
The base of the great classic-method sparklers: from Champagne Blanc de Blancs to Franciacorta, Trentodoc and Alta Langa. Its natural acidity makes it well suited to a second fermentation in the bottle.

A tavolaAt the table

It changes the table with its style. The taut, unoaked, fresh and savoury version pairs with oysters, raw seafood and grilled fish. Creamy oak-aged Chardonnay, soft and structured, goes with roast poultry, butter-rich risottos and fish in sauce, and sits well with soft and medium-aged cheeses. Classic-method sparkling, with its freshness and bubbles, is perfect as an aperitif and with fried fish.

CuriositàDid you know

In Italia la svolta porta una data e un nome: il «Gaia & Rey» di Angelo Gaja, dal 1983, tra i primi grandi bianchi italiani affinati in barrique.DNA revealed that Chardonnay is the spontaneous cross of Pinot and Gouais blanc — the very parents of Gamay, Aligoté and Melon (Muscadet): they are all siblings. Long confused with Pinot blanc, it owes its global fame to its sheer adaptability — so much so that the 1990s even spawned an «Anything But Chardonnay» backlash against overly oaky versions. In Italy the turning point has a date and a name: Angelo Gaja's «Gaia & Rey», from 1983, one of the first great Italian whites aged in barrique.
