Around it, mountain profiles — the Simonsberg to the north, the Hottentots Holland to the east — frame a landscape of rolling hills, vineyards and fynbos. The ocean is out of sight from most vineyards, but felt: False Bay, to the southwest, delivers maritime currents that temper summer heat, lengthen the growing season and preserve the aromatic freshness of the grapes. Soils shift over a matter of kilometres — decomposed granite, shale, sandstone — and this variability is one reason why Stellenbosch is such a rich district. This is not a place where all wines taste the same.

Then there is Pinotage, a variety born in South Africa in 1925 from a cross of Pinot Noir and Cinsault — locally known as Hermitage — by Professor Abraham Izak Perold at Stellenbosch University: a grape that looks inward, not towards France. Alongside these three, Syrah — often written Shiraz in the New World — and Sauvignon Blanc complete the landscape.

And it is among the latter that some of the most interesting stories in contemporary South African wine are found. Alluvia Boutique Winery is a concrete example: a small estate on the slopes of Stellenbosch where owner-winemaker Delarey Brugman has made Cabernet Franc his standard — a more demanding, more nervous variety than Cabernet Sauvignon, one that asks for precision in the vineyard to express itself fully. Pairing it with Sauvignon Blanc, Merlot and Petit Verdot in a small-production project is itself a statement of faith: quality before volume.

Purchased by British wine merchant Paul Boutinot in 2004 and producing its first wine in 2005, it was built around a declared biodynamic approach: no herbicides or synthetic pesticides, soil tended through compost and Steiner preparations, with attention to lunar cycles. BWI Champion status — the Biodiversity and Wine Initiative is South Africa's certification for biodiversity conservation in the vineyard — is not a wine competition prize: it is a concrete commitment, hard to earn and hard to keep. Its Circumstance and Circle of Life ranges embody this philosophy: names suggesting wine as the result of specific soil circumstances, not a repeatable formula.

Un Cabernet Sauvignon di Stellenbosch si presenta rosso rubino intenso con riflessi violacei in gioventù; al naso è fruttato — ribes nero, prugna, a volte un tocco di cedro o menta — con speziatura che cresce nel tempo. In bocca è di buon corpo, con tannino presente e acidità sostenuta che danno struttura e longevità: chiede piatti saporiti e sostanziosi, come carne alla brace, agnello lentamente stufato o formaggi stagionati. Il Chenin Blanc secco, fresco e sapido, è invece un bianco versatile che si trova a proprio agio con un piatto di pesce, un risotto con erbe aromatiche o una pasta al ragù bianco. Il Pinotage, quando è maturo e non sovramaturato, presenta note affumicate e fruttate — mora, frutti rossi maturi — che accompagnano bene arrosti di maiale o piatti con componenti affumicati.A Stellenbosch Cabernet Sauvignon shows an intense ruby red with violet hues in its youth; on the nose it is fruity — blackcurrant, plum, sometimes a note of cedar or mint — with spice that builds over time. On the palate it is full-bodied, with present tannin and sustained acidity that give structure and ageing potential: it calls for savoury, substantial dishes, such as grilled meat, slow-braised lamb or aged cheeses. Dry Chenin Blanc, fresh and savoury, is a versatile white that feels at home with a fish dish, a herb risotto or a pasta with white ragù. Pinotage, when ripe but not over-ripe, shows smoky and fruity notes — blackberry, ripe red fruits — that pair well with roast pork or dishes with smoked elements.
