Il Vermentino è un'uva mediterranea: ama il sole, il vento e i suoli poveri e drenanti vicino al mare. La sua casa d'elezione è la Gallura, nel nord-est della Sardegna, sui graniti decomposti che si sgretolano in sabbia; ma è di casa in tutta l'isola, in Liguria — dove convive con il biotipo Pigato lungo la Riviera di Ponente e nei Colli di Luni — e lungo la costa toscana, da Bolgheri alla Maremma. In Piemonte, lontano dal mare, la stessa uva prende il nome di Favorita. Fuori dall'Italia è uno dei bianchi principali della Corsica (Vermentinu) e della Provenza, e si coltiva anche in Linguadoca: in Francia lo chiamano Rolle. Il mare non «sala» il vino: agisce sull'ambiente — le brezze asciugano i grappoli e tengono lontane le muffe, le forti escursioni tra il giorno e la notte preservano profumi e acidità.Vermentino is a Mediterranean grape: it loves sun, wind and the poor, free-draining soils near the sea. Its chosen home is Gallura, in north-eastern Sardinia, on decomposed granite that crumbles into sand; but it is at home across the whole island, in Liguria — where it lives alongside the Pigato biotype along the Riviera di Ponente and in the Colli di Luni — and along the Tuscan coast, from Bolgheri to the Maremma. In Piedmont, far from the sea, the same grape takes the name Favorita. Beyond Italy it is one of the main white grapes of Corsica (Vermentinu) and Provence, and is also grown in Languedoc: in France they call it Rolle. The sea doesn't «salt» the wine: it works on the environment — breezes dry the bunches and keep mould at bay, while the wide day-night temperature swings preserve aromas and acidity.

Il Vermentino è nato per la tavola di mare. La sua freschezza e la sua sapidità accompagnano i crudi di pesce, le ostriche e i crostacei; sta benissimo con gli spaghetti alle vongole e, in Sardegna, con la fregola con le arselle e con la bottarga. Regge il pesce alla griglia e le fritture leggere, mentre il corpo delle versioni più strutturate si sposa con le zuppe di pesce e i formaggi freschi. In versione ligure, sotto il nome di Pigato, è il compagno classico delle trofie al pesto.Vermentino was born for the seafood table. Its freshness and savouriness suit raw fish, oysters and shellfish; it sits beautifully with spaghetti alle vongole and, in Sardinia, with fregola with clams and with bottarga. It handles grilled fish and light fried dishes, while the body of the more structured versions pairs with fish soups and fresh cheeses. In its Ligurian guise, as Pigato, it is the classic partner for trofie al pesto.
