Few white grapes are this instantly recognisable: fresh-cut grass, tomato leaf, grapefruit and a streak of flint. Born in France between the Loire and Bordeaux, Sauvignon Blanc conquered the world while staying true to itself — crisp, nervy, immediate — and in Italy it found a second home of real finesse in the North-East and Alto Adige.
Il carattereThe character
Dove cresceWhere it grows
Its historic homeland is France. In the eastern Loire — Sancerre and Pouilly-Fumé — it gives the tautest, most mineral whites; in Bordeaux it blends with Sémillon in the dry wines of Graves and Pessac-Léognan and the botrytised sweets of Sauternes. In the 1980s New Zealand, and Marlborough in particular, rewrote its style with an explosive tropical-fruit version that the rest of the world learned from. In Italy it found ideal ground in the North-East — Collio, Friuli Colli Orientali and Isonzo — and in Alto Adige, where altitude and cool nights give crisp aromas and sharp acidity. It is also grown in California (often labelled Fumé Blanc), Chile, South Africa and Australia.
On the flint and Kimmeridgian limestone soils of the eastern Loire, Sauvignon reaches its finest balance: the exuberant fruit turns restrained, leaving room for a smoky gunflint note — the very 'fumé' of Pouilly — and an acidity that ages. Not power but depth: the benchmark for the grape worldwide.

A tavolaAt the table
Its cutting acidity and savoury drive make it a versatile partner at the table. It is superb with asparagus and artichokes, ingredients that defeat almost any wine; it pairs with oysters, raw seafood and scallops; and with fresh goat's cheese it forms a textbook match — Crottin de Chavignol and Sancerre come from the same land. Good too with sushi, fresh herbs and light seafood cooking.

CuriositàDid you know
Sauvignon Blanc is a true founder: together with Cabernet Franc it is a parent of Cabernet Sauvignon (DNA proved it in 1997), while it itself descends from Savagnin/Traminer. The name likely echoes the French «sauvage», wild, for the vine's almost spontaneous vigour. In California it often goes by «Fumé Blanc», a label coined in the 1960s by Robert Mondavi to ennoble a then-unloved grape.
