Over the coals it forms a dark crust that smells of the fire, while the centre stays pink. The fat melts and, with the juice, coats the mouth at every bite. The wine that suits it best is a red with firm tannin and lively acidity, such as Nebbiolo from the Langhe, Tempranillo from Rioja or Montepulciano d'Abruzzo. If red is not your wine, there are two alternatives that work: a Champagne made mostly from Pinot Noir, and a Negroamaro rosé from Salento.
Perché funzionaWhy it works
A côte de bœuf brings three different things to the table. The first is juice: meat cut this thick stays pink in the centre, and every slice floods the mouth. The second is fat, which here does not sit only along the edge but runs in fine streaks through the meat and, melted by the heat, leaves the palate coated at the end of each bite. The third is the crust, darkened over the coals, with a toasted flavour that lingers.
Each quality of the wine deals with one of these. Tannin and alcohol dry the mouth that the juice has wetted and the melted marbling has left slick, so the next bite arrives clean: this is why such juicy meat can carry reds that would feel hard next to a well-done slice. The fat along the edge is cleaned away instead by freshness — the acidity that makes you salivate — and, in sparkling wines, by the bubbles too. The crust calls for a wine as intense and persistent as it is: a light red simply disappears beside toasted meat.
The limit lies in excess. A very alcoholic red with little freshness makes each bite feel heavy, and too much new oak covers the flavour of the meat. The serving temperature matters as well: a full-bodied red should be poured at 16-18 °C, because any warmer and the alcohol takes over right beside the meat.
Tre strade nel bicchiereThree routes in the glass
Red, the textbook route. Meat that floods the mouth with every slice calls for a red with firm tannin, and the fat in the marbling and along the edge also wants lively acidity: Nebbiolo has both. The Barolo Albe from G.D. Vajra comes from three vineyards in the commune of Barolo and matures in large oak casks: it has the structure for a serious côte de bœuf. The Langhe Nebbiolo from the Produttori del Barbaresco is the younger, more immediate version of the same grape, with less structure and an everyday price. Rioja offers another route: Viña Ardanza from La Rioja Alta, Tempranillo with a share of Garnacha, spends years in American oak barrels and has smoother tannin, suited to anyone looking for a less austere red. The Montepulciano d'Abruzzo from Masciarelli's classic line, made in stainless steel, brings fruit, fine tannin and good freshness at a low price.
Sparkling, the road less travelled. A Champagne with plenty of Pinot Noir has the body to sit beside the meat, and its bubbles and acidity clean the fat from the palate with every sip. Bollinger's Special Cuvée, a Brut Champagne made with 60% Pinot Noir, is the bottle for a côte de bœuf carved into slices and served with little dressing.
Rosé, for those who would rather not drink red. A deep-coloured rosé with good freshness holds up to the meat better than you might think and deals with the fat along the edge. Five Roses Anniversario from Leone de Castris, made from Negroamaro grapes in Salento, Apulia, is the choice for summer, with the meat sliced and served just warm.

What is written here applies to côte de bœuf cooked rare or medium and seasoned simply: salt, pepper, at most a drizzle of oil or a sprig of rosemary. A butter or green-peppercorn sauce, or a red-wine reduction, changes the balance and calls for different thinking, and cooking it well done dries the meat, which then carries less tannin.
