È il rosso del sole del Salento. Il Negroamaro matura nel caldo mediterraneo tra i due mari, l'Adriatico e lo Ionio, e ne esce un vino di colore fitto, caldo e morbido, con una firma leggermente amaricante. Il nome, però, non ha nulla a che vedere con l'amaro del gusto: nasce dal doppio «nero» di niger (latino) e mavros (greco). Grande protagonista dei rossi da invecchiamento, è anche l'anima di uno dei rosati più antichi d'Italia.It is the sun-drenched red of the Salento. Negroamaro ripens in the Mediterranean heat between two seas, the Adriatic and the Ionian, and yields a wine of dense colour, warm and supple, with a faintly bitter signature. Its name, though, has nothing to do with bitterness on the palate: it is built on a double «black», niger (Latin) and mavros (Greek). A star of age-worthy reds, it is also the soul of one of Italy's oldest rosés.

La sua patria è il Salento, la penisola tra Adriatico e Ionio che comprende le province di Lecce e Brindisi e parte del Tarantino. Qui il vitigno cresce sulle celebri terre rosse — argille ricche di ferro sopra il banco calcareo — in un clima caldo e ventilato: le brezze dei due mari mitigano l'estate torrida e asciugano i grappoli, mentre le escursioni fra giorno e notte tengono a bada l'eccesso di zuccheri. La forma di allevamento storica è l'alberello, basso e cespuglioso, che protegge le uve dal sole. La freschezza «minerale» che a volte si legge nel bicchiere è un descrittore sensoriale: il suolo e il mare agiscono sull'ambiente della vigna, non passano nella bottiglia.Its homeland is the Salento, the peninsula between the Adriatic and the Ionian that takes in the provinces of Lecce and Brindisi and part of the Taranto area. Here the grape grows on the famous red soils — iron-rich clays over limestone bedrock — in a hot, breezy climate: the winds off the two seas temper the scorching summer and dry the bunches, while the day-to-night swings rein in excess sugar. The historic training system is the low, bushy alberello, which shades the fruit from the sun. The «mineral» freshness sometimes read in the glass is a sensory descriptor: soil and sea act on the vineyard's environment, they do not pass into the bottle.

Nata nel 1976 attorno al comune di Salice Salentino, tra Lecce e Brindisi, deve la sua fama alle argille ferrose e alle brezze del Golfo di Taranto, che permettono all'uva di maturare piena senza perdere equilibrio. Il Salice Salentino Rosso nasce a base Negroamaro (almeno il 75% per disciplinare, con fino a un quarto di altre uve a bacca nera della zona: per tradizione la Malvasia Nera, che ne smussa il tratto amaricante), e sale al 90% nelle tipologie che portano il nome del vitigno; la Riserva ne dà la versione più profonda e longeva. La stessa denominazione firma anche un rosato di grande tradizione.This is the appellation that carried Negroamaro to the world. Born in 1976 around the town of Salice Salentino, between Lecce and Brindisi, it owes its fame to iron-rich clays and the breezes of the Gulf of Taranto, which let the grape ripen fully without losing balance. Salice Salentino Rosso is built on Negroamaro (at least 75% under the production rules, with up to a quarter of other local black grapes: by tradition Malvasia Nera, which softens its bitter edge), rising to 90% in the bottlings that carry the grape's name; the Riserva gives its deepest, longest-lived version. The same appellation also signs a rosé of great tradition.

Il Negroamaro è il vino della cucina pugliese. Il rosso strutturato accompagna le orecchiette al ragù di braciole, l'agnello al forno con le patate, le carni alla brace e i formaggi stagionati come il caciocavallo podolico e il pecorino. Il rosso più giovane e fruttato, servito appena fresco, sta bene sui salumi, sulle polpette al sugo e sulle verdure ripiene. Il rosato, sapido e di corpo, è perfetto sulla frittura di pesce, sui primi coi frutti di mare e sulla pizza. A invitare al sorso successivo è la sua freschezza; sui piatti più grassi il palato lo ripuliscono l'acidità e il tannino, mentre la vena amaricante chiude il sorso asciutto.Negroamaro is the wine of Puglia's kitchen. The structured red goes with orecchiette in braised-beef ragù, roast lamb with potatoes, grilled meats and aged cheeses such as caciocavallo podolico and pecorino. The younger, fruitier red, served slightly cool, sits well with cured meats, meatballs in sauce and stuffed vegetables. The rosé — savoury and full — is perfect with fried fish, seafood pasta and pizza. What invites the next sip is its freshness; on the richer dishes it is the acidity and the tannin that clear the palate, while the bitter streak closes the sip on a dry note.

Le due metà valgono entrambe «nero» — niger in latino e mavros in greco — e insieme fanno «nero nero», forse passato per il dialettale niuru maru. La tradizione lo dice portato dai coloni greci o illirici, ma le analisi del DNA moderne non hanno trovato legami con le uve greche, e i suoi genitori restano ignoti: un antico autoctono pugliese, non un forestiero. Della sua vocazione al rosato resta una data simbolo: nel 1943, a Salice Salentino, Leone de Castris imbottigliò il Five Roses, considerato il primo rosato italiano venduto in bottiglia.The name misleads: it comes not from the wine's bitterness but from its colour. Both halves mean «black» — niger in Latin and mavros in Greek — and together they make «black black», perhaps by way of the dialect niuru maru. Tradition has it brought by Greek or Illyrian settlers, but modern DNA analysis found no links with Greek grapes, and its parents remain unknown: an ancient Apulian native, not a foreigner. Of its calling for rosé one date stands out: in 1943, at Salice Salentino, Leone de Castris bottled Five Roses, held to be the first Italian rosé sold in a bottle.
