Sulla brace il vino ha tre lavori, non uno. Il primo è tenere testa al succo che la carne rilascia a ogni morso: serve un rosso con tannino e calore, altrimenti il sorso sparisce sotto la carne. Il secondo è ripulire la bocca dal grasso della salsiccia e delle costine, e lì servono acidità e bollicine. Il terzo è smussare l'amaro della crosta annerita, e lo fa un rosso di frutto maturo. Un vino solo raramente li fa bene tutti: per questo qui trovate rossi, due bollicine e un rosato, e per ognuno il momento giusto per versarlo.Over the embers, wine has three jobs, not one. The first is standing up to the juices the meat releases with every bite: that calls for a red with tannin and warmth, or the wine disappears under the meat. The second is rinsing the mouth clean of the fat in sausages and ribs, and there you want acidity and bubbles. The third is taking the edge off the bitterness of the charred crust, and a red with ripe fruit does that. One bottle rarely does all three well, which is why you will find reds, two sparkling wines and a rosé below, each with the right moment to pour it.

La carne cotta sulla brace porta nel piatto tre cose diverse, e ognuna chiede una risposta diversa nel bicchiere: il succo che esce a ogni morso, il grasso che si scioglie sul fuoco, l'amaro leggero della crosta annerita.Meat cooked over embers brings three different things to the plate, and each one asks for a different answer in the glass: the juices that run with every bite, the fat that melts over the fire, the faint bitterness of the charred crust.

Il succo è il primo problema. Un rosso sottile e scattante ci si perde dentro: quello che serve è il tannino, che asciuga la bocca e la prepara al boccone successivo, insieme al calore dell'alcol. È il motivo per cui su una costata funzionano l'Aglianico, la Barbera di lunga macerazione o il Tempranillo della Ribera del Duero.The juices are the first problem. A slender, nimble red gets lost in them: what you need is tannin, which dries the mouth and readies it for the next bite, along with the warmth of the alcohol. That is why a rib steak works with Aglianico, with a long-macerated Barbera, or with Tempranillo from Ribera del Duero.

Il grasso vuole l'opposto: acidità e bollicine, che sciacquano il palato e lo lasciano pulito. Su costine, salsiccia e pancetta un Lambrusco Grasparossa spumante o un metodo classico fanno un lavoro che nessun rosso importante può fare, ed è la stessa ragione per cui funzionano sulle grigliate di verdure.Fat wants the opposite: acidity and bubbles, which rinse the palate and leave it clean. On ribs, sausage and pancetta a sparkling Lambrusco Grasparossa or a traditional-method wine does a job no serious red can do, and it is the same reason they work with grilled vegetables.

Poi c'è la crosta. Le parti annerite lasciano una nota amara, e un vino con tannino ancora ruvido la raddoppia invece di smussarla. Meglio un rosso di frutto maturo, con il legno già assorbito: è la morbidezza del vino a rimettere in equilibrio l'amaro del fuoco.Then there is the crust. The charred parts leave a bitter note, and a wine whose tannin is still rough doubles it instead of smoothing it. Better a red with ripe fruit and the oak already absorbed: it is the softness of the wine that brings the bitterness of the fire back into balance.

Un'ultima cosa, che vale più di metà dell'abbinamento: la temperatura di servizio. Un rosso di corpo servito a ventidue gradi d'estate sa soprattutto di alcol; sceso a sedici o diciotto ritrova frutto e beva. Il Lambrusco, al contrario, non va gelato: sotto i dieci gradi si chiude e resta solo l'acidità; un metodo classico, invece, dà il meglio proprio fra gli otto e i dieci.One last thing, worth more than half the pairing: serving temperature. A full-bodied red served at twenty-two degrees in summer tastes mostly of alcohol; brought down to sixteen or eighteen it finds its fruit and its drinkability again. A red Lambrusco, on the other hand, should not be iced: below ten degrees it closes up and only the acidity is left; a traditional-method wine, by contrast, is at its best between eight and ten degrees.

Il manzo — costata, tagliata, fiorentina — è il taglio che chiede di più: molto succo, poco condimento, una crosta importante. Qui vanno i rossi di corpo, con tannino maturo e qualche anno alle spalle: Taurasi, Barbera d'Asti da vigna vecchia, Ribera del Duero. Serviteli a sedici-diciotto gradi e apriteli una mezz'ora prima.Beef — rib steak, tagliata, fiorentina — is the cut that asks the most: plenty of juice, little seasoning, a serious crust. Full-bodied reds belong here, with ripe tannin and a few years behind them: Taurasi, an old-vine Barbera d'Asti, Ribera del Duero. Serve them at sixteen to eighteen degrees and open them half an hour ahead.

Con il maiale, le costine e la salsiccia comanda il grasso. Un Lambrusco Grasparossa spumante secco è una delle scelte più centrate che l'Italia offra per questo piatto: bollicina e acidità sul grasso, e quel tanto di tannino che l'uva porta con sé per il succo della carne. In alternativa funziona un rosato di struttura come il Cerasuolo d'Abruzzo, che ha colore e polpa a sufficienza per non sparire accanto al fuoco.With pork, ribs and sausage the fat is in charge. A dry sparkling Lambrusco Grasparossa is one of the most convincing choices Italy offers for this dish: bubbles and acidity for the fat, and just enough tannin from the grape for the meat's juices. A rosé with substance such as Cerasuolo d'Abruzzo also works, with enough colour and flesh not to vanish beside the fire.

Il pollo e le carni bianche alla brace pongono il problema opposto: la pelle croccante è grassa, ma la carne sotto è più delicata e un rosso di corpo la coprirebbe. Qui sta meglio un metodo classico che abbia struttura — un Blanc de Noirs da Pinot Nero, per esempio — oppure lo stesso rosato del punto precedente.Chicken and white meats over the embers pose the opposite problem: the crisp skin is fatty, but the meat underneath is more delicate and a full-bodied red would cover it. A traditional-method wine with some structure sits better here — a Blanc de Noirs from Pinot Noir, for instance — or the same rosé as above.

La tavola mista, poi, è il caso più frequente. Se sul fuoco finiscono insieme manzo, salsiccia e verdure, conviene tenere due bottiglie aperte: una bollicina rossa o un rosato per la parte grassa, e un rosso di media struttura — Nero di Troia, Cannonau — per la carne rossa. Funziona meglio di un vino solo che prova a fare tutto e riesce a metà.A mixed table, then, is the most common case of all. If beef, sausage and vegetables all end up on the fire together, keep two bottles open: a red sparkling wine or a rosé for the fatty side, and a medium-bodied red — Nero di Troia, Cannonau — for the red meat. Braida, a Rocchetta Tanaro nel Monferrato astigiano, è una delle case di riferimento per la Barbera d'Asti. Il Bricco dell'Uccellone nasce da uve Barbera in purezza e passa venti giorni sulle bucce, dodici mesi in barrique e un anno in bottiglia prima di uscire: tannino e calore per il succo della costata.Braida, at Rocchetta Tanaro in the Monferrato hills of Asti, is one of the benchmark houses for Barbera d'Asti. Bricco dell'Uccellone is made from Barbera as a single variety and spends twenty days on the skins, twelve months in barrique and a year in bottle before release: tannin and warmth for the juices of a rib steak.

Cleto Chiarli, a Modena dal 1860, è una delle case storiche del Lambrusco. Il vigneto che dà il nome alla bottiglia sta al centro della tenuta di famiglia, a Castelvetro di Modena. In etichetta il Vigneto Cialdini porta la dicitura Lambrusco Grasparossa di Castelvetro DOC Spumante Rosso Brut: è la bottiglia da mettere in fresco quando si accende il fuoco per le costine e la salsiccia.Cleto Chiarli, in Modena since 1860, is one of the historic Lambrusco houses. The vineyard that gives the bottle its name sits at the centre of the family estate, at Castelvetro di Modena. On the label, Vigneto Cialdini reads Lambrusco Grasparossa di Castelvetro DOC Spumante Rosso Brut: this is the bottle to chill when the fire goes on for ribs and sausage.

Cantine Torrevento ha sede a Corato, in provincia di Bari, nella zona del Castel del Monte. Il Vigna Pedale è un Castel del Monte Rosso Riserva DOCG da Nero di Troia in purezza di contrada Pedale, e riposa otto mesi in acciaio e dodici in botte grande. Il frutto maturo e il legno già assorbito sono la risposta all'amaro della crosta.Cantine Torrevento is based at Corato, in the province of Bari, in the Castel del Monte area. Vigna Pedale is a Castel del Monte Rosso Riserva DOCG made from Nero di Troia grown in contrada Pedale, and it rests eight months in stainless steel and twelve in large casks. The ripe fruit and the absorbed oak are the answer to the bitterness of the crust.
