Costine e salsiccia di maiale da una parte, costata e bistecche di manzo dall'altra: sulla stessa brace finiscono due carni molto diverse. Il maiale è grasso e la superficie si caramella sul fuoco, quindi chiede un vino che ripulisca la bocca; il manzo, al sangue e con la crosta bruciata dalla griglia, chiede invece tannino e struttura. Una bottiglia sola può fare da mediatrice, ma due o tre aperte insieme fanno molto meglio — e la Lombardia, fra Valtellina, Franciacorta, Oltrepò Pavese e riva bresciana del Garda, le ha tutte.Pork ribs and sausage on one side, rib steak and beef steaks on the other: two very different meats end up on the same coals. Pork is fatty and the fire turns its surface sweet and caramelised, so it calls for a wine that rinses the mouth clean; beef, served rare and carrying the char off the grill, calls instead for tannin and structure. A single bottle can act as a go-between, but two or three opened together do far better — and Lombardy, between Valtellina, Franciacorta, Oltrepò Pavese and the Brescia shore of Lake Garda, has all of them.

Pork ribs and sausage are fatty and slow-cooked, with a surface turned sweet and caramelised by the fire. There the wine has to rinse: freshness and bubbles do it better than any structure, and they bring the mouth back ready for the next bite. That is why at a barbecue sparkling wines hold up far better than you would expect.

Il manzo ribalta la richiesta. A thick rib steak, rare, carrying the bitter char of the grill, is juicy, savoury meat that can take — indeed demands — a red with tannin and alcohol: the tannin dries the mouthful, the alcohol keeps pace with the juices the meat releases. It is the same reasoning behind rib steak on the grill, and over coals it holds exactly the same.

In mezzo c'è tutto il resto: le parti più magre del maiale, la salsiccia appena speziata, le verdure che finiscono sulla griglia insieme alla carne. Qui un rosato di corpo o un rosso vivace fanno da ponte, e hanno il pregio di piacere anche a chi al tavolo non beve rossi importanti. La Lombardia nel caliceLombardy in the glass

La Lombardia ha il vantaggio raro di coprire tutti e tre i registri che questa tavola chiede. In Valtellina il Nebbiolo, che qui si chiama Chiavennasca, dà rossi di montagna con tannino fine e acidità alta: la struttura c'è, ma resta snella, e sulla carne di manzo asciuga senza appesantire. In Franciacorta il metodo classico offre la bollicina, e nella versione rosé — con il Pinot Nero in prevalenza — ha abbastanza colore e frutto da non sfigurare accanto alla griglia.Lombardy has the rare advantage of covering all three registers this table asks for. In Valtellina, Nebbiolo — known here as Chiavennasca — gives mountain reds with fine tannin and high acidity: the structure is there, but it stays slender, and on beef it dries the palate without weighing it down. In Franciacorta the traditional method supplies the bubbles, and in the rosé version — with Pinot Noir in the majority — it has enough colour and fruit to hold its own next to the grill.

L'Oltrepò Pavese porta la terza voce, la più quotidiana: la Croatina, che qui si vinifica come Bonarda, spesso in versione vivace. Sulla riva bresciana del Garda, infine, la Valtènesi dà rosati asciutti da uve Groppello Gentile, Marzemino e altre varietà locali: sono il ponte fra le due metà del piatto.Oltrepò Pavese brings the third voice, the most everyday one: Croatina, vinified here as Bonarda, often in a lively, lightly sparkling style. It is a red with a head of foam, inexpensive and thoroughly convivial, and in the Pavia hills it has always been the bottle for pork: cured meats, cotechino, grilled sausage. On the Brescia shore of Lake Garda, finally, Valtènesi gives dry rosés from Groppello Gentile, Marzemino and other local varieties: they are the bridge between the two halves of the dish.

Una nota di onestà. La grigliata mista è anche il piatto nazionale argentino, e sarebbe strano tacerlo: l'asado ha nel Malbec di Mendoza il suo compagno storico. Per questo, accanto ai vini lombardi, un Malbec argentino resta una scelta legittima, e in Italia si reperisce senza difficoltà.One honest note. The mixed grill is also Argentina's national dish, and it would be odd to pass over it: the asado has long had its companion in Malbec from Mendoza. So alongside the Lombard wines, an Argentinian Malbec remains a legitimate choice, and one that is easy enough to track down in Italy.

Andrea Picchioni, a Canneto Pavese nell'Oltrepò, lavora la Croatina della valle Solinga su terreni sabbioso-ciottolosi e vigneti in forte pendenza: la sua Bonarda Ipazia è un rosso vivace, con la presa di spuma in autoclave. Ca' del Bosco, a Erbusco in Franciacorta, firma il Cuvée Prestige Rosé Edizione, metodo classico da Pinot Nero e Chardonnay con una breve macerazione sulle bucce.For the fatty pork. Andrea Picchioni, at Canneto Pavese in Oltrepò, works the Croatina of the Solinga valley on sandy, pebbly soils and steeply sloping vineyards: his Bonarda Ipazia is a lively red, its foam taken in tank. Bruno Verdi, ancora a Canneto Pavese, produce dalla vendemmia 1985 il Cavariola, un rosso da uve dell'Oltrepò coltivate nel comune di Broni. Nino Negri, a Chiuro, tiene il registro accessibile della Valtellina con il Quadrio, che affianca al Nebbiolo una quota di Merlot.For the beef. Ar.Pe.Pe., in Sondrio, is one of the houses that kept Valtellina Nebbiolo alive when the terraces were being abandoned: Stella Retica comes from the Sassella sub-zone and spends a little over a hundred days on the skins. Nino Negri, at Chiuro, holds the affordable end of Valtellina with Quadrio, which sets a share of Merlot alongside the Nebbiolo.

E dall'Argentina, Catena Zapata, a Mendoza: il suo Malbec d'ingresso assembla tre vigneti d'altura ed è la bottiglia con cui, dall'altra parte del mondo, si beve la carne alla brace.In between, and from abroad. Costaripa, at Moniga del Garda, is the benchmark house for Valtènesi rosé: RosaMara is made from free-run juice alone, drawn off before fermentation. And from Argentina, Catena Zapata, in Mendoza: its entry-level Malbec blends three high-altitude vineyards and is the bottle with which, on the other side of the world, grilled meat is drunk.

L'ordine più comodo segue la griglia. Si apre con la bollicina rosé mentre escono le prime costine e la salsiccia, si prosegue con il rosso vivace o con il rosato quando il maiale è al suo momento, e si arriva al rosso di corpo quando la carne di manzo va in tavola. Se le bottiglie sono due sole, tenete la bollicina e il rosso strutturato: coprono i due estremi.The handiest order follows the grill. Open with the rosé sparkler as the first ribs and sausages come off, carry on with the lively red or the rosé while the pork is at its best, and reach the full-bodied red when the beef arrives at the table. If you only have two bottles, keep the sparkler and the structured red: they cover the two extremes.

Le temperature contano più di quanto si creda, e all'aperto in estate contano il doppio: un rosso lasciato al sole arriva nel bicchiere a venticinque gradi e sembra tutto alcol. La bollicina va servita a 8-10 °C, il rosato a 10-12, il rosso vivace a 12-14, i rossi di corpo a 16-18. Serve the sparkler at 8-10 °C, the rosé at 10-12, the lively red at 12-14, the full-bodied reds at 16-18. Un abbinamento non è una regola. Una grigliata cambia con la marinatura, con il taglio della carne e con quanto resta sul fuoco: le indicazioni qui sopra valgono per la versione descritta, maiale e manzo senza salse piccanti e con la carne di manzo servita al sangue. Se la salsiccia pizzica davvero, o se le costine sono glassate e dolci, conviene scendere di alcol e restare sulla bollicina e sul rosso vivace, perché su un boccone piccante un rosso caldo e tannico è la scelta peggiore. E se al tavolo qualcuno non beve rossi, il rosato del Garda copre quasi tutto il piatto.A pairing is not a rule. A mixed grill changes with the marinade, with the cut and with how long the meat stays over the fire: the suggestions above are for the version described here, pork and beef with no hot sauces and the beef served rare. If the sausage really does bite, or if the ribs are glazed and sweet, it is better to drop the alcohol and stay with the sparkler and the lively red, because on a spicy mouthful a warm, tannic red is the worst possible choice. And if someone at the table does not drink reds, the Garda rosé covers almost the whole dish.
