Su una bottiglia di Franciacorta non leggerete mai «metodo classico», né «metodo tradizionale», né «vino spumante»: il disciplinare vieta di richiamare esplicitamente il modo di produzione, e il divieto non riguarda solo l'etichetta ma tutto il modo in cui il vino viene presentato. Il motivo è che quella parola sola — Franciacorta — dice già tre cose insieme: la collina, il vino e il modo di farlo, cioè la seconda fermentazione in bottiglia. Siamo in provincia di Brescia, in un anfiteatro di colline moreniche fra il Monte Orfano e la sponda sud del lago d'Iseo, dove Chardonnay e Pinot nero maturano su suoli lasciati da un ghiacciaio. Ecco che cosa aspettarsi dal calice e quali bottiglie cercare.On a bottle of Franciacorta you will never read "classic method", "traditional method" or "sparkling wine": the production rules forbid any explicit reference to how the wine is made, and the ban covers not just the label but the whole way the wine is presented. The reason is that the single word — Franciacorta — already says three things at once: the hills, the wine and the way it is made, namely the second fermentation in the bottle. We are in the province of Brescia, in an amphitheatre of morainic hills between Monte Orfano and the southern shore of Lake Iseo, where Chardonnay and Pinot Noir ripen on soils left behind by a glacier. La Franciacorta è un anfiteatro morenico: le colline le ha lasciate lì il grande ghiacciaio che scendeva dalla Valcamonica, ritirandosi. Da quell'origine vengono le caratteristiche che il disciplinare elenca fra i fattori del legame con l'ambiente: suoli di discreta profondità, ben drenati, con una buona riserva d'acqua. Sono terreni adatti alla vite, ma non uguali fra loro: uno studio di zonazione condotto negli anni Novanta vi ha riconosciuto sei unità vocazionali diverse. È da questa varietà che nasce il mestiere vero della zona, l'assemblaggio: mettere insieme vini base di provenienze diverse per costruire una cuvée. Il clima aiuta. La zona sta nella fascia insubrica e ha tratti quasi mediterranei: inverni non rigidi, estati non torride, buone escursioni fra il giorno e la notte, circa mille millimetri di pioggia l'anno. Il lago d'Iseo, a nord, smorza le temperature e riduce il rischio delle gelate. L'uomo qui c'è da sempre: vinaccioli di epoca preistorica sono stati ritrovati nella zona di Provaglio d'Iseo, e il nome viene — così racconta il disciplinare — dalle «francae curtes», le corti monastiche esentate dai dazi in cambio della bonifica e della coltivazione dei terreni. Il territorio che leggete oggi nel disciplinare era già descritto e delimitato in un atto del Doge di Venezia Francesco Foscari del 1429. La storia moderna, invece, è breve: DOC nel 1967, DOCG nel 1995, e in poco più di mezzo secolo la vite è diventata l'attività agricola principale della zona. Il disciplinare vigente, aggiornato con il decreto del maggio 2024, è severo dove conta. La raccolta è a mano per obbligo, in cassette che non superano i due quintali, perché il grappolo deve arrivare intero alla pressa. La resa massima è scesa a 10 tonnellate per ettaro, e da quelle uve si può ricavare al massimo il 65% di vino base: il resto non è Franciacorta. Poi comincia l'attesa: diciotto mesi sui lieviti per la tipologia base, ventiquattro per Satèn e Rosé, trenta per i millesimati, sessanta per le riserve, che sono sempre millesimate e devono portare l'annata in etichetta. Il tiraggio non può nemmeno iniziare prima del 1° febbraio successivo alla vendemmia. Restano tre parole da chiarire. Il Satèn è la tipologia nata qui: solo uve bianche, Chardonnay per almeno metà con l'eventuale Pinot bianco, e una pressione che non supera le cinque atmosfere — un tetto che il disciplinare fissa solo per lui, e infatti gli chiede una spuma cremosa invece che fine e intensa. Il Rosé vuole almeno il 35% di Pinot nero. L'Erbamat, un'uva bianca locale a maturazione tardiva, è ammesso fino al 10% dal 2017, e qualche cantina lo mette davvero in bottiglia. Torniamo al divieto. L'art. 7.4 non colpisce solo «metodo classico»: mette al bando ogni riferimento esplicito al modo di elaborazione, e le parole «vino spumante», in etichetta come in ogni altra presentazione del vino. Il metodo, del resto, è già dentro la denominazione: è la seconda fermentazione in bottiglia, ciò che separa il metodo classico dal charmat e che accomuna il Franciacorta alle altre bollicine italiane di metodo classico. La regola vincola chi lo produce e lo vende; qui, che lo raccontiamo, il metodo si può chiamare per nome.Franciacorta is a morainic amphitheatre: the hills were left there by the great glacier that came down from Valcamonica as it withdrew. From that origin come the features the production rules list among the links with the environment: soils of fair depth, well drained, with a good water reserve. They suit the vine, but they are not all alike: a zoning study carried out in the 1990s identified six different vocational units here. From that variety comes the real craft of the area, blending: bringing together base wines of different origins to build a cuvée. The climate helps. The zone lies in the Insubric belt and has almost Mediterranean traits: winters that are not harsh, summers that are not scorching, good day-to-night swings, and around a thousand millimetres of rain a year. Lake Iseo, to the north, softens the temperatures and reduces the risk of frost. People have been here forever: grape pips from prehistoric times have been found in the area of Provaglio d'Iseo, and the name comes — so the production rules recount — from the "francae curtes", the monastic courts exempted from duties in exchange for reclaiming and farming the land. The territory you read about today in the rules was already described and mapped out in a deed of the Doge of Venice Francesco Foscari, dated 1429. Modern history, by contrast, is short: DOC in 1967, DOCG in 1995, and in little more than half a century the vine has become the main farming activity of the area. The rules in force, updated by the decree of May 2024, are strict where it matters. Harvesting is by hand by obligation, in crates no heavier than two quintals, because the bunch must reach the press whole. The maximum yield has come down to 10 tonnes per hectare, and from those grapes no more than 65% may become base wine: the rest is not Franciacorta. Then the waiting begins: eighteen months on the lees for the base style, twenty-four for Satèn and Rosé, thirty for vintage wines, sixty for riserva, which is always vintage-dated and must carry the year on the label. Tirage cannot even begin before 1 February following the harvest. Three words are left to explain. Satèn is the style born here: white grapes only, Chardonnay for at least half with possible Pinot Blanc, and a pressure no higher than five atmospheres — a ceiling the rules set for this style alone, and indeed they ask it for a creamy mousse rather than a fine, intense one. Rosé requires at least 35% Pinot Noir. Erbamat, a late-ripening local white grape, has been admitted up to 10% since 2017, and a few wineries really do put it in the bottle. Back to the ban. Article 7.4 does not catch only "classic method": it rules out any explicit reference to the production method, and the words "sparkling wine", on the label and in any other presentation of the wine. The method, after all, is already inside the appellation: it is the second fermentation in the bottle, the thing that separates the classic method from Charmat and the school Franciacorta shares with the other Italian classic-method sparklers. The rule binds those who make and sell it; here, where we only describe it, the method can be called by its name.

Il Franciacorta nasce da un anfiteatro di colline che un ghiacciaio ha lasciato ai piedi delle Alpi, e prende dai mesi sui lieviti buona parte del suo carattere. Una tipologia base ben fatta è un calice fresco e sapido da portare a tavola su un risotto o su un fritto, più che da consumare in piedi; un Satèn chiede piatti delicati e un calice largo; una riserva, dopo cinque anni sui lieviti, si beve piano e non troppo fredda. Se volete capire che cosa avete in mano, girate la bottiglia e cercate la data di sboccatura: è lì che si legge la sua età.Franciacorta comes from an amphitheatre of hills a glacier left at the foot of the Alps, and it takes much of its character from the months spent on the lees. A well-made base style is a fresh, savoury glass to bring to the table with a risotto or a plate of fried fish, rather than to drink standing up; a Satèn asks for delicate dishes and a wide glass; a riserva, after five years on the lees, is drunk slowly and not too cold. If you want to understand what you are holding, turn the bottle round and look for the disgorgement date: that is where you read its age.
