Il Chenin Blanc è il grande bianco camaleonte della Valle della Loira: dalla stessa varietà nascono vini secchi e tesi, amabili, dolci da muffa nobile e spumanti metodo tradizionale. La casa del Chenin è la Loira centrale, tra l'Angiò-Saumur e la Turenna: qui cresce sul tuffeau, il tenero calcare bianco in cui si scavano anche le cantine d'affinamento. Lungo il fiume Layon le nebbie autunnali favoriscono la muffa nobile, alla base dei grandi dolci; a Vouvray e a Savennières lo stesso vitigno vira invece sul secco. La seconda patria è il Sudafrica, che ne conta la quota maggiore al mondo — circa la metà delle vigne di Chenin del pianeta: qui lo chiamano Steen e dà il meglio nelle vecchie vigne ad alberello dello Swartland e di Stellenbosch. Si coltiva anche in California, in Argentina e in Australia; in Italia resta una presenza marginale, confinata a qualche IGT del Centro e delle Isole.Chenin's home is the central Loire, between Anjou-Saumur and Touraine: here it grows on tuffeau, the soft white limestone into which the ageing cellars are also carved. Along the river Layon, autumn mists encourage noble rot, the basis of the great sweet wines; at Vouvray and Savennières the same grape turns dry instead. Its second home is South Africa, which holds the largest share in the world — about half of the planet's Chenin vines: here they call it Steen, and it shines in the old bush vines of Swartland and Stellenbosch. It is also grown in California, Argentina and Australia; in Italy it remains marginal, limited to a few IGT wines of the centre and the islands.

Da secco è un jolly del pesce: crudi, molluschi, un branzino al forno, ma anche pollo arrosto e carni bianche. Con la sua acidità viva sta benissimo sui formaggi di capra della Loira, come la Sainte-Maure. Le versioni amabili accompagnano la cucina speziata — un curry non troppo piccante, un piatto agrodolce. I dolci da muffa nobile chiudono su foie gras, formaggi erborinati e crostate di frutta, dove la freschezza tiene testa allo zucchero. Lo spumante, infine, apre la tavola come aperitivo.Dry, it's a wildcard with fish: raw seafood, shellfish, a baked sea bass, but also roast chicken and white meats. Its lively acidity sits beautifully with the Loire's goat cheeses, such as Sainte-Maure. The off-dry versions go with spicy cooking — a mild curry, a sweet-and-sour dish. The nobly sweet styles close on foie gras, blue cheeses and fruit tarts, where the freshness stands up to the sugar. The sparkling, finally, opens the meal as an aperitif.

Genetic studies make it a child of Savagnin and thus a close relative of Sauvignon Blanc, with which it shares a parent. And there is one distinction that tells its stature: Quarts de Chaume, a nobly sweet wine from Anjou, is the only Grand Cru in all the Loire.
