Nel nord-ovest della Cina, ai piedi di una lunga catena di montagne che si chiama Helan, in vent'anni è cresciuta la regione del vino cinese di qualità: il Ningxia. Qui gli inverni sono così rigidi che le viti, lasciate a sé, morirebbero di gelo; così ogni autunno vengono piegate a terra e sepolte sotto il suolo, e in primavera dissotterrate una per una. Winters here are so harsh that the vines, left to themselves, would die of frost; so every autumn they are bent to the ground and buried under the soil, then dug out one by one in spring. Silver Heights is a small family winery, founded in 2007 and among the first to show that this hard land can make serious wine: Bordeaux-style reds signed by a winemaker who trained in France.

È un freddo che la vite europea non sopporta: senza protezione, sotto i −15 gradi circa, i tralci e il punto d'innesto muoiono.At Ningxia's latitude — around the 38th parallel, the same as Sicily — you would not expect a frost problem. But the sea is very far away and the vineyards sit high up, in a fully continental climate: in winter the temperature drops to around −20°C, and lower in places. It is a cold the European vine cannot take: without protection, below roughly −15 degrees, the canes and the graft union die.

After the leaves fall, in autumn, every plant is bent towards the ground and covered with a mound of soil that insulates it from the frost. In spring, once the hardest frosts have passed, the vines are dug out again and tied back to the wires. This is no quirk of a single estate: it is the price of making wine at this latitude, and every row in the area — Silver Heights' vines included — goes under the soil each year and comes back out.

I monti Helan corrono da nord a sud e fanno da muro: fermano i venti freddi e la sabbia del deserto del Gobi, e riparano la fascia di terra ai loro piedi orientali, dove stanno le vigne, intorno ai 1.100 metri di quota. È qui che il Ningxia concentra il suo vino. Piove pochissimo — attorno ai 200 millimetri l'anno, da regione semidesertica — e senza l'acqua del Fiume Giallo, che scorre poco lontano, non si coltiverebbe nulla.The Helan Mountains run north to south and act as a wall: they block the cold winds and the sand of the Gobi desert, and shelter the strip of land at their eastern foot, where the vineyards lie, at around 1,100 metres. This is where Ningxia concentrates its wine. Rain is scarce — about 200 millimetres a year, semi-desert figures — and without the water of the Yellow River, which runs not far off, nothing would grow here.

La zona è riconosciuta come area a indicazione geografica dal 2003, e il vino della fascia orientale dei monti Helan è oggi fra le indicazioni geografiche cinesi tutelate anche nell'Unione Europea, con l'accordo UE-Cina sulle IG.In return the sun almost never fails: the region counts some three thousand hours of light a year, and between day and night the air swings by many degrees. It is this range that keeps acidity and aromas alive in the grapes as they ripen. The soils are gravelly and sandy, lean and free-draining, the kind of ground that forces the vine to make little and concentrated. The area has been a recognised geographical indication since 2003, and the wine of the Helan Mountains' eastern foothills is today among the Chinese geographical indications protected in the European Union too, under the EU-China GI agreement.

Silver Heights è una storia di famiglia. Il padre, Gao Lin, ha piantato le viti sui versanti orientali dei monti Helan. The father, Gao Lin, planted the vines on the eastern slopes of the Helan Mountains. His daughter, Gao Yuan — known to everyone as Emma Gao — went to study winemaking in Bordeaux and trained in a cellar there. Back home, in 2007 she signed the first Silver Heights vintages in a small winery in Yinchuan, the provincial capital, at a time when fine wine in China was almost an abstract idea.

Production has stayed small — around 50,000 bottles a year, with the top cuvées in a few thousand — and the estate is certified organic — in China and in the European Union — and has completed its conversion to biodynamics: in 2023 it became the first Chinese winery to earn Demeter certification. It is a demanding choice in so extreme a climate, and it says a good deal about the house: a family's own vines, plenty of hand work and no hurry.

These are wines of deep colour and good structure, with ripe red and black fruit, a spicy note from the wood and tannins that are present but polished; the swing between day and night leaves them a freshness that keeps the ripe fruit in balance.
Accanto ai rossi ci sono un Chardonnay e un Riesling, e nei rossi compare spesso il Cabernet Gernischt, un'uva coltivata in Cina da oltre un secolo e spesso ricondotta al Carménère di Bordeaux: dà vini profumati e dalla trama morbida. Ma è sul Cabernet e sul Merlot che, per ora, si gioca la reputazione di questa terra.Alongside the reds there are a Chardonnay and a Riesling, and the reds often include Cabernet Gernischt, a grape grown in China for over a century and often traced back to Bordeaux's Carménère: it gives perfumed wines with a soft weave. Ningxia is also trying Marselan, a French cross that does well here and that many point to as the region's most promising card. But for now it is on Cabernet and Merlot that this land's reputation rests.

Questi rossi strutturati e ancora giovani chiedono piatti di sostanza. A beef braise or roast lamb is the most natural match: the meltingly tender meat softens the tannin, and the wine's freshness lightens the fat and the cooking juices. It also sits well with aged cheeses, savoury but not sharp.
C'è poi la strada di casa, il Ningxia. L'agnello al cumino saltato con il peperoncino, tipico della cucina del nord-ovest cinese, incontra bene la frutta matura e le spezie del legno del Cabernet; e un maiale brasato nella salsa di soia, dolce e saporito, trova nel vino la struttura e la freschezza che bilanciano la salsa. Con i piatti più leggeri — pesce di fiume, verdure saltate — vanno invece il Chardonnay o il Riesling della casa, freschi e diretti.Then there is the home route, Ningxia itself. Cumin lamb stir-fried with chilli, a staple of north-western Chinese cooking, meets the ripe fruit and the oak spice of the Cabernet well; and pork braised in soy sauce, sweet and savoury, finds in the wine the structure and freshness that balance the sauce. For lighter dishes — river fish, stir-fried vegetables — the house Chardonnay or Riesling, fresh and direct, are the better choice.
