Calamari, gamberi, pesciolini e qualche anello di totano: una frittura di mare ben fatta è croccante fuori, tenera dentro, dorata e saporita, con quel velo d'olio che resta sulle labbra. Il vino giusto non deve coprirla, ma alleggerirla: a ogni boccone la bocca torna pulita e pronta per il successivo. A wine that echoes this richness with more softness weighs everything down; what you want instead is a glass that offsets it, with freshness and, where present, effervescence. These two firm sides of the wine dissolve the film of oil and restore cleanliness, leaving the taste of the sea intact. It's the basic principle behind any good pairing with fried food.

L'abbinamento più naturale è con uno spumante secco. L'anidride carbonica esercita una sorta di lavaggio che stacca l'unto dal palato, mentre l'acidità taglia il grasso e rinfresca: a ogni sorso la croccantezza torna nitida. Vanno benissimo i metodo classico (seconda fermentazione in bottiglia e lunga sosta sui lieviti), come il Franciacorta e il Trentodoc, che uniscono freschezza e una nota di crosta di pane senza pesare. Più immediato il metodo Martinotti (rifermentazione in autoclave) del Prosecco di Valdobbiadene: agile, profumato, perfetto per le fritture leggere. La regola è una sola: secco, mai dolce, perché un residuo zuccherino accentuerebbe la dolcezza della doratura.The most natural pairing is a dry sparkling wine. The carbon dioxide acts as a kind of rinse that lifts the grease off the palate, while acidity cuts the fat and refreshes: with every sip the crunch comes back sharp. Traditional-method wines work beautifully (second fermentation in the bottle and long lees ageing), like Franciacorta and Trentodoc, which combine freshness with a hint of bread crust without weighing the palate down. More immediate is the Martinotti method (tank refermentation) of Valdobbiadene Prosecco: nimble, fragrant, perfect for lighter fries. We have a separate guide to the two schools. The one rule: dry, never sweet, since residual sugar would underline the sweetness of the browning.

I bianchi che tengono il passoThe whites that keep pace

Non servono per forza le bolle. Un bianco fermo giovane, fresco e sapido pulisce con la sola acidità e accompagna il gusto iodato del pesce senza coprirlo. Il Vermentino di costa, teso e salino, è quasi un automatismo; il Verdicchio dei Castelli di Jesi aggiunge il suo finale ammandorlato; la Falanghina del Sannio porta agrume e nerbo. Sulla stessa linea stanno il Pecorino, il Grillo siciliano e il Carricante dell'Etna, tutti vini di bella freschezza e sapidità. Coastal Vermentino, taut and saline, is almost automatic; Verdicchio dei Castelli di Jesi adds its almondy finish; Falanghina del Sannio brings citrus and backbone. On the same line sit Pecorino, Sicilian Grillo and Etna's Carricante, all wines of fine freshness and salinity. The common thread is drinkability: modest body, measured alcohol, lively acidity. A glass that invites the next sip just as the fry asks for it.

Tre famiglie spengono una frittura invece di esaltarla. I bianchi molto legnosi e morbidi, come certi Chardonnay maturati a lungo in barrique, aggiungono note burrose e una rotondità che si somma all'unto: il piatto diventa stucchevole e la croccantezza si perde. I rossi tannici non hanno qui la carne che li domi: il tannino, sul pesce e sul sale, vira all'amarognolo e all'asciutto, con un fastidioso ricordo metallico. Infine i vini molto alcolici e caldi: l'alcol amplifica il calore già dato dalla frittura, anziché rinfrescare. Stessa sorte per i bianchi dolci o abboccati: il fritto secco vuole un vino secco. Very oaky, soft whites, like some long barrique-aged Chardonnays, add buttery notes and a roundness that piles onto the grease: the dish turns cloying and the crunch is lost. Tannic reds have no meat here to tame them: tannin, against fish and salt, turns bitterish and drying, with an annoying metallic echo. Finally, high-alcohol, warm wines: alcohol amplifies the heat already given by frying rather than refreshing. Same fate for sweet or off-dry whites: a dry fry wants a dry wine. When in doubt, pick the freshest, leanest wine in the cellar.

Anche il vino giusto va servito bene. Gli spumanti si versano freschi, intorno a 6-8 °C, salendo a 8-10 °C per i metodo classico più strutturati, così da non mortificarne i profumi. I bianchi fermi stanno bene tra 8 e 10 °C: sono gli scaglioni della nostra guida alla temperatura di servizio. Temperature troppo alte fanno emergere alcol e morbidezza, proprio ciò che con una frittura non vogliamo; troppo basse anestetizzano i profumi e lasciano solo l'acidità. Un calice non minuscolo aiuta a cogliere il naso senza disperdere il fresco. Sparkling wines are poured cold, around 6-8 °C, rising to 8-10 °C for the more structured traditional-method bottles, so as not to mute their aromas. Still whites sit well between 8 and 10 °C: these are the bands in our guide to serving temperature. Temperatures too high bring out alcohol and softness, exactly what we don't want with a fry; too low numb the aromas and leave only acidity. A glass that isn't tiny helps catch the nose without losing the chill. Simple details, but they make the difference between a pairing that works and one that stalls.
