Cresce quasi solo sull'Etna, su terrazze di sabbie vulcaniche nere tra i 600 e i 1.000 metri — più spesso fra i 750 e i 950 — spesso allevato ad alberello e, poiché quelle sabbie ostacolano la fillossera, non di rado a piede franco, dove il Nerello Mascalese fatica a maturare. Il cuore storico è il versante orientale, a Milo: le nubi che salgono dal mar Ionio allungano la maturazione, mentre l'altitudine, le forti escursioni termiche e le sabbie vulcaniche che drenano in fretta tengono viva l'acidità. È da questo ambiente — non da un travaso di minerali dalla roccia — che nasce la sua tensione.It grows almost only on Etna, on terraces of black volcanic sand between 600 and 1,000 metres — most often between 750 and 950 — commonly bush-trained and, because those sands hold phylloxera at bay, often ungrafted, where Nerello Mascalese struggles to ripen. Its historic heart is the eastern slope, at Milo: clouds rising from the Ionian Sea stretch ripening, while altitude, sharp day-night temperature swings and fast-draining volcanic sands keep the acidity alive. That tension comes from this environment — not from minerals passing from rock into the wine.

It is also one of the few Italian whites that gains from years in bottle, developing flint and petrol notes that recall — in style, not in kinship — great mature Riesling.
