Mentre il Prosecco DOC nasce in pianura, su grandi numeri, qui le vigne salgono sulle colline ripide tra Conegliano e Valdobbiadene, modellate a ciglioni erbosi che seguono il pendio: una viticoltura faticosa, che dal 2019 è Patrimonio dell'Umanità UNESCO. È questa fatica a fare la differenza nel bicchiere. La Glera — l'uva che fino al 2009 si chiamava semplicemente «Prosecco» — diventa spumante con il metodo Martinotti: una seconda fermentazione in autoclave che trattiene i profumi del frutto e dei fiori, senza le note di crosta di pane dei metodi in bottiglia. Il risultato è uno spumante fragrante e immediato, da bere giovane. La denominazione comprende più stili: l'Extra Dry, il più tradizionale, lascia un accenno dolce; il Brut è più asciutto e nervoso; il Dry è il più morbido. Sopra a tutti c'è la collina del Cartizze — 106 ettari di esposizioni privilegiate a Valdobbiadene — e le 43 «Rive», le menzioni che legano una bottiglia a un singolo comune o frazione: per queste il disciplinare impone la vendemmia esclusivamente a mano, mentre sul Cartizze la raccolta a mano è una prassi consolidata, non un obbligo del disciplinare. While Prosecco DOC is made on the plains, in large volumes, here the vines climb the steep hills between Conegliano and Valdobbiadene, shaped into grassed terraces that follow the slope: demanding viticulture that since 2019 has been a UNESCO World Heritage Site. That effort is what makes the difference in the glass. Glera — the grape that until 2009 was simply called 'Prosecco' — becomes sparkling wine through the Martinotti method: a second fermentation in tank that holds onto the fruit and floral aromas, without the bread-crust notes of the bottle methods. The result is a fragrant, immediate sparkler, to be drunk young. The appellation comes in several styles: the Extra Dry, the most traditional, leaves a gentle sweetness; the Brut is drier and more nervy; the Dry is the softest. Above them all sits the Cartizze hill — 106 hectares of prime exposures at Valdobbiadene — and the 43 'Rive', the mentions that tie a bottle to a single village or hamlet: for the 'Rive' the production code requires the grapes to be picked exclusively by hand, while on Cartizze hand-picking is an established practice rather than a rule written into the code. Understanding this ladder is the best way to choose well: behind the 'Prosecco' label there is a hill territory, not just any product.

Cambiano anche i suoli: dove sono passati i ghiacciai delle Dolomiti sono profondi, fatti di conglomerati e sabbia con molta argilla; dove il ghiaccio non è arrivato restano marne e arenarie di origine marina, meno profonde e più filtranti. Verso Conegliano le colline si addolciscono, verso Valdobbiadene si fanno ripide e tutte esposte a mezzogiorno: è da qui che nascono le distanze fra una «Riva» e l'altra.The area is not uniform, and that explains much of the difference from one bottle to the next. The hills run east to west between 100 and 500 metres: the south-facing slope carries the vines, the north-facing one is nearly always left to woodland, and the swing between day and night helps the aromas form. The protection consortium records an annual average of 12.3 °C and around 1,250 millimetres of rain, with constant ventilation that dries the bunches after summer downpours. The soils change too: where the Dolomite glaciers passed they are deep, made of conglomerate and sand with a good deal of clay; where the ice never reached, marl and sandstone of marine origin remain, shallower and more free-draining. Towards Conegliano the hills soften, towards Valdobbiadene they steepen and face due south: this is where the distance between one 'Riva' and the next begins.
