Pecorino

Antico bianco dell'Appennino centrale, tra Marche e AbruzzoAn ancient white of the central Apennines, between Marche and Abruzzo

Nearly lost in the twentieth century and brought back to life from the 1980s on, Pecorino is now one of central Italy's most recognisable whites: aromas of garden herbs and citrus, taut acidity and a saline grip that lengthens every sip.

Dove cresceWhere it grows

Pecorino's cradle is the Piceno, between the Sibillini mountains and the hills of Ascoli Piceno and Fermo, in the Marche; from there the grape moved into Abruzzo, where it now grows from the Pescara and Teramo hills up to the high interior, as at Ofena at the foot of the Gran Sasso. Vines are also found in Umbria, in the Valnerina around Norcia, and in Lazio. An early-ripening variety, it keeps a marked natural acidity and favours well-drained hillsides: altitude, by tempering the heat, protects its freshness.

Offida Pecorino DOCG
Marche

It is the only DOCG devoted to the grape and the heart of its revival: on the high Piceno hills, over clay-limestone soils and with wide day-night temperature swings, Pecorino finds its balance of structure, freshness and salinity. A peak that high-altitude Abruzzo — Ofena above all — matches with equally taut, long-lived versions.

Secco in purezzaDry, varietal
The main style: 100% Pecorino, steel-fermented, sometimes with time on the lees. Fresh, citrusy, with a clean herbal profile.
Strutturato e affinatoStructured and aged
Richer versions, with long lees ageing or some oak: broader and deeper, able to evolve over the years.
Rarer: its high sugar and retained acidity suit late-harvest, sweeter styles.

A tavolaAt the table

Its freshness and marked salinity make it a versatile white at the table. It pairs with Adriatic seafood — raw fish, fritto misto, fish stews and pasta with shellfish — and works well with white meats, from roast chicken to rabbit. It stands up to hearty local dishes such as olive all'ascolana, and sits well with medium-aged cheeses.

CuriositàDid you know

The name is pastoral: according to the most accredited reading it comes from the sheep (pecore) that, during transhumance up the high Tronto valley, happily grazed on its sweet berries. The earliest written traces date to the Statutes of Norcia of 1526, which already mention «vigne de pecurino». A twist within the twist: the wine Pecorino and pecorino cheese share the Latin root pecus, yet there is no kinship between them — only the same world of pastures and shepherds.
