Un vino che voglia esaltarli — non sovrastarli — deve fare due cose. Prima, pulire: l'acidità viva e la freschezza tagliano la parte grassa e rinfrescano la bocca, invitando al boccone successivo. Poi, accompagnare: una bella sapidità richiama la nota lattica e allunga il finale, mentre un alcol contenuto evita di appesantire. Il legno, qui, è spesso di troppo: vaniglia e tostature coprono la delicatezza del latticino. La regola è semplice — più il formaggio è fresco e cremoso, più il vino dev'essere teso, fresco e snello.To get the pairing right, listen to the cheese first. Burrata and mozzarella are soft and creamy, with that sweet, buttery note of just-worked milk; on the palate they leave a rich, fatty trail, sometimes a hint of salt. A wine meant to lift them — not to overpower them — has to do two things. First, clean: lively acidity and freshness cut through the fat and refresh the mouth, inviting the next bite. Then, accompany: a fine salinity echoes the milky note and stretches the finish, while moderate alcohol keeps things from getting heavy. Oak, here, is usually too much: vanilla and toast bury the cheese's delicacy. The rule is simple — the fresher and creamier the cheese, the more taut, fresh and lean the wine should be.

Pensa alla Verdeca e al Bianco d'Alessano dell'altopiano, da Locorotondo a Martina Franca, o al Minutolo, profumato e agrumato: vini tesi, spesso sapidi, senza legno, che asciugano la crema e ne rispettano la gentilezza. Funziona anche il Bombino bianco, scattante e leggero. È la logica del territorio: ciò che cresce insieme sta bene insieme — e qui suona giusta.Burrata was born in Puglia, in Andria, in the early twentieth century: a pouch of pasta filata wrapped around a heart of stracciatella and cream. Creamy and sweet, it feels at home with the whites of its own land. Think of Verdeca and Bianco d'Alessano from the high plateau, from Locorotondo to Martina Franca, or of Minutolo, fragrant and citrusy: taut wines, often saline, unoaked, that dry the cream and respect its gentleness. Bombino Bianco works too, brisk and light. It is the logic of place: what grows together belongs together — and here it rings true.

La mozzarella di bufala campana, DOP dal 1996, è più saporita e decisa della cugina vaccina, e la Campania le offre i compagni ideali. La Falanghina del Sannio porta freschezza e un frutto solare; il Fiano di Avellino aggiunge tono e una scia quasi minerale; il Greco di Tufo mette struttura e nerbo. But the classic of classics is Asprinio di Aversa, from a grape once trained on towering trees: razor-sharp acidity and low alcohol, a blade that slices through the buffalo's fat and leaves the mouth clean. Lovely still, better still as a sparkler.

Per i freschi di tutti i giorni — stracchino, robiola, primo sale, ricotta — la scelta si allarga a tutta l'Italia del bianco lineare e beverino. Il Gavi da uve Cortese e il Soave da Garganega sono sobri e nitidi; il Vermentino, ligure, sardo o toscano, aggiunge una vena sapida e marina che con questi formaggi sta benissimo; il Friulano e il Pinot bianco chiudono con discrezione, senza mai alzare la voce.
