For centuries Cortese has been the white wine of the frontier between Piedmont and the sea. On the terre bianche, the pale marls of the Gavi hills, it gives a taut, dry, savoury wine, sealed by that almond-tinged finish which is its signature: the white the Genoese nobility wanted on the seafood table, and one that still smells of white flowers and green apple.
Il carattereThe character
Dove cresceWhere it grows
Cortese is a Piedmontese grape at home in the south-eastern corner of the region, in the province of Alessandria: the hills of Gavi and the Alto Monferrato, where the Po plain gives way to the Apennines and, just beyond, the Ligurian sea. Here the soils are the terre bianche, pale calcareous-clay marls that drain well and help keep freshness in the wine. It is also grown in the Tortona hills (Colli Tortonesi) and, beyond Piedmont, into Lombardy (Oltrepò Pavese) and as far as the morainic hills of Lake Garda, between Lombardy and Veneto, where it is locally known as Bianca Fernanda.
It is in the heart of Gavi — and in particular in the vineyards of the commune of Gavi alone, the Gavi del Comune di Gavi mention — that Cortese finds its best measure: the marls of the terre bianche, the cool hillside exposure and the restrained yields give it tension, flavour and a surprising ability to age. Made from Cortese alone, Gavi DOCG remains the yardstick for all the rest.

A wine of the sea by historic vocation: Cortese naturally accompanies fish antipasti, raw fish and shellfish, and stands up well to a mixed fry thanks to its freshness and savour. It also sits well with the white dishes of Ligurian and Piedmontese cooking — focaccia and farinata, ricotta-and-greens ravioli, a baked trout or sea bass — and with fresh, lightly aged cheeses. Its dry frame calls for delicate, flavourful dishes, never too rich.

The name appears as early as the early seventeenth century: in an inventory of the cellars of the Casale Monferrato castle, under the Gonzaga, Cortese is listed among the wines kept there; the first modern ampelographic description came with Demaria and Leardi in 1875. But the story of Cortese is above all that of Gavi and Genoa: its closeness to the Ligurian sea made it the favourite white of the Genoese nobility, who wanted it on the seafood table. «Gavi dei Gavi» is not a denomination in its own right, but the trade name with which La Scolca, in the 1960s, turned a niche wine into a classic known around the world.
