La Garganega vive soprattutto fra le province di Verona e Vicenza. I poli classici sono le colline di Soave e Monteforte d'Alpone, a est di Verona, e Gambellara, sui Monti Lessini vicentini. Dà il meglio in altura, dove i suoli vulcanici di origine basaltica — poveri e ben drenati — e le forti escursioni termiche rallentano la maturazione e custodiscono l'acidità: di qui la tensione e il profilo sapido dei vini. In pianura, su terreni più profondi e alluvionali, è più generosa ma meno incisiva. È un vitigno vigoroso: la tradizionale pergola veronese serve proprio a governare la sua esuberanza e a distendere i grappoli al sole.Garganega lives mainly between the provinces of Verona and Vicenza. Its classic poles are the hills of Soave and Monteforte d'Alpone, east of Verona, and Gambellara, on the Lessini mountains of Vicenza. It shines on higher ground, where poor, well-drained volcanic basalt soils and wide day-night temperature swings slow ripening and preserve acidity — hence the tension and saline profile of the wines. On the deeper alluvial plain it is more generous but less incisive. It is a vigorous variety: the traditional pergola veronese exists precisely to govern its exuberance and spread the bunches to the sun.

Il Soave secco si trova a suo agio con una cucina di acqua dolce e di orto: risotti, primi delicati, pesce di lago e fritture leggere. La freschezza e la sapidità lo rendono adatto anche agli asparagi e alle verdure di stagione — di solito ostili al vino — e accompagna bene carni bianche e formaggi freschi o poco stagionati. Il Recioto, dolce, sta bene su pasticceria secca e dolci alle mandorle.Dry Soave is at ease with freshwater and garden cooking: risottos, delicate first courses, lake fish and light fried dishes. Its freshness and salinity also suit asparagus and seasonal vegetables — usually tricky for wine — and it pairs well with white meats and fresh or lightly aged cheeses. Sweet Recioto sits well on dry pastries and almond desserts.
