Il Pigato è un biotipo del Vermentino: ne condivide il profilo genetico, ma porta acini «pigau», punteggiati di macchioline ruggine, da cui il nome dialettale. La sua casa è il Ponente ligure, tra l'entroterra di Albenga e la valle Arroscia: le viti crescono sulle «fasce», i terrazzamenti in pietra a secco strappati alla collina, su terre rosse argillose e ben drenate, ricche di ferro. Sono suoli poveri, di poca resa, che danno vini di carattere — più morbidi e solari nella piana ingauna, più tesi e profumati sulle colline fresche della valle Arroscia, che risale verso i primi contrafforti delle Alpi Liguri. Il mare si vede da quasi ogni vigna, ma non entra nel bicchiere: agisce sul clima. Le brezze asciugano i grappoli e tengono lontane le muffe, mentre le escursioni fra giorno e notte preservano profumi e acidità. Anche la sapidità e le note di erbe e di pietra che chiamiamo «minerali» sono un descrittore del sorso — il modo in cui il vino sa di macchia e di salsedine — non sale o roccia che passano dal suolo al calice.Pigato is a biotype of Vermentino: it shares its genetic profile but ripens «pigau» berries, dotted with rust-coloured freckles, hence the dialect name. Its home is western Liguria, between the hinterland of Albenga and the Arroscia valley: the vines grow on the «fasce», dry-stone terraces carved into the hillside, on well-drained red clay rich in iron. These are poor, low-yielding soils that give wines of character — softer and sunnier on the Albenga plain, tauter and more fragrant on the cooler hills of the Arroscia valley, which rises towards the first spurs of the Ligurian Alps. The sea is in view from almost every vineyard, but it does not enter the glass: it shapes the climate. Breezes dry the bunches and keep mould at bay, while the day-night temperature swings preserve aromas and acidity. The savouriness and the herbal, stony notes we call «mineral» are a descriptor of the sip — the way the wine tastes of scrub and sea air — not salt or rock passing from the soil into the glass.
La denominazione arriva tardi, nel 1988, e tiene insieme un territorio lungo e stretto che attraversa le province di Imperia, Savona e Genova, con cinque sottozone: Riviera dei Fiori, Albenganese, Finalese, Quiliano e Taggia. Per il Pigato il disciplinare chiede almeno il 95% dell'uva omonima, ferma la resa a undici tonnellate per ettaro e fissa un grado minimo di 11% vol; la versione Superiore stringe la resa a nove tonnellate e alza il grado a 13%. Anche il sapore è scritto nel testo — asciutto, pieno, lievemente amarognolo, mandorlato — ed è esattamente quello che si ritrova nel bicchiere: la mandorla amara del finale non è un incidente d'annata, è la firma del vitigno.The appellation came late, in 1988, and holds together a long, narrow territory spanning the provinces of Imperia, Savona and Genoa, with five subzones: Riviera dei Fiori, Albenganese, Finalese, Quiliano and Taggia. For Pigato the production code requires at least 95% of the grape of the same name, caps the yield at eleven tonnes per hectare and sets a minimum of 11% vol; the Superiore version tightens the yield to nine tonnes and raises the minimum to 13%. Even the flavour is written into the text — dry, full, faintly bitter, almond-toned — and it is exactly what turns up in the glass: the bitter almond of the finish is no accident of the vintage, it is the grape's signature.

Nei primi anni Settanta Riccardo Bruna, a Ranzo, comincia a vinificare e imbottigliare il Pigato delle vigne di famiglia: in paese è il primo, racconta oggi la figlia Francesca, che guida l'azienda. Quasi negli stessi anni, giù nella piana, Agostino e Bice Parodi convertono a vigna gli orti dei Massaretti perché i ristoranti della zona chiedono buon Pigato. Da lì l'uva esce dal consumo di casa e trova la bottiglia. Oggi il Pigato divide con il cugino Vermentino il ruolo di bianco simbolo del Ponente, e si beve in due tempi: giovane e fresco l'annata, più ampio e mandorlato il Superiore o le selezioni da vecchie vigne.This is a recently revived white. In the early 1970s Riccardo Bruna, at Ranzo, began vinifying and bottling the Pigato of the family vineyards: he was the first in the village, as his daughter Francesca, who now runs the estate, tells it. At much the same time, down on the plain, Agostino and Bice Parodi turned the vegetable plots of Massaretti over to vines because local restaurants were asking for good Pigato. From there the grape moved out of home use and found the bottle. Today Pigato shares with its cousin Vermentino the role of emblematic white of the Ponente, and it is drunk in two ways: young and fresh as the annata, broader and more almond-toned as the Superiore or the old-vine selections.
