Per generazioni il Marsala è finito soprattutto in padella, a sfumare le scaloppine. Il disciplinare però descrive un'altra cosa: un vino liquoroso della punta occidentale della Sicilia, che invecchia in legno da uno a dieci anni, esiste in tre colori e in tre gradi di dolcezza, e nella versione secca chiede di essere aperto prima del pasto, non versato dentro.For generations Marsala has ended up mostly in a frying pan, deglazing veal escalopes. La zona è la punta occidentale della Sicilia: l'intero territorio della provincia di Trapani, meno i comuni di Pantelleria, Favignana e Alcamo. Il disciplinare la descrive quasi tutta pianeggiante, dai cinquanta metri della fascia costiera ai trecento delle basse colline dell'immediato entroterra, con vigneti generalmente affacciati sul mare e comunque esposti a un sole forte. I terreni sono aridi e poco fertili: argillosi di origine siliceo-calcarea, a tratti ricchi di terre rosse, altrove sabbiosi e spesso con falde superficiali. Il clima è mediterraneo-insulare, con inverni anche piovosi ed estati calde e asciutte, a volte torride quando arrivano i venti caldi africani. È il ritratto di un posto che porta le uve a concentrare zuccheri e polifenoli: la materia prima adatta a un vino destinato a passare anni in botte.The zone is the western tip of Sicily: the whole territory of the province of Trapani, minus the municipalities of Pantelleria, Favignana and Alcamo. The production code describes it as almost entirely flat, from the fifty metres of the coastal strip to the three hundred of the low hills just inland, with vineyards generally facing the sea and in any case exposed to strong sunshine. The soils are dry and not very fertile: clay of silica and limestone origin, in places rich in red earth, elsewhere sandy and often with a shallow water table. The climate is Mediterranean and insular, with winters that can be rainy and summers that are hot and dry, at times scorching when the warm African winds arrive. It is the portrait of a place that pushes grapes to concentrate sugar and polyphenols: the right raw material for a wine meant to spend years in cask.
Le uve cambiano con il colore. Per l'oro e l'ambra il disciplinare ammette Grillo e Catarratto, in tutte le varietà e in tutti i cloni, insieme ad Ansonica — che qui si chiama Inzolia — e a Damaschino. Per il rubino si passa alle uve nere: Perricone, che in zona è il Pignatello, Calabrese, cioè il Nero d'Avola, e Nerello Mascalese, con la possibilità di far concorrere fino al trenta per cento di uve bianche. L'allevamento dev'essere in verticale — alberello e spalliera vanno bene, le forme orizzontali no — e il mosto deve raggiungere da solo almeno 12,00% vol: il vino base parte già ricco, poi l'alcol di origine viticola o l'acquavite di vino lo portano dove serve. Da lì comincia l'invecchiamento in legno, che va da un anno per il Fine a dieci per il Vergine Stravecchio.The grapes change with the colour. For the gold and the amber the production code allows Grillo and Catarratto, in all their varieties and clones, together with Ansonica — called Inzolia here — and Damaschino. For the ruby it turns to black grapes: Perricone, known locally as Pignatello, Calabrese, that is Nero d'Avola, and Nerello Mascalese, with up to thirty per cent of white grapes allowed in the blend. Training must be vertical — bush vines and trellis are fine, horizontal systems are not — and the must has to reach at least 12.00% vol on its own: the base wine starts out rich, then alcohol of grape origin or wine spirit takes it where it needs to be. From there the ageing in wood begins, running from one year for the Fine to ten for the Vergine Stravecchio.
Il racconto d'origine, che le cantine storiche ripetono ancora oggi, parte dal 1773: il mercante inglese John Woodhouse si convince del potenziale dei vini di Marsala e ne spedisce alcune botti in Inghilterra dopo avervi aggiunto acquavite, perché reggano il viaggio. Il successo attira altri imprenditori britannici, e nel 1833 Vincenzo Florio, arrivato dalla Calabria anche lui per mare, costruisce le proprie cantine sulla costa. Di quella stagione il disciplinare conserva le sigle che ammette ancora in etichetta: I.P., Italia Particolare, per il Fine; S.O.M., Superiore Old Marsala, G.D., Garibaldi Dolce, e L.P., in etichetta anche «Inghilterra», per il Superiore. La cornice legale resta la legge del 28 novembre 1984, che l'articolo 1 richiama ancora oggi, e il testo è stato aggiornato l'ultima volta con decreto del 1° luglio 2025. Un dettaglio dice molto di questo vino: l'annata in etichetta non è quella della vendemmia, ma l'anno in cui si è chiusa l'ultima concia.The origin story, which the historic houses still tell today, starts in 1773: the English merchant John Woodhouse became convinced of the potential of the wines of Marsala and shipped a few casks to England after adding spirit, so that they would survive the journey. The success drew other British entrepreneurs, and in 1833 Vincenzo Florio, who had also arrived by sea from Calabria, built his own cellars on the coast. From that era the production code keeps the abbreviations it still allows on the label: I.P., Italia Particolare, for the Fine; S.O.M., Superiore Old Marsala, G.D., Garibaldi Dolce, and L.P., also written «Inghilterra», for the Superiore. The legal frame is still the law of 28 November 1984, which article 1 refers to to this day, and the text was last updated by decree of 1 July 2025. One detail says a great deal about this wine: the year on the label is not the harvest year but the year in which the last «concia» was completed.
