Today, vinified dry and at low yields on the hills around Trapani, Catarratto shows another face — fresh, savoury, with a signature of citrus, orange blossom and almond. It comes in two biotypes, Comune (its berry coated in bloom) and Lucido (glossy-skinned): two varieties for the register, one and the same for DNA.

The grape's freshness long made it precious for base wines and for Marsala, but it is up in the hills, on airy, well-drained slopes, that it gives its finest results: the day-to-night swings and sea breezes keep acidity and aromatics alive. It also appears on Etna, where the rules allow it up to 40% alongside Carricante.

It is the grape's historic home, now revived by a new generation of dry, clean-cut wines.
