Il Damaschino è un bianco siciliano che si beve quasi sempre senza saperlo. Poco alcolico e di profumo discreto, tenuto insieme dall'acidità, ha fatto per generazioni il comprimario: sta nella base del Marsala insieme a Grillo, Catarratto e Inzolia, e riempie i bianchi da tavola del Trapanese. Il nome fa pensare a Damasco, ma di quell'origine non abbiamo trovato prova documentata; quello che il Registro Nazionale dice con certezza è che la varietà è iscritta dal 1971, su proposta della Regione Siciliana. Le bottiglie che lo dichiarano in etichetta, oggi, restano poche.Damaschino is a Sicilian white that most people drink without knowing it. Low in alcohol, discreet on the nose and held together by its acidity, for generations it has played the supporting role: it sits in the base of Marsala alongside Grillo, Catarratto and Inzolia, and it fills the everyday whites of the Trapani countryside. The name points to Damascus, but we found no documented evidence for that origin; what the Italian national grape register does state is that the variety has been listed since 1971, at the request of the Sicilian regional government. The bottles that name it on the label are few today.

Le denominazioni che lo ammettono disegnano una mappa raccolta attorno al Trapanese, che scende verso l'Agrigentino e ha qualche appendice più lontana: fra le DOC ci sono Delia Nivolelli, Marsala, Menfi e Sicilia; fra le IGT, Camarro, Salemi, Valle Belice, Avola, Salina e Terre Siciliane.Damaschino is a grape of western Sicily, and the Italian national grape register says as much even if only indirectly: it was the Sicilian regional government that applied for its listing, granted on 22 March 1971. The appellations that allow it draw a tight map around the Trapani area, reaching down towards Agrigento with a few more distant outposts: among the DOCs there are Delia Nivolelli, Marsala, Menfi and Sicilia; among the IGTs, Camarro, Salemi, Valle Belice, Avola, Salina and Terre Siciliane.

The production code splits that territory into three parts — the Delia Nivolelli basin, flat and mostly clay in texture; the hinterland of Marsala, with regosols, brown soils and vertisols; and a limestone tableland running the length of the coastal strip, light red to reddish brown in colour and freely draining. The climate is Mediterranean, with 576 millimetres of rain spread over 68 days, and the area is swept by steady winds: the Tramontana, the Scirocco, the Ponente and the Maestrale.
Sulla pianta il Damaschino si riconosce dal grappolo, da grande a molto grande, piramidale o conico-piramidale, alato e tendente al compatto; l'acino è medio o grande, sferoidale, con buccia pruinosa e poco consistente, di colore giallo-verdastro che sul lato esposto al sole vira al bruno. Germoglia in epoca media, fiorisce presto, invaia e matura in epoca media. Al Registro risulta iscritto un solo clone, dal 1990.On the vine, Damaschino is recognised by its bunch, large to very large, pyramidal or conical-pyramidal, winged and inclining to compact; the berry is medium to large and spherical, with a bloom-covered, thin skin, greenish yellow turning brown on the side facing the sun. It buds in mid-season, flowers early, and both veraison and ripening fall in mid-season. The register lists a single clone, approved in 1990.

Letti insieme, i due limiti descrivono un bianco costruito sulla leggerezza più che sul peso.The production code lists it among the compulsory mentions and sets aside a type of its own for it — 'Delia Nivolelli' Damaschino, at least 85% of the grape — on the medium-textured soils between Mazara del Vallo, Marsala, Petrosino and Salemi. And the figures are cut to fit the variety: of all the white varietal types in the appellation, Damaschino is the only one asked for a minimum alcohol of 10.50% vol instead of 11.00, and a minimum total acidity of 4.7 g/l instead of 4.5. Read together, the two limits describe a white built on lightness rather than weight.

Il Damaschino secco chiede la cucina di mare del Trapanese, quella semplice: un fritto misto, le panelle e le crocchette di patate, i gamberi crudi di Mazara, il pesce azzurro alla griglia. L'acidità e, nelle versioni frizzanti, le bollicine puliscono la bocca dal fritto, mentre la gradazione bassa non copre un pesce delicato — è il vantaggio di un bianco che non pesa. Va bene anche sui formaggi freschi, una ricotta o un primosale.Dry Damaschino calls for the plain seafood cooking of the Trapani coast: a plate of mixed fried fish, panelle and potato croquettes, the raw prawns of Mazara, grilled oily fish. The acidity and, in the frizzante versions, the bubbles clear the palate after anything fried, while the low alcohol does not smother a delicate fish — that is the advantage of a white that does not weigh the dish down. It also works with fresh cheeses, a ricotta or a young primosale.
