Che vino con le vongole: bianchi freschi e una bollicinaWhich wine with clams: fresh whites and a sparkling wine

In bianco con aglio e prezzemolo, saltate in padella o con i pomodorini: le vongole chiedono un bianco secco e fresco senza legno, o un metodo classico seccoWith garlic and parsley, sautéed in the pan or with cherry tomatoes: clams call for a fresh, dry white without oak, or a dry traditional-method sparkling wine

Clams have tender meat that tastes naturally sweet, and juices that taste of the sea. In the kitchen they nearly always come with olive oil, garlic and parsley, sometimes with a pinch of chilli or a few cherry tomatoes. The wine that goes best with them is a fresh, dry white, without oak and not too high in alcohol: Carricante from Etna, Vermentino, Verdicchio, Albariño from Galicia. Those who prefer bubbles will find in a dry traditional-method sparkling wine a partner that cleans the oil from the palate with every sip.

Perché funzionaWhy it works

Clam meat is delicate and naturally sweet, while the juices they release as they open are salty and taste of the sea. A fresh, dry white works because its acidity makes the mouth water, brings out the flavour of the shellfish and clears the oil of the dressing from the palate. It does, however, need a white with some body and softness: next to such salty juices, a wine that is too thin and sharp can seem hard.

New oak and high alcohol are the things to avoid. A white aged in barriques covers a dish made of very few ingredients, and when there is chilli in the sauce, alcohol sharpens the burn: it is better to stay around 12.5-13 degrees. Tannic reds tend to leave a metallic aftertaste next to shellfish.

A traditional-method sparkling wine is the alternative for those who prefer it: bubbles and acidity clean the oil from the palate, and a dry Brut dosage does not clash with the taste of the sea. It works with clams sautéed in the pan as a starter and with pasta without tomato.

In bianco, in padella o con i pomodoriniWithout tomato, in the pan or with cherry tomatoes

In spaghetti alle vongole «in bianco», without tomato, the clams are opened in a pan with olive oil, garlic and often a splash of white wine, and the dish is finished with parsley and sometimes a touch of chilli. A fresh, medium-bodied white without oak suits it: an Etna Bianco from Carricante, a Vermentino from the Colli di Luni, an Albariño from the Rías Baixas. We cover seafood pasta at length in the guide to spaghetti with clams and seafood risotto.

Clams sautéed in the pan and served on their own as a starter, with their juices and bread, are the right moment for bubbles: a Trentodoc Brut, or another dry traditional-method sparkling wine, goes with the taste of the sea and cleans the oil from the palate.

With cherry tomatoes, in the version known as «in rosso», the sauce becomes a little sharper and calls for a softer white with more body: a Verdicchio dei Castelli di Jesi Classico Superiore, or a Fiano di Avellino that has spent more months on its lees.

Le temperature seguono gli scaglioni della nostra guida alla temperatura di servizio: il metodo classico a 8-10 °C, i bianchi di medio corpo a 10-12 °C, quelli più strutturati fino a 14 °C.Serving temperatures follow the bands of our guide to serving temperature: traditional-method sparkling wine at 8-10 °C, medium-bodied whites at 10-12 °C, the more structured ones up to 14 °C.

What is written here applies to clams cooked in the most common ways: without tomato, sautéed in the pan, with cherry tomatoes. With cream, with butter or in a richer shellfish soup the dish changes and calls for different thinking.
