La zona parte da Avellino e sale verso il confine con la provincia di Benevento: ventisei comuni, duecentosettantasei chilometri quadrati, in parte dentro il parco regionale del Partenio. Il disciplinare stesso ricorda che l'areale, così com'è oggi, era già descritto nel 1642 dallo storico Scipione Bellabona nei suoi «Raguagli della città di Avellino». Il substrato è tutt'altro che uniforme. Nella fascia centrale — da Grottolella a Montefredane, Avellino, Forino, Contrada, Cesinali, Aiello del Sabato — dominano ceneri ocracee e livelli di pomici del secondo periodo flegreo, appoggiati su argille marnose e sabbiose; a ovest, verso Summonte e Sant'Angelo a Scala, compaiono arenarie con intercalazioni di marne; a est, sotto Lapio e Atripalda, argille varicolori con intercalazioni lapidee. Sono terreni pesanti, ricchi di argilla, potassio e magnesio: nelle estati siccitose trattengono acqua e permettono una maturazione più regolare, con l'acidità che resta alta. È questo — quota, notti fredde, argille profonde — a dare al Fiano la sua tensione, più che un improbabile passaggio di minerali dalla roccia al bicchiere: la «mineralità» di un vino è un descrittore del gusto, non una formula chimica.The zone starts at Avellino and climbs towards the border with the province of Benevento: twenty-six municipalities, two hundred and seventy-six square kilometres, partly inside the Partenio regional park. The production code itself notes that the area, in its present shape, was already described in 1642 by the historian Scipione Bellabona in his «Raguagli della città di Avellino». The bedrock is anything but uniform. In the central band — from Grottolella to Montefredane, Avellino, Forino, Contrada, Cesinali and Aiello del Sabato — ochre ash and pumice layers from the second Phlegraean period dominate, resting on marly and sandy clays; to the west, towards Summonte and Sant'Angelo a Scala, sandstones with marl interbeds appear; to the east, below Lapio and Atripalda, variegated clays with rocky interbeds. These are heavy soils, rich in clay, potassium and magnesium: in dry summers they hold water and allow a steadier ripening, with acidity staying high. It is this — altitude, cold nights, deep clays — that gives Fiano its tension, rather than some unlikely passage of minerals from rock to glass: a wine's «minerality» is a taste descriptor, not a chemical formula.
Il Fiano è una varietà antica: i Romani la chiamavano vitis apiana, la «vite delle api», per i grappoli zuccherini che attiravano gli insetti — da qui la menzione tradizionale Apianum, che il disciplinare ammette ancora in etichetta. Nel dopoguerra il vitigno rischiò di sparire dalle colline irpine, e il merito del suo recupero è riconosciuto alla cantina Mastroberardino, che spinse i contadini a reimpiantarlo quando le rese erano ai minimi. È un'uva di resa contenuta e maturazione tardiva: si vendemmia a ottobre, e nelle vigne più alte anche a fine mese. L'Irpinia, interna, lontana dal mare e cinta dai monti, è uno degli angoli più freschi del Sud vinicolo, e insieme al Greco di Tufo, di casa a pochi chilometri, il Fiano forma la coppia di grandi bianchi su cui poggia la fama enologica della provincia. La stessa freschezza spiega perché, a differenza di molti bianchi, qui le bottiglie migliorino con gli anni: dopo cinque o sei stagioni il frutto lascia spazio a miele, nocciola tostata e una sfumatura fumé, e i produttori più convinti mettono da parte ogni anno qualche centinaio di bottiglie da rimettere in commercio dopo dieci o quindici anni.Fiano is an ancient variety: the Romans called it vitis apiana, the «bees' vine», after the sugary clusters that drew the insects — hence the traditional Apianum mention, which the production code still allows on the label. After the war the grape nearly vanished from the Irpinia hills, and credit for its recovery goes to the Mastroberardino winery, which pushed growers to replant it when yields had fallen to a trickle. It is a low-yielding, late-ripening grape: harvest falls in October, and in the highest vineyards even at the end of the month. Irpinia — inland, far from the sea and ringed by mountains — is one of the coolest corners of the southern wine world, and together with Greco di Tufo, at home just a few kilometres away, Fiano forms the pair of great whites on which the province's reputation rests. That same freshness explains why, unlike many whites, the bottles here improve over the years: after five or six seasons the fruit gives way to honey, toasted hazelnut and a smoky nuance, and the most committed growers set aside a few hundred bottles each year to release ten or fifteen years later.

Questa scheda profila perciò la tipologia ferma, l'unica che si trovi davvero in enoteca. Per il resto il disciplinare resta severo: solo vigneti collinari e ben esposti, fondovalle esclusi, dieci tonnellate di uva per ettaro al massimo, una resa in vino non superiore al 70%, e il divieto di ogni aggettivo di comodo in etichetta — extra, fine, superiore, scelto, selezionato, classico.The appellation was born a DOC in 1978 and became a DOCG in 2003, but its present shape is recent. For the rest the code stays strict: hillside, well-exposed vineyards only, valley floors excluded, a ceiling of ten tonnes of grapes per hectare, a grape-to-wine yield no higher than 70%, and a ban on every convenient adjective on the label — extra, fine, superiore, scelto, selezionato, classico.
