La zona è un pezzo del bacino del fiume Esino: ventidue comuni in provincia di Ancona e due in provincia di Macerata, chiamati Castelli perché ruotavano attorno a Jesi, la città che nel 1194 diede i natali a Federico II di Svevia. Il mare è a una ventina di chilometri e si sente: le brezze che risalgono la valle incontrano l'aria fresca che scende dall'Appennino, e il gioco fra il caldo del giorno e il fresco della notte è ciò che tiene in piedi l'acidità e i profumi del vitigno. Il 70% delle vigne sta fra gli 80 e i 280 metri — la più alta arriva a 750 — su colline argillose e ricche di carbonato di calcio, poco permeabili, che d'estate trattengono l'acqua quel tanto che basta. Piove intorno agli 800 millimetri l'anno e la temperatura media resta sotto i 14 °C: un clima temperato, non torrido, che porta l'uva a maturare senza bruciarla.The area is a slice of the Esino river basin: twenty-two municipalities in the province of Ancona and two in the province of Macerata, called Castelli because they revolved around Jesi, the town where Frederick II of Swabia was born in 1194. The sea is some twenty kilometres away and you can tell: the breezes coming up the valley meet the cool air descending from the Apennines, and the swing between warm days and cool nights is what keeps the grape's acidity and aromas alive. Seventy per cent of the vineyards sit between 80 and 280 metres — the highest reaches 750 — on clay hills rich in calcium carbonate, poorly permeable, which in summer hold just enough water. Rainfall is around 800 millimetres a year and the mean temperature stays below 14 °C: a temperate climate, not a scorching one, which ripens the grapes without burning them.

The Spanish agronomist Herrera had already worked that out in the early 1500s: he described it as a vine for high, dry places, with thin skins and a fragile cane, and praised its wine for its clarity and its ability to keep for a long time. Three and a half centuries later, in 1871, the Ampelographic Commission of the Province of Ancona recorded it in its «Primi studi sulle viti della Provincia di Ancona» as the grape of the Jesi area. A disarming curiosity: genetic studies have established that it is the same grape as Trebbiano di Soave, in Veneto, even though the two remain listed in the national register as distinct varieties.

Furono i monaci benedettini e poi i camaldolesi a rimettere la vite al centro di queste colline e a tramandare le tecniche di cantina; con la mezzadria il vino smise di essere roba da signori e diventò alimento quotidiano delle famiglie contadine. Fu un successo enorme e insieme una gabbia: per decenni quel vetro verde ha detto «bianco da trattoria» prima ancora che si assaggiasse il vino.The human hand has a long story here. It was the Benedictine and later the Camaldolese monks who put the vine back at the centre of these hills and passed on the cellar techniques; with the sharecropping system wine stopped being a gentleman's drink and became the daily food of farming families. Then came the twentieth century, and with it the misunderstanding: in 1953 a competition launched by Francesco Angelini for Fazi Battaglia was won by the architect Antonio Maiocchi, and the amphora-shaped bottle — inspired by Etruscan vessels — carried Verdicchio onto tables across half of Italy. It was an enormous success and, at the same time, a cage: for decades that green glass said «trattoria white» before anyone had even tasted the wine.

Annata e Riserva sono due vini diversi, e conviene saperlo prima di comprare: la prima si beve entro un paio d'anni, la seconda chiede pazienza e in cambio la restituisce. Il DOC, intanto, resta dov'era: è da lì che si parte.It is a cumbersome legacy that the more attentive growers have overturned, working on yields and on the best vineyards. Today Verdicchio dei Castelli di Jesi shows its other side: savouriness, tension, a sip that changes over time and a staying power the Riserva have proved. The appellation tells this double story in its own styles — the annata and the Classico, lean and for drinking early; the Classico Superiore, which calls for lower yields and one more degree; and the Riserva, a DOC style from 1995 and, since 2010, a DOCG in its own right, Castelli di Jesi Verdicchio Riserva, with at least eighteen months' ageing, six of them in bottle. The annata and the Riserva are two different wines, and it is worth knowing that before you buy: the first is drunk within a couple of years, the second asks for patience and pays it back. The DOC, meanwhile, stays where it was: that is where you start.
