Pigeon, and with it quail, pheasant and partridge, has dark, lean, close-grained meat with a clear-cut flavour that is a little reminiscent of liver. In the kitchen it is served pink, with a brown jus: a dark, dense sauce made from browned meat or from the bones of the birds themselves, with vegetables and hours of cooking. It calls for a red with fine tannin, fresh, fragrant and long, such as a Pinot Noir from Burgundy, a Nebbiolo from Barbaresco or a Syrah from Hermitage; and for those who love sparkling wine there is a traditional-method sparkler that includes Pinot Noir.
Perché funzionaWhy it works
Let's start with the dish. Pigeon meat is dark, lean and close-grained, and cooked pink it stays juicy: with every cut it releases juice that tastes of iron and of the forest floor. The skin, browned in the pan or in the oven, brings a thin layer of fat with it. Then there is the brown jus. In classic cooking it is made by browning the meat in the oven with carrot and onion, then adding celery and herbs and leaving it to simmer for hours; in the game version the bones and carcasses of the birds themselves are used, with the same vegetables. Once reduced, the jus becomes a dense, glossy sauce with a concentrated, lingering flavour.
So the glass needs four things. Fine tannin, which dries the juice of the pink meat and readies the palate for the next mouthful, without smothering the flavour of the meat. Freshness, which cleans the fat of the skin from the palate and keeps the sip lively beside such a dense sauce. Intense aromas and a persistent finish, because the brown jus stays in the mouth for a long time and a short wine disappears after one sip. And measured alcohol: when the warmth takes over, it overwhelms the dish instead of going along with it.
The most common mistake is a young, heavily extracted and very tannic red. The lean, close-grained meat of pigeon cannot take tannin like that: the wine dries it out and covers it, and all that is left in the mouth is astringency. Better a red that has already found its balance, or one that is naturally slender.
Dal piccione rosa al salmì: come cambia il caliceFrom pink pigeon to salmi: how the glass changes
Roast pigeon served pink, with the reduced jus on the side, is the most classic case, and it is Pinot Noir territory. A Burgundy Pinot Noir has slender tannin, freshness and aromas of berries that move towards forest floor with age, and it goes with the flavour of the meat without overpowering it; the Alto Adige version, from hillside vineyards, is fresh and fragrant with blackberry and blueberry, and also works with quail, which is smaller and lighter in flavour.
If the jus is darker and more reduced, or if the pheasant has been hung for a few days, the dish grows more intense and the glass can step up in structure. This is where Nebbiolo from Barbaresco belongs, with tannin that is firm but fine and a lively acidity that stands up to such a lingering sauce, or Syrah from the northern Rhône: a Hermitage, spicy and tannic, or, for less money, a Crozes-Hermitage, with less severe tannin and notes of black fruit and flowers.
Salmi is another story: the game is cut into pieces and cooked in the marinade it has rested in, with wine or vinegar, vegetables and spices, and the sauce becomes darker and spicier. There you need a full-bodied red, and Hermitage is the safest choice; for furred game, such as hare or wild boar, see our guide to game and the one on hare civet.
And sparkling wine? A traditional-method sparkler that includes Pinot Noir, with a few years on the lees, has the body to sit beside the meat, while its bubbles and acidity clean the fat of the skin from the palate. It is a choice for anyone who does not care for reds, or for opening the dinner with chicken-liver crostini.

What is written here applies to pigeon and the other game birds served pink, with a classic brown jus. A chocolate, red-fruit or orange sauce shifts the dish towards sweetness and calls for different thinking; and meat cooked for a long time, until the pink is gone, dries out and carries less tannin.
