La collina dell'Hermitage è un lembo di massiccio granitico che il Rodano ha staccato dalla montagna dell'Ardèche, lasciandolo isolato sulla riva sinistra del fiume: un'isola geologica nel dipartimento della Drôme, riconoscibile da chiunque risalga la valle in auto, in treno o sul fiume. Il vigneto occupa quasi tutto il territorio di Tain-l'Hermitage e sconfina appena su Crozes-Hermitage e Larnage; a ovest lo chiude la rupe di Pierreaiguille, 335 metri. Il suolo cambia da ovest a est, non dall'alto in basso: a occidente il granito primario, coperto da micascisti e gneiss, si degrada in arene sabbio-argillose fragili; a oriente si sovrappongono le antiche terrazze alluvionali portate dallo scioglimento dei ghiacciai alpini, e sui pianori in cima resta un velo di loess calcareo che l'erosione non ha ancora portato via. Il versante è disposto perpendicolare all'asse della valle, e i pendii ripidi lo riparano dai venti del nord: ne nasce un mesoclima molto caldo, che ha lasciato sopravvivere qualche olivo nel quartiere delle Beaumes e mette le vigne al riparo dalle gelate primaverili.The hill of Hermitage is a shard of granite massif that the Rhône cut away from the Ardèche mountains, leaving it stranded on the river's left bank: a geological island in the Drôme, recognisable to anyone coming up the valley by road, by rail or on the water. The vineyard covers almost the whole commune of Tain-l'Hermitage and spills over only marginally into Crozes-Hermitage and Larnage; to the west it is closed by the Pierreaiguille rock, 335 metres high. The soil changes from west to east, not from top to bottom: to the west, primary granite covered by mica schist and gneiss weathers into fragile sandy-clay grus; to the east lie the old alluvial terraces left by the melting of the Alpine glaciers, and on the flat tops of the slope a veil of calcareous loess survives where erosion has not yet stripped it. The slope runs at right angles to the valley axis, and its steep gradients shelter it from the northerly winds: the result is a very warm mesoclimate that has let a few olive trees survive in the Beaumes quarter and keeps the vines out of reach of spring frost.

Marsanne and Roussanne remain accessory varieties and may appear only interplanted among the Syrah vines, up to 15% of the vines: not a stylistic clause but the trace of the mixed vineyard, which here was never entirely swept away. Yields are capped at forty hectolitres per hectare for the reds, minimum density at six thousand vines, and hand harvesting is compulsory, with whole bunches carried to the cellar. On terraces held up by dry-stone walls there would be no alternative anyway: no tractor climbs there. The tally the code itself gives is that of a tiny appellation — one hundred and thirty-seven hectares claimed, one cooperative, seven négociant houses and seventeen private cellars — with reds accounting for about seventy per cent of production.

Nell'Ottocento i negozianti dipingevano i propri nomi sui muri di sostegno del versante, sempre più in alto, perché si leggessero dalla ferrovia aperta a metà secolo ai piedi della collina; e le cronache dell'epoca raccontano che i vini di Bordeaux venissero spesso «rinforzati» con Hermitage. The fame, though, is documented far earlier. In 1665 Boileau complained in verse of an Auvergne wine sold as «vin de l'Ermitage»; in 1791 Thomas Jefferson, then ambassador in Paris, called it «the first wine in the world without exception», and as president had it shipped to him regularly. In the nineteenth century merchants painted their names on the retaining walls of the slope, higher and higher, so they could be read from the railway opened at mid-century at the foot of the hill; and the chronicles of the day report that Bordeaux wines were often «strengthened» with Hermitage. After phylloxera the community reorganised — the growers' union in 1890, the fine-wine cooperative in 1933 — and it was the protection union, founded in 1930 precisely to delimit the hill, that opened the way to recognition: the judgment of the Valence court in June 1936, then the decree of 4 March 1937. Since 2013 the coteaux of Hermitage have been a listed site, with walls, terraces and benches protected as landscape.

Da giovane l'Hermitage rouge è serrato, quasi severo: è un vino fatto per essere aspettato. Dopo dieci o quindici anni cambia registro — catrame, cuoio e sottobosco su uno scheletro tannico ormai sciolto — ed è allora che si capisce che cosa ci avesse visto Jefferson. Da comprare giovane, mettere via e aprire su un arrosto d'inverno.Young, Hermitage rouge is tight, almost stern: a wine made to be waited for. After ten or fifteen years it changes register — tar, leather and undergrowth over a tannic frame that has finally loosened — and that is when you understand what Jefferson saw in it. Buy it young, lay it down, and open it on a winter roast.
