Vino per la bistecca spessa e ben rosolata: Barolo, Barbaresco, Barbera e una bollicina dell'Alta LangaWine for a thick, well-seared steak: Barolo, Barbaresco, Barbera and an Alta Langa sparkling wine

A dark, toasted crust, a pink centre full of juice, a strip of fat along the edge: here is what the steak asks of the glass, and how Piedmont answers.

A steak two or three fingers thick, seared over a fierce heat, has a dark, deeply savoury crust outside and pink meat inside that releases juice at every cut. The wine that sits best beside it is a red with noticeable tannin, good freshness and enough structure not to disappear behind the crust. In Piedmont the most natural answer is Nebbiolo: Barolo and Barbaresco for a special dinner, Langhe Nebbiolo for every day, and alongside them Barbera, fresher and lighter in tannin. For those who don't care for reds there is another route, a traditional-method sparkling wine from Alta Langa made mostly from Pinot Noir. And from the wider world, a Rioja Reserva and a Malbec from Mendoza.

Perché funzionaWhy it works

A thick, well-seared steak brings three different things to the table. The first is the crust: the fierce heat darkens it and gives it a toasted, intense flavour that lingers in the mouth. The second is the juice, because under the crust the meat has stayed pink and every bite floods the palate. The third is the fat along the edge, which leaves the mouth coated at the end of each bite.

Each of these meets its match in the wine. Tannin and alcohol deal with the juice, drying the mouth the meat has just wetted and readying it for the next bite: the pinker and juicier the meat, the more tannin it can carry. Freshness, the acidity that makes you salivate, deals with the fat along the edge, and in a sparkling wine the bubbles help too. The crust calls for a wine with structure and persistence to match the dish: a red that is too light simply disappears beside toasted meat.

The limit is excess. A very alcoholic red with little freshness makes each bite feel heavy, and too much new oak covers the flavour of the meat instead of accompanying it. The serving temperature matters too: a full-bodied red should be poured at 16-18 °C, because any warmer and the alcohol takes over precisely where the meat needs it least.

Piedmont has in Nebbiolo the right grape for this meat: firm tannin and lively acidity, exactly the two levers the juice and the fat of the steak call for.

Barolo and Barbaresco, for a special dinner. Barolo is made from Nebbiolo alone, and its production rules require at least 38 months of ageing, 18 of them in wood: the long ageing rounds off the edges of the tannin. The Barolo del Comune di Serralunga d'Alba from Fontanafredda comes only from vineyards in that commune. Barbaresco, also from Nebbiolo, is made in a handful of communes near Alba, among them Barbaresco, Neive and Treiso: the one from Prunotto brings together grapes from Barbaresco, Treiso and Neive. These are the wines for a thick steak cooked rare or just beyond.

Langhe Nebbiolo and Barbera, for every day. Langhe Nebbiolo is the same grape in a more direct style: Perbacco from Vietti comes mostly from Nebbiolo vineyards in the Barolo and Barbaresco areas. Barbera has less tannin and more freshness: it is the choice for anyone who wants a less austere red, one that cleans the fat from the palate without drying it too much. Montebruna from Braida, a Barbera d'Asti from Rocchetta Tanaro, matures for a year in large oak casks.

Sparkling, the road less travelled. Alta Langa is Piedmont's appellation for traditional-method sparkling wine, made from Pinot Noir and Chardonnay. A version made mostly from Pinot Noir has enough body to sit beside the meat, and its bubbles and acidity clean the fat from the palate with every sip: Bacco d'Oro from Contratto is a Brut with 80% Pinot Noir and at least 30 months on the lees. It works best with the steak sliced and served warm rather than hot.

Fuori dal Piemonte: Rioja e MendozaBeyond Piedmont: Rioja and Mendoza

From Spain comes a red that works on steak much like a mature Nebbiolo, with more softness. In a Rioja Reserva, Tempranillo aged at length in barrels has tannin already rounded by time and good freshness: Viña Ardanza Reserva from La Rioja Alta blends Tempranillo and Garnacha and spends about three years in American oak barrels.

From Argentina, Malbec from Mendoza is the route for anyone who wants more fruit and rounder tannin: in Argentina it is a familiar partner for grilled meat. Catena Malbec from Catena Zapata comes from high-altitude vineyards in the province and is aged in French oak barrels.

What is written here applies to a steak cooked rare or just beyond and seasoned simply: salt, oil, at most a sprig of rosemary. A peppercorn, gorgonzola or balsamic sauce shifts the balance and calls for different thinking; and cooking the meat well done dries it out, so that it then carries less tannin.
