Summers are dry, rain is scarce, and in August 1951 the thermometer hit 45.5 degrees. And yet the vines are here, and they do well: the little rain that falls is made up for by the humidity coming off the Pacific, and that is the climatic factor that really counts. In the middle of this Baja California valley, Phil and Eileen Gregory put up a small winery by reusing old boats.

It is a river valley: the arroyo Guadalupe runs through the middle, and on either side rise hills cut by canyons, reaching 600 metres to the north-west and 1,300 to the south-east. Northern Baja California, explains the book that the Universidad Autónoma de Baja California devoted to this valley, sits at the southern limit of North America's Mediterranean climate belt: winter storms, dry summers. Along the coastal strip the annual average rainfall runs from 200 to 350 millimetres, reaching 400 only on the tops of the hills closest to the sea. In the valley the mean temperature is 16.9 degrees, though the historical record also holds -9 degrees in December 1966.

It does not, because — as the same book writes — the scarce rainfall is offset by atmospheric humidity, which is very high on the Pacific coast: that, for the valley, is the climatic factor that matters. The rest comes from below ground. The rocks belong to the peninsular batholith: the north-western and south-eastern slopes are granitic, while the plain and the arroyo bed are covered by recent alluvium. The valley soil is sandy and without well-defined horizons, pale in colour, and where it is shallow it looks a great deal like the rock it comes from.

Per capire la scala: l'associazione dei viticoltori della Baja California, quella che organizza le feste della vendemmia, conta ottanta cantine associate.Vena Cava was founded in 2005 in the heart of the valley, at Ejido Francisco Zarco, within the project Phil and Eileen Gregory run at La Villa del Valle. The name comes from anatomy: the vena cava is the vein that carries blood back to the heart. The building was designed by the architect Alejandro D'Acosta, and his idea is reuse — old boats and other salvaged materials, put back to work. The house calls itself boutique and states that it aims at quality rather than quantity. For a sense of scale: the Baja California growers' association, the one behind the harvest festivals, has eighty member wineries.
Phil Gregory è anche l'enologo. The estate vineyard is farmed organically, with no pesticides or synthetic fertilisers, and it supplies, for instance, the grapes for the natural Sauvignon Blanc; for other labels the house buys fruit from vineyards across Baja California. The microclimate it describes is the valley seen from the vine row: warm days, cool mornings and evenings, and the breeze coming up off the sea. In recent years Gregory has pushed towards natural wines and barrel fermentation, and the Ambar line is where he pushes hardest: the white grapes ferment in contact with skins and pips, in concrete amphorae, tanks and open barrels, with no added yeast and no sulphites.

For an oak-aged red grown at this latitude that is a low reading. The house's other figures point the same way: 12% for the Merlot Pét Nat, 13% for the natural Sauvignon Blanc and for the Ambar made from Chardonnay.

The whites of the Ambar line are a chapter of their own: fermented on the skins they take on a deep golden yellow and a tannic grain a white does not usually have, and they should be read as skin-contact whites. The Pét Nat, born of a single fermentation sealed in the bottle, has the coarse bead and the veil of lees of the ancestral method — it is not a polished sparkling wine, and that is exactly the point.

With battered fried fish, white sauce and the crunchy cabbage of a taco, the Pét Nat works: the bubbles and the lively acidity clean the mouth between one bite and the next. With oysters and clams shucked to order, and a squeeze of lime, a dry, saline Sauvignon Blanc with no oak is the right call. And with meat off the grill, the house red: the fat of the meat softens the tannin, while the modest alcohol adds no weight to a dish that already has plenty.
