L'Obeidi è una delle due uve bianche storiche del Libano, e per secoli il suo mestiere non è stato il vino: da questa uva nasce l'arak, il distillato all'anice che sta in mezzo alla tavola del mezze. Da qualche anno le case della Bekaa la imbottigliano anche da sola, e ne esce un bianco caldo e profumato, di poca acidità, che trova il suo equilibrio con un passaggio in legno o accanto al Merwah.Obeidi is one of Lebanon's two historic white grapes, and for centuries its job was not wine: it is the grape behind arak, the aniseed spirit that sits in the middle of the mezze table. In recent years Bekaa estates have started bottling it on its own too, and it gives a warm, perfumed white, low in acidity, that finds its balance with a spell in oak or alongside Merwah.

L'Obeidi è un'uva di montagna: le vigne stanno dai mille metri in su. Sull'altopiano della Bekaa, sulle colline intorno a Zahlé, si sale fra i 1.100 e i 1.300 metri, su suoli di calcare e ghiaia: Domaine des Tourelles alleva le sue a pergola, per dare più sole a un'uva che matura tardi. Salendo verso est si arriva alle pendici dell'Anti-Libano, dove una delle case storiche del Paese la coltiva su terreni sassosi e calcarei intorno ai 1.400 metri, con viti basse non allevate a spalliera, ancora franche di piede, e rese di dieci-venti ettolitri per ettaro.Obeidi is a mountain grape: the vineyards start at a thousand metres. On the Bekaa plateau, on the hills around Zahlé, they climb to between 1,100 and 1,300 metres, on limestone and gravel soils: Domaine des Tourelles trains its own on pergolas, to give more sun to a late-ripening grape. Heading east you reach the slopes of the Anti-Lebanon, where one of the country's historic houses grows it on stony, chalky ground at around 1,400 metres, with low vines not trained on wires, still on their own roots, and yields of ten to twenty hectolitres per hectare.

Il resto lo fa il clima: estate secca e forte escursione fra il giorno e la notte, che è poi la ragione per cui un'uva di suo poco acida riesce comunque ad arrivare in cantina con un po' di nervo. Più a nord, sui monti di Bsharri sopra la valle della Qadisha, sopravvivono vigne vecchissime: sono quelle del Merwah, l'altra bianca storica del Paese, che nella stessa etichetta accompagna l'Obeidi. In etichetta non troverete una denominazione come in Europa: si leggono il nome della casa e quello della valle.The climate does the rest: dry summers and a wide day-to-night swing, which is why a grape that is naturally low in acidity still reaches the cellar with some bite. Further north, on the mountains of Bsharri above the Qadisha valley, very old vines survive: these are Merwah, the country's other historic white, which shares a label with Obeidi. On the label you will not find a denomination as in Europe: you read the name of the house and that of the valley.

L'arakArak
È il mestiere più antico dell'uva: il mosto fermenta in vino, il vino si distilla due volte in alambicchi a cappello moresco, poi il distillato macera con l'anice verde e si distilla ancora; riposa infine in giare commissionate a un paese della montagna libanese. A tavola si allunga con acqua e ghiaccio, e diventa bianco.This is the grape's oldest trade: the must ferments into wine, the wine is distilled twice in Moorish-lid stills, then the spirit macerates with green aniseed and is distilled again; finally it rests in jars commissioned from a village in the Lebanese mountains. At the table it is lengthened with water and ice, and turns white.

With mezze — hummus, roast aubergine, fried kebbeh, salads dressed with oil — go for the simplest version, unoaked, served at 8-10 °C: alcohol and body stand up to the fried food, and the herbal note chimes with the parsley and lemon on the plate.

Le versioni affinate in legno, più piene e dorate, chiedono piatti più sostanziosi e si servono meno fredde, a 10-14 °C: il pollo alle spezie con il riso, il pesce al forno con la salsa di tahini e peperoncino, una tavola di formaggi freschi di pecora. Qui contano la morbidezza e la persistenza, che tengono testa alle spezie senza spegnerle. Il bianco che esce sette anni dopo la vendemmia sta a sé: si versa poco freddo, sull'estremo alto della banda dei bianchi affinati (10-14 °C), e accompagna i paté, i piatti di pesce e la cucina speziata.The oak-aged versions, fuller and golden, call for more substantial dishes and are served less cold, at 10-14 °C: spiced chicken with rice, baked fish with tahini and chilli sauce, a board of fresh sheep's cheeses. Here it is softness and length that count, holding their own against the spices without smothering them. The white released seven years after the harvest stands apart: it is poured barely cool, at the top end of the band for oak-aged whites (10-14 °C), and goes with pâtés, fish dishes and spiced cooking.

Per decenni si è ripetuto che l'Obeidi fosse parente dello Chardonnay, e la voce circola ancora: una delle case libanesi più note all'estero scrive ancora oggi che le uve bianche del Paese «si dicono» imparentate con Chasselas, Chardonnay e Sémillon. Nei registri ampelografici, però, l'Obeidi ha una scheda tutta sua, con origine libanese, mentre un'altra grafia, «Obaideh», compare fra i sinonimi registrati dello Chardonnay: due numeri diversi, due uve diverse. L'equivoco, insomma, è nato da lì.For decades it was said that Obeidi was a relative of Chardonnay, and the story still goes around: one of the Lebanese houses best known abroad still writes that the country's white grapes are «said to be» related to Chasselas, Chardonnay and Sémillon. In the ampelographic registers, however, Obeidi has an entry of its own, with Lebanese origin, while another spelling, «Obaideh», appears among the registered synonyms of Chardonnay: two different numbers, two different grapes. That, in short, is where the confusion came from.
