Nella zona di Canelli e Santo Stefano Belbo il Moscato Bianco dà il meglio di sé. La fermentazione fermata in autoclave (metodo Martinotti) conserva zucchero e profumi e tiene l'alcol bassissimo, intorno ai cinque gradi svolti: ne esce un vino dolce ma slanciato, delicatamente frizzante, che profuma di uva appena colta. È il modo più immediato e sincero di leggere questo vitigno.Around Canelli and Santo Stefano Belbo, Moscato Bianco is at its best. Fermentation stopped in the tank (Martinotti method) keeps sugar and perfume while leaving alcohol very low, around five per cent by volume: the result is a sweet yet lively, gently sparkling wine that smells of just-picked grapes. It is the most immediate, honest way to read this variety.

Con i dolci è di casa, e la regola è la più semplice che ci sia: a un dolce serve un vino altrettanto dolce, mai secco. Il Moscato d'Asti accompagna il panettone e il pandoro delle feste, le crostate di frutta e la pasticceria secca; la sua dolcezza, tenuta in equilibrio dalla freschezza e dalle bollicine, lo rende leggero anche a fine pasto, quando un passito sarebbe troppo. Sui dolci più ricchi e su certi formaggi erborinati si sale alle versioni passite, più concentrate.It is a natural match for desserts, and the rule could not be simpler: a dessert needs a wine just as sweet, never dry. Moscato d'Asti goes with festive panettone and pandoro, fruit tarts and dry pastries; its sweetness, kept in balance by freshness and bubbles, makes it light even at the end of a meal, where a passito would be too much. For richer desserts and some blue cheeses, move up to the more concentrated passito styles.

Da non confondere con i suoi omonimi, che sono uve diverse: il Moscato Giallo del Fior d'Arancio dei Colli Euganei, il Moscato di Scanzo (a bacca rossa, nel Bergamasco) e lo Zibibbo (il Moscato d'Alessandria di Pantelleria), di cui però il Moscato Bianco è uno dei genitori.The Romans called it uva apiana, «the bee grape», for the sweet scent that draws insects: it is one of the longest-cultivated vines around the Mediterranean. Not to be confused with its namesakes, which are different grapes: the Moscato Giallo of Colli Euganei Fior d'Arancio, the red-berried Moscato di Scanzo (near Bergamo) and Zibibbo (the Moscato d'Alessandria of Pantelleria) — of which, however, Moscato Bianco is one of the parents.
