Under the name Muscat of Alexandria it is one of the most widely grown white grapes in the world — wine and table grape alike — from Spain (Malaga, Valencia) to Portugal, from South Africa to Australia, all the way to South America, where it goes into Pisco. The saline note and freshness of island wines come from the setting — sun, sea breezes, free-draining sands — not from salt travelling from the sea into the glass.

Ne esce un vino dorato tendente all'ambra, dolce e profondo, con almeno il 20% vol complessivo: miele, albicocca secca, fico e scorza d'arancia.This is where Zibibbo reaches its peak: one hundred per cent Zibibbo, grapes picked and left to dry in the sun on cane racks, then re-fermented with the raisined fruit. The vines grow ungrafted — phylloxera cannot move through the loose volcanic sands — and as alberello pantesco, the farming practice inscribed by UNESCO in 2014. The result is a golden-to-amber wine, sweet and deep, at least 20% total alcohol: honey, dried apricot, fig and orange peel.

Il passito è un fuoriclasse del fine pasto: pasticceria secca di mandorla, cassata e cannoli, frutta secca e formaggi erborinati; accompagna anche il foie gras e sta benissimo da solo, meditato. La versione secca cambia registro: fresca e sapida, sta bene sul cùscusu di pesce trapanese, sul crudo di mare e sui piatti speziati; il moscato dolce chiude su una crostata di frutta.The passito is a star at the end of a meal: dry almond pastries, cassata and cannoli, dried fruit and blue cheeses; it also works with foie gras and is wonderful on its own, sipped slowly. The dry version changes register: fresh and savoury, it sits well with Trapani-style fish couscous, raw seafood and spiced dishes; the sweet Moscato closes on a fruit tart.

Il nome viene dall'arabo zabib, «uva passa»: per secoli lo Zibibbo fu apprezzato prima come uva da essiccare e da tavola che come vino, ed è ancora oggi una delle varietà più antiche tuttora coltivate. Geneticamente è un figlio del Moscato Bianco (il Muscat Blanc à Petits Grains) incrociato con una varietà mediterranea minore, e a sua volta capostipite di altri moscati. A Pantelleria la vite si coltiva in conche scavate nella terra, per riparare i grappoli dal vento costante: agricoltura eroica, fatta a mano sulle terrazze di pietra.The name comes from the Arabic zabib, 'raisin': for centuries Zibibbo was prized first as a drying and table grape rather than a wine grape, and it remains one of the oldest varieties still in cultivation. Genetically it is an offspring of Muscat Blanc à Petits Grains crossed with a minor Mediterranean variety, and in turn a progenitor of other Muscats. On Pantelleria the vine is grown in hollows dug into the ground, to shelter the bunches from the constant wind: heroic farming, done by hand on stone terraces.
