The spread tells two parallel lives: 23,589 hectares in Castilla-La Mancha, with a further 7,918 in Extremadura, where the grape mainly serves everyday whites and distillation; then come Catalonia's 12,100 hectares, Valencia's 5,111, Rioja's 3,155 and Aragón's 2,407.
In Catalogna il Macabeo è la varietà più coltivata dell'intera DO Cava, dove forma il terzetto classico delle bollicine insieme a Xarel·lo e Parellada — la seconda fermentazione avviene in bottiglia, come spieghiamo nella guida ai due metodi: porta il frutto e la morbidezza, mentre le altre due mettono struttura e finezza. In Rioja, where it goes by Viura, the game is different: the production code reserves white wines to nine varieties and opens the list with this one, and the regulatory board names it the most planted white of the denomination, suited both to young whites and to oak-aged ones. It is an accommodating grape — it adapts to every kind of soil and climate — but not invulnerable: the same board flags it as sensitive to wind and frost.

Non è una novità recente: la legge del 15 luglio 1914 che definì i vins doux naturels elencava già il Macabeu fra le uve ammesse.Beyond the Pyrenees the name changes again, to Macabeu, and the centre of gravity shifts to Roussillon. In the AOC Côtes du Roussillon code it is a principal variety for the whites alongside Grenache blanc and Tourbat, and the three together must account for at least half the blend; in Rivesaltes it is among the principal varieties for the ambré, rosé and tuilé styles, that is for the fortified sweet wines of Languedoc-Roussillon. This is no recent development: the law of 15 July 1914 that defined vins doux naturels already listed Macabeu among the permitted grapes.

Il disciplinare vigente chiede ai bianchi diciotto mesi per la menzione Crianza, di cui almeno sei in botti da 225 litri; ventiquattro mesi complessivi per la Reserva e quarantotto per la Gran Reserva, in entrambi i casi con un minimo di sei mesi in legno. Sono i tempi lunghi che hanno costruito la reputazione dei bianchi riojani, e che un'uva più esuberante non reggerebbe.It is in Rioja that Macabeo — Viura here — has built a tradition of its own. The vineyard spreads over the terraces of the Ebro up to around 700 metres, where Atlantic and Mediterranean climates meet and rainfall runs just over 400 millimetres a year: conditions that keep a measured, restrained grape in balance. The cellar does the rest. The current production code asks whites for eighteen months to carry the Crianza mention, at least six of them in 225-litre barrels; twenty-four months in total for Reserva and forty-eight for Gran Reserva, in both cases with a minimum of six months in wood. These are the long timescales that built the reputation of Rioja's whites, and that a more exuberant grape would not survive.

Il Macabeo giovane, vinificato in acciaio, sta bene su quasi tutto quello che viene dal mare: gamberi alla piastra, calamari, un riso ai frutti di mare. Con le verdure cotte e le zuppe di legumi funziona per la stessa ragione: accompagna senza coprire.Young Macabeo, vinified in steel, sits well with almost anything from the sea: grilled prawns, squid, a seafood rice. Its freshness makes you salivate and rinses the mouth after something fried — which is why Cava opens the Spanish table, from croquetas to fried fish, as we tell in our guide to the wines of tapas. With cooked vegetables and pulse soups it works for the same reason: it accompanies without covering.

In Italia il Macabeo è un arrivo recente. Il Registro Nazionale delle Varietà di Vite lo ha ammesso il 3 maggio 2023, con pubblicazione in Gazzetta Ufficiale il 20 maggio, e un mese e mezzo dopo ha iscritto i primi due cloni. Fino ad allora, di un'uva così diffusa poche centinaia di chilometri più a ovest, il catalogo italiano non aveva nessuna voce.In Italy, Macabeo is a recent arrival. The National Register of Vine Varieties admitted it on 3 May 2023, published in the Official Gazette on 20 May, and a month and a half later registered the first two clones. Until then, for a grape so widespread a few hundred kilometres to the west, the Italian catalogue had no entry at all.
Sull'origine ci sono due tracce diverse, che non si escludono. Il Consiglio regolatore della DO Cava la considera nata nel Penedès, a Vilafranca, e ne data la prima menzione scritta al 1617.
