Delle tre uve storiche del Cava è quella che porta la struttura. The Spanish Ministry of Agriculture counts 11,138 hectares of it, and 10,948 of those are in Catalonia: neither of its blending partners is so tied to a single region. The Cava PDO specification credits it with base wines of 10 to 12 degrees — the highest figure of the three — a total acidity of 6 to 6.5 grams per litre, and wines of «good structure and full bodied». But Xarel·lo no longer makes sparkling wine alone: in the Penedès and in Alella it also comes out still, from steel, from oak and from amphora.

The Spanish Ministry of Agriculture records 11,138 hectares as of 31 July 2023 under the entry «Xarello, Cartoixà, Pansal, Pansa Blanca», and 10,948 of those — 98% — are in Catalonia; outside it there remain 145 hectares in the Valencian Community, 37 in Extremadura and 8 in Aragón. The comparison with its blending partners says the rest: Parellada has just over four fifths of its hectares in Catalonia, Macabeo just over a fifth.

The Penedès PDO specification describes soils with five to ten per cent active limestone, from forty to more than a hundred and twenty centimetres deep — most of them between eighty and a hundred and twenty — loamy to silty-loam in texture, and generally well drained.

Oltre a Penedès e Alella la ammettono le DO Catalunya, Tarragona e Costers del Segre: sempre in Catalogna.On the coast north of Barcelona the same grape changes its name: in Alella it is called Pansa Blanca and it is, the Alella PDO specification writes, the appellation's predominant white variety, one of the two preferred grapes for its white wines. That document credits its wines with a particular soil — sauló, a granitic subsoil with marine remains that crumbles at the surface into small grains, very permeable, so much so that the vine has to root deep to find water — and identifies its signature in a bitter-citrus finish it compares to green almond. Beyond Penedès and Alella it is admitted by the Catalunya, Tarragona and Costers del Segre DOs: all in Catalonia.

On that ground the grape reaches full ripeness without giving up acidity, and the simplest reading is in the numbers: the Cava specification gives it the most alcoholic base wines of the three classic varieties and the same total acidity as Macabeo. That is why it stands up to very long lees ageing; and it is the same reason why, vinified still, it has the weight to carry oak and amphora.

Nel Cava la seconda fermentazione avviene in bottiglia e il disciplinare chiede almeno nove mesi a contatto con i lieviti; il Consejo Regulador ha portato a diciotto mesi il minimo della menzione Reserva, mentre per la Gran Reserva e il Cava de Paraje Calificado il disciplinare fissa a trenta e a trentasei mesi l'intero processo, dal tiraggio alla sboccatura. Lo Xarel·lo entra quasi sempre in taglio con Macabeo e Parellada — insieme, dice il disciplinare, valgono circa l'85 per cento delle uve della denominazione — e ci mette il corpo: è la parte che regge le soste lunghe, quando il tempo aggiunge crosta di pane e frutta secca. Alcune case del cuore del Penedès sono uscite dalla DO e imbottigliano lo stesso tipo di vino sotto Corpinnat, che è un marchio collettivo europeo e non una denominazione d'origine.In Cava the second fermentation takes place in the bottle and the specification asks for at least nine months in contact with the lees; the Regulatory Board has raised the minimum for the Reserva designation to eighteen months, while for Gran Reserva and Cava de Paraje Calificado the specification sets thirty and thirty-six months for the whole production process, from tirage to disgorgement. Xarel·lo almost always goes into the blend with Macabeo and Parellada — together, the specification says, they account for around 85 per cent of the appellation's grapes — and it supplies the body: it is the part that carries long ageing, when time adds bread crust and dried fruit. Some houses in the heart of the Penedès have left the DO and bottle the same kind of wine under Corpinnat, which is a European collective trademark and not a designation of origin.

It is the shape in which the grape reads unmediated, with its weight and its faintly bitter finish.

With bottles that have spent years on the lees you can aim higher: a seafood rice, baked fish, a roast chicken.
