Fried squid, croquettes, anchovies in oil, olives, salted almonds, a few slices of Iberian ham. What the glass needs is a wine that after five bites is still as fresh as at the first sip: dry, with lively acidity, no oak and not too much weight.

Cava is made by the traditional method, with its second fermentation in the bottle: its Consejo Regulador sets a minimum of eighteen months on the lees for the Reserva designation and thirty for Gran Reserva, and that long ageing gives it complexity and a fine bead. It is the acidity and the bubbles that clear the palate after fried food, while the dry tone is set by the dosage: with tapas you go for a Brut or a Brut Nature.
La seconda strada è quella di casa: la Manzanilla di Sanlúcar de Barrameda, da uve Palomino Fino affinate sotto un velo di lieviti, la flor, che il Consejo Regulador della denominazione indica come il segno della sua crianza biologica. It is dry, saline, slender in body. With fried food it is an exception among wines of 15% abv and above, which as a rule amplify the heat of the frying: Manzanilla sits at exactly 15, but it is lean and it is poured at 7-9 °C, and at that point the sums add up.
Paella: sotto lo stesso nome ci sono piatti diversiPaella: different dishes under one name
Chiamiamo paella tre cose che a tavola si comportano in modo diverso. Quella di mare, con gamberi, cozze e calamari, ha il riso saporito e la carne dei crostacei delicata. Quella valenciana è di terra: pollo, coniglio, fagioli larghi, un rametto di rosmarino. Quella mista mette insieme le due, e lo zafferano con il soffritto di pomodoro dà a tutte un fondo intenso ma non pesante.We use the word paella for three things that behave very differently at the table. The seafood one, with prawns, mussels and squid, has savoury rice and delicate shellfish. The Valencian one comes from the land: chicken, rabbit, flat beans, a sprig of rosemary. The mixed one puts the two together, and saffron with the tomato sofrito gives all of them a base that is intense but not heavy.
Sul riso di mare il bianco atlantico è la scelta più naturale. Albariño from Rías Baixas, an appellation recognised in 1988 and divided into five subzones along the Galician rías, has the acidity and the salinity to sit beside the rice without covering it. A Verdejo from Rueda, more citrussy and more direct, does the same job for less money.
Sulla paella valenciana, dove ci sono carni bianche e un fondo di verdure, un rosato secco è la risposta più semplice: ha frutto e freschezza, e non porta tannino su un piatto che non lo chiede. In alternativa un rosso leggero e poco tannico, una Mencía galiziana per esempio, servito fresco e non a temperatura di stanza. Sulla mista il rosato resta il compromesso migliore per tutta la tavola.With Valencian paella, where there is white meat and a base of vegetables, a dry rosé is the simplest answer: it has fruit and freshness, and it brings no tannin to a dish that does not ask for it. Otherwise a light, low-tannin red, a Galician Mencía for instance, served cool rather than at room temperature. With the mixed version, rosé remains the best compromise for the whole table.
Gazpacho, salmorejo e il problema dell'acetoGazpacho, salmorejo and the vinegar problem
Il gazpacho è una zuppa fredda di pomodoro, cetriolo, peperone, aglio, pane, olio, sale e aceto, spesso aceto di Jerez, che il suo Consejo Regulador indica come alleato delle zuppe fredde come il gazpacho e l'ajoblanco. The vinegar is the difficult part: next to a very sharp dish a wine loses its own acidity and tastes dulled.

Se però il gazpacho è molto acido conviene essere onesti: nessuna bottiglia lo migliora davvero, e tenere il vino per il piatto dopo non è una rinuncia. Il salmorejo, più denso, con più pane e più olio e meno aceto, è un'altra faccenda: lì un bianco fresco o una bollicina secca stanno benissimo.If the gazpacho is very sharp, though, it is worth being honest: no bottle really improves it, and keeping the wine for the next course is not a sacrifice. Salmorejo, thicker, with more bread and more oil and less vinegar, is another matter: there a fresh white or a dry sparkling wine works very well.

Un rosato secco per la carne e per le verdure alla brace.If it is a real table, with tapas arriving when they arrive, a rice dish in the middle and something cold to begin with, three bottles are enough. A dry sparkling wine to open and to go with everything fried. An Atlantic white for the seafood rice. A dry rosé for meat and for vegetables off the grill.
La temperatura conta più che in inverno, perché all'aperto il vino si scalda in fretta: bollicine di metodo classico 8-10 °C, bianchi freschi 8-10 °C, rosati 10-12 °C, rossi leggeri 12-14 °C, e la Manzanilla più fredda di tutti, 7-9 °C. Versa poco per volta e tieni la bottiglia in fresco fra un giro e l'altro: è la differenza fra un vino che accompagna il pasto fino in fondo e uno che si spegne a metà.Temperature matters more than in winter, because outdoors a wine warms up quickly: traditional-method sparkling wines at 8-10 °C, fresh whites at 8-10 °C, rosés at 10-12 °C, light reds at 12-14 °C, and Manzanilla coldest of all, at 7-9 °C. Pour a little at a time and keep the bottle cool between rounds: that is the difference between a wine that stays with the meal to the end and one that fades halfway.
