The Ministry of Agriculture counts 9,351 hectares as of 31 July 2023, 7,585 of them in Catalonia: just over four fifths of the total. The rest is scattered and marginal — 1,040 hectares in Extremadura, 671 in Castilla-La Mancha, a few dozen across the Balearics, Madrid, the Valencian Community and Aragón. The comparison with its blending partners says almost everything: in Catalonia alone Macabeo stands at 12,100 hectares and Xarel·lo at 10,948, so of Cava's three classic grapes Parellada is the least planted even on home ground.

The DO Cava product specification describes mainly calcareous soils, slightly sandy and with moderate clay, low in organic matter and not very fertile, around 500 millimetres of rain and some 2,500 hours of sunshine a year; and it calls Parellada especially well suited to high-lying areas, the same ones the Regulatory Board points to as the most elevated parts of the Penedès. Further west, in Conca de Barberà, the specification records between 450 and 550 millimetres of rain and an annual mean of 13 to 14 degrees, with cold winters, summers that never get too hot and a wide gap between day and night: conditions that, the same document says, give light whites with a fine fruity aroma and moderate alcohol. Outside Catalonia it exists, but as a bit part: the hectares in Extremadura and Castilla-La Mancha serve other wine economies, and no appellation in those regions names it among its benchmark grapes.

The product specification lists it among the five permitted white grapes, alongside Macabeo, Xarel·lo, Malvasía and Chardonnay, and the Regulatory Board names it the third variety by area within the appellation; together with Macabeo and Xarel·lo it accounts for roughly 85% of the grapes that go into Catalan sparkling wine. The document is precise about its contribution too: base wines between 9.5 and 10.5% vol, total acidity of 5 to 5.5 grams per litre, fine light floral aromas, and a variety especially well suited to high-lying areas. In the Alt Penedès, where the vineyards climb and the nights stay cool, that adaptation is what counts: Parellada does not add weight to the blend, it adds room to breathe.

Sulle bottiglie con anni di sosta sui lieviti si può alzare l'asticella: un riso ai frutti di mare, un pesce al forno, un pollo arrosto.Parellada usually reaches the table inside a sparkling wine, and there it does its job with starters and fried dishes: croquetas, squid, grilled prawns, a board of fresh cheeses. With bottles that have spent years on the lees you can aim higher: a seafood risotto, baked fish, a roast chicken.

Le due uve che da sempre si dividono il taglio del Cava sono quindi sorellastre: hanno un genitore in comune e sono arrivate alla stessa bottiglia per strade diverse.The international grapevine variety register gives Parellada as a child of Heben, with the second parent still unknown; and it traces Macabeo back to Heben as well, born of a cross with Brustiano Faux. The two grapes that have always shared the Cava blend are therefore half-siblings: they have one parent in common and reached the same bottle by different routes.
