La Vernaccia è documentata a San Gimignano da settecentocinquant'anni tondi: negli Ordinamenti delle Gabelle del Comune, nel 1276, si legge di una tassa di tre soldi per ogni soma di Vernaccia venduta fuori dal territorio comunale — segno che il vino usciva già dalle mura ed era abbastanza noto da valere un'imposta. Poco dopo la cita Dante, che nel ventiquattresimo canto del Purgatorio mette papa Martino IV a scontare la gola per «le anguille di Bolsena e la Vernaccia».Vernaccia has been documented in San Gimignano for a round seven hundred and fifty years: the town's tax ordinances of 1276 record a levy of three soldi on every load of Vernaccia sold beyond the municipal boundary — a sign that the wine was already leaving the walls, and was well enough known to be worth taxing. Soon afterwards Dante mentions it, placing Pope Martin IV in the twenty-fourth canto of Purgatory to atone for his gluttony over 'the eels of Bolsena and the Vernaccia'.

Dopo la fortuna medievale e rinascimentale la Vernaccia scivola in un lungo declino, e riemerge solo nel secondo dopoguerra, quando i viticoltori di San Gimignano tornano a puntarci. L'esito arriva nel 1966: è il primo vino italiano a fregiarsi della denominazione di origine controllata. La DOCG seguirà nel 1993.Sources disagree on where the name comes from, and the production code says as much: some trace it to Vernazza, in Liguria, others to the Latin vernaculum, meaning 'local'. The second reading would explain why the same name turns up on entirely different grapes, such as Vernaccia di Oristano or Vernaccia di Serrapetrona: separate varieties, not relatives of this one. After its medieval and Renaissance fortune, Vernaccia slid into a long decline, and re-emerged only after the Second World War, when the growers of San Gimignano went back to it. The result came in 1966: it was the first Italian wine to carry the controlled designation of origin. DOCG status followed in 1993.

The soils are of Pliocene origin — millions of years ago the sea was here — and the production code describes them as yellow sands and yellow and grey clays, with a good share of stony fragments. It is to that combination of sand, clay and stone that the document credits the savouriness, the freshness and the ageing capacity shared by the Vernaccias. The climate is sub-Mediterranean, with fairly dry summers, around seven hundred millimetres of rain a year and good ventilation in every season.

Due prescrizioni curiose completano il quadro, e si vedono a scaffale. La prima: il disciplinare vieta di aggiungere in etichetta qualsiasi qualificazione che non sia prevista, «superiore» e «scelto» compresi — per questo accanto al nome si trova al massimo la menzione «riserva», e nient'altro. La seconda: la bottiglia deve essere di vetro e di forma bordolese. Anche la sagoma, insomma, è scritta nella norma.Two curious rules complete the picture, and you can spot them on the shelf. The first: the production code forbids adding any qualifier to the label that it does not itself provide for, 'superiore' and 'scelto' included — which is why the most you will find beside the name is the word 'riserva', and nothing else. The second: the bottle must be glass, and Bordeaux-shaped. Even the silhouette, in short, is written into the rules.

Aprila fredda su un fritto o su un piatto di mare; se ti capita una riserva, mettiti a tavola e dalle tempo.Vernaccia di San Gimignano is a white you drink with pleasure in summer and which, in its more ambitious versions, can wait a few years in the cellar. It has the freshness and the savouriness you ask of a Tuscan white, and on top of that the almond finish that makes it recognisable.
