Some vineyards you reach on foot, others by monorail. In the Cinque Terre they all sit on strips of land a few metres wide, held up by dry-stone walls, between sea level and six hundred metres of altitude. Cinque Terre DOC is the dry white born there: Bosco, Albarola and Vermentino, a pale colour, measured acidity and a savoury quality that stretches the finish. The same appellation also covers Sciacchetrà, the passito made from the best grapes left to dry.

The appellation lies in the eastern part of Liguria, in the province of La Spezia: the whole municipalities of Riomaggiore, Vernazza and Monterosso, plus two strips of the municipality of La Spezia known as Tramonti di Biassa and Tramonti di Campiglia. The production rules describe shallow soils, coarse in texture, rich in stones and therefore very free-draining, resting on marine sediment substrates known as turbidites. The rest is in the numbers: slopes between 35 and 50 per cent, a prevailing south-west aspect, the sea less than two kilometres away and vines between the shoreline and six hundred metres, most of them between fifty and five hundred. This is a terroir measured in vertical drop before it is measured in hectares, and it belongs to the coastal winegrowing we wrote about in our guide to the terroir of the sea.
The three main grapes are Bosco, Albarola and white Vermentino: alone or together they must account for at least eighty per cent of the vineyard, and the rest may come from other white varieties permitted in Liguria. They have not always been here. The rules note that they were introduced at the beginning of the last century and that before then the characteristic grapes of the area were Piccabun and white Rossese. The proportions vary a great deal from one cellar to the next, and you can taste it: the cooperative at Groppo keeps Bosco at half and splits the rest equally between Vermentino and Albarola; one estate in Vernazza instead takes Vermentino to sixty; another in Riomaggiore pushes Bosco to eighty. Three different readings of the same appellation.
The recent history can be read in four dates. In 1920 phylloxera destroyed the vineyards of the area; by the early 1930s the terraces were largely abandoned, and the rebuilding was done with American rootstock grafted with the varieties found in the area or brought in from other wine regions. In 1973 the cooperative cellar at Groppo and the appellation were born together: the decree of 29 May recognised Cinque Terre and Cinque Terre Sciacchetrà. In 1999 came the Cinque Terre National Park, whose aims include protecting the terraces and the dry-stone walls that hold them up. The rules in force today are those consolidated by the ministerial decree of 6 August 2021, and they put on record the thing that matters most: given the gradients and the terracing, here the main vineyard operations are carried out entirely by hand.
Il nome, annota il disciplinare, è attestato soltanto verso la fine dell'Ottocento: prima quel vino si chiamava «rinforzato».Sciacchetrà is the other half of the appellation. The best grapes are laid out to dry in dry, well-ventilated places until they reach a minimum natural strength of 19 per cent; the yield collapses to thirty-two litres of wine per hundred kilos of grapes, and the bottle cannot be sold before 1 October of the year after the harvest — the Riserva waits until the third. The name, the rules note, is documented only towards the end of the nineteenth century: before that, this wine was called 'rinforzato' — the strengthened one, after the drying.
A tavolaAt the table
This is the white of Ligurian seafood cooking, and not out of local pride: savoury, light in body and with a faintly bitter finish, it works with almost everything that comes off the rocks. We have devoted separate guides to the Ligurian summer table and to fried seafood; here four dishes are enough.
Fried anchovies from Monterosso — Fried food is rich and needs a wine to lighten each mouthful: here freshness and above all savouriness do the job, echoing the salty taste of the fish and lingering long on the palate.
Trofie with pesto — Pesto is thick with oil and cheese and carries the scent of basil: the wine has scrub-herb notes that echo it, freshness lightens the dish and savouriness stretches the finish.
Stuffed mussels, La Spezia style — Bread-and-herb stuffing, braised, delicate in flavour: a light-bodied wine stays on the same register without covering the mussels, and its mineral streak follows the cooking juices.
Genoese pandolce, with Sciacchetrà — Here you change bottle, because a dessert calls for a sweet wine: the appellation's passito, with its dried-fruit tones and almondy finish, is the local choice.
A white you understand by looking at where it is born: strips of land a few metres wide, dry-stone walls, the sea below. In the glass it is measured — pale, light in body, long and savoury — and it should be drunk young, with a seafood dish. The three sub-zones and the small growers' selections add a further degree of precision; Sciacchetrà is another matter, one to keep for a festive table.
The profile described here is the characteristic, recurring one of the appellation, not a tasting of a single vintage: the three sub-zones, the growers' selections and Sciacchetrà each have their own character.
