Il Bosco è l'uva bianca delle Cinque Terre: cresce sulle fasce sostenute dai muri a secco, fra il mare e i seicento metri, e il Registro Nazionale delle varietà di vite lo ammette soltanto in denominazioni della Liguria. Dà bianchi di colore tenue, misurati, con un finale saporito; e siccome ha buccia spessa e grappolo spargolo, è l'uva che regge l'appassimento da cui nasce lo Sciacchetrà.Bosco is the white grape of the Cinque Terre: it grows on the strips of land held up by dry-stone walls, between the sea and six hundred metres, and Italy's national vine register admits it only in appellations of Liguria. It gives pale, measured whites with a savoury finish; and because its skins are thick and its bunches loose, it is the grape that stands up to the drying process behind Sciacchetrà.

Il Registro Nazionale delle varietà di vite lo ammette in due denominazioni di origine controllata — Cinque Terre e Cinque Terre Sciacchetrà, e Colline di Levanto — e in tre indicazioni geografiche tipiche: Colline del Genovesato, Colline Savonesi e Liguria di Levante. Italy's national vine register admits it in two controlled appellations — Cinque Terre and Cinque Terre Sciacchetrà, and Colline di Levanto — and in three typical geographical indications: Colline del Genovesato, Colline Savonesi and Liguria di Levante. Not one of them lies outside Liguria.

Il cuore è la costa in provincia della Spezia. The rules describe small terraced vineyards on shallow soils, full of stones and therefore very free-draining, sitting on marine sediments that geologists call turbidites; altitude runs from sea level to six hundred metres, slopes fall between 35 and 50 per cent and the sea is never more than two kilometres away. On those slopes, the same text notes, the main vineyard operations are carried out entirely by hand.

The rules in force, consolidated by the ministerial decree of 6 August 2021, no longer set a minimum reserved for Bosco alone, as the previous version did: they ask that the three grapes, alone or together, account for at least eighty per cent of the vineyard.

Perché proprio il Bosco, su terrazze così scomode? La scheda ampelografica del Registro, redatta a metà degli anni Sessanta, lo dice senza giri di parole: vigoria notevole, produzione abbondante e costante, e un adattamento agli ambienti meno favorevoli che gli è sempre stato riconosciuto. Nelle Cinque Terre lo si alleva ancora sulle pergole basse tradizionali, col tetto a quaranta-cinquanta centimetri da terra.Why Bosco, on terraces as awkward as these? The register's ampelographic sheet, written in the mid-1960s, puts it plainly: marked vigour, abundant and steady yields, and a knack for difficult sites that has always been credited to it. In the Cinque Terre it is still trained on the traditional low pergolas, their canopy forty to fifty centimetres off the ground.

Vinificazione e maturazione in acciaio, con qualche mese sulle fecce fini nelle versioni più curate. Il disciplinare fissa il titolo alcolometrico totale minimo all'11% vol, che sale all'11,5% nelle tre sottozone Costa de Sera, Costa de Campu e Costa da Posa.Fermented and matured in steel, with a few months on the fine lees in the more carefully made versions. The rules set a minimum total alcohol of 11% abv, rising to 11.5% in the three subzones of Costa de Sera, Costa de Campu and Costa da Posa.

Le uve migliori si mettono ad appassire in ambienti asciutti e ventilati. Il disciplinare chiede una gradazione totale minima del 19% vol, di cui almeno 11,5 effettivi, e del 20% per la Riserva; descrive un colore dal giallo dorato all'ambrato tendente al bruno e un sapore dolce, talvolta tannico, con retrogusto ammandorlato. La scheda del Registro spiega perché tocchi al Bosco: la sua resistenza al marciume dell'uva è più che normale.The best grapes are laid out to dry in dry, well-aired rooms. The rules require a minimum total alcohol of 19% abv, of which at least 11.5 actual, and 20% for the Riserva; they describe a colour running from golden yellow to brownish amber and a taste that is sweet, at times tannic, with an almond aftertaste. Fuori dalle Cinque Terre il Bosco fa il comprimario. Nel Colline di Levanto bianco il disciplinare chiede almeno il 40% di Vermentino, il 20% di Albarola e il 5% di Bosco. Nelle tre indicazioni geografiche che lo ammettono resta una delle varietà bianche a disposizione dei produttori.Outside the Cinque Terre, Bosco plays a supporting part. For Colline di Levanto bianco the rules call for at least 40% Vermentino, 20% Albarola and 5% Bosco. Il bianco secco si serve fresco, fra gli 8 e i 10 °C, lo scaglione dei bianchi leggeri; le versioni più piene, affinate qualche mese sulle fecce, stanno meglio fra i 10 e i 14 °C. Lo Sciacchetrà è un passito e sta in un'altra classe: fra gli 8 e i 12 °C, verso il limite alto perché è intenso. Prima di chiamarsi Sciacchetrà, il passito delle Cinque Terre si chiamava «rinforzato». Il disciplinare mette a verbale che il nome con cui oggi lo conoscono tutti è attestato soltanto verso la fine dell'Ottocento, e che fra i primi a usarlo pare ci sia stato il pittore macchiaiolo Telemaco Signorini: nelle sue memorie di Riomaggiore ricorda che in settembre, dopo la vendemmia, si stendevano al sole le uve migliori. La scheda del Registro, scritta a metà degli anni Sessanta, usa ancora tutte e due le parole.Before it was called Sciacchetrà, the sweet wine of the Cinque Terre was known as «rinforzato», the reinforced one. The rules record that the name everyone uses today is only attested towards the end of the nineteenth century, and that one of the first to use it seems to have been the Macchiaioli painter Telemaco Signorini: in his memoir of Riomaggiore he recalls that in September, after the harvest, the best grapes were laid out in the sun.
