Prima un tagliere di formaggi giovani — asiago, montasio, pecorino di Matelica — con le confetture di fichi e di peperoni, la cipolla caramellata, la mortadella con il pistacchio a cubetti e i cracker di mais. Poi il forno, e via col giro pizza: calzone al pomodoro con mozzarella e prosciutto cotto, calzone fritto, salsiccia e friarielli, provola, quattro formaggi, bianca, capricciosa e la piccante alla calabrese. Sono due momenti molto diversi, ma il problema che pongono al bicchiere è lo stesso: qualcosa di ricco che torna a ogni boccone e, all'inizio, quel dolce delle confetture, che al vino chiede qualcosa di più di una semplice acidità. Ecco come abbiamo ragionato, portata per portata.First a board of young cheeses — asiago, montasio, pecorino from Matelica — with fig and pepper jams, caramelised onion, mortadella studded with pistachio and corn crackers. Then the oven, and the pizza night begins: tomato calzone with mozzarella and cooked ham, fried calzone, sausage and friarielli, provola, four cheeses, bianca, capricciosa and the spicy Calabrian one. Two very different moments, but they ask the glass the same question: something rich comes back with every bite and, at the start, that sweetness in the jams asks the wine for more than acidity alone. Here is how we reasoned, course by course.

Il menù ha due tempi. Nel primo comandano il grasso dei formaggi giovani e della mortadella e il dolce delle confetture: asiago e montasio sono morbidi e lattiginosi, il pecorino di Matelica porta più sapore, e fichi, peperoni e cipolla caramellata aggiungono una nota zuccherina che accanto a un vino secco e sottile suona stonata. Nel secondo tempo arriva il forno e cambia tutto: mozzarella filante, pomodoro, fritto, salsiccia, provola affumicata, il fondo amaro dei friarielli e il peperoncino della calabrese.The menu has two acts. In the first, what leads is the richness of the young cheeses and the mortadella, plus the sweetness of the jams: asiago and montasio are soft and milky, pecorino from Matelica brings more flavour, and figs, peppers and caramelised onion add a sugary note that sounds off-key next to a dry, slender wine. In the second act the oven takes over and everything changes: stringy mozzarella, tomato, frying, sausage, smoked provola, the bitter edge of friarielli and the chilli of the Calabrian pizza.

Le leve utili sono tre. La prima è l'effervescenza: bollicine e acidità ripuliscono la bocca fra un boccone e l'altro, e servono tanto sul tagliere quanto su otto pizze di fila. La seconda è l'alcol contenuto, e conta soprattutto dove il piatto scalda: la piccante alla calabrese e il calore del forno accendono già di loro la sensazione di caldo, e un vino robusto la moltiplica invece di calmarla — lì, sotto i 12 gradi in etichetta si sta molto più tranquilli, ed è la ragione per cui su quella pizza va il Gragnano da 11% vol. Sul resto della tavola il vincolo si allenta: sul tagliere il piccante non c'è, e una bollicina da 12,5% vol come il Trentodoc lavora di effervescenza e di acidità, non di calore. La terza leva vale solo per l'antipasto: contro una cucchiaiata di confettura serve un vino che abbia lui stesso un filo di zucchero, altrimenti sembra svuotarsi.Three levers are useful here. The first is fizz: bubbles and acidity rinse the mouth between bites, and that matters as much on a cheese board as it does over eight pizzas in a row. The second is moderate alcohol, and it counts above all where the dish brings heat: the spicy Calabrian pizza and the heat of the oven already stoke the sensation of warmth, and a robust wine multiplies it rather than calming it — there, under 12 degrees on the label makes life far easier, which is why that pizza gets the 11% abv Gragnano. Across the rest of the table the constraint loosens: there is no chilli on the cheese board, and a 12.5% abv sparkling wine such as the Trentodoc works through fizz and acidity, not through warmth. The third lever applies only to the antipasto: against a spoonful of jam you need a wine that carries a thread of sugar itself, otherwise it seems to empty out.

Antipasto — formaggi, confetture, mortadella. Tre strade, e converrebbe averle tutte e tre in tavola perché coprono gusti diversi. Le bollicine: Ferrari — Ferrari Brut, Trentodoc metodo classico da uve Chardonnay, 12,5% vol: il modo più lineare per rimettere a posto la bocca dopo il montasio e la mortadella. Il bianco: Dr. Loosen — Erdener Treppchen Riesling Kabinett, dalla Mosella, leggero d'alcol e con una dolcezza residua dichiarata — è la risposta più convincente alle confetture di fichi e alla cipolla caramellata, perché le incontra invece di lasciarle sole. Il rosso frizzante: Paltrinieri — Radice, un Lambrusco di Sorbara rifermentato in bottiglia, secco e da 11% vol: con la mortadella è un'abitudine emiliana che nessuno ha mai avuto motivo di correggere.Antipasto — cheeses, jams, mortadella. Three routes, and it is worth having all three on the table, because they suit different tastes. The sparkling one: Ferrari — Ferrari Brut, Trentodoc traditional method from Chardonnay grapes, 12.5% abv: the most straightforward way to reset the palate after montasio and mortadella. The white: Dr. Loosen — Erdener Treppchen Riesling Kabinett, from the Mosel, low in alcohol and with a declared residual sweetness — the most convincing answer to fig jam and caramelised onion, because it meets them instead of leaving them on their own. The fizzy red: Paltrinieri — Radice, a Lambrusco di Sorbara refermented in the bottle, dry and 11% abv: with mortadella it is an Emilian habit nobody has ever had reason to correct.

Cantine Federiciane Monteleone — Gragnano è il rosso frizzante da 11% vol: bolla e acidità ripuliscono dalla mozzarella e dal fritto, e l'alcol basso non accende il peperoncino della calabrese. Fontanavecchia — BjondoRe è la Falanghina del Sannio, affinata solo in acciaio: fresca e saporita, va sulla bianca, sulla quattro formaggi e sulla provola affumicata. La Sibilla — Piedirosso Campi Flegrei è il rosso fermo di poco tannino: sottile, fresco, giusto sulla salsiccia con i friarielli e sul calzone al forno, dove serve un vino che non copra.Main — the pizza night. Fontanavecchia — BjondoRe is the Falanghina del Sannio, aged in steel alone: fresh and savoury, it goes on the bianca, the four-cheese and the smoked provola. La Sibilla — Piedirosso Campi Flegrei is the still red with little tannin: slender, fresh, right on sausage with friarielli and on the baked calzone, where you want a wine that does not cover things up.

Il jolly. Se preferite stappare una bottiglia sola e non pensarci più, Belisario — Valbona: un Verdicchio di Matelica che ha in casa il pecorino del tagliere e che, con la sua freschezza, sta bene anche sul giro delle pizze. Non fa i miracoli sulle confetture — per quelle resta il Riesling — ma dall'inizio alla fine accompagna tutto senza scomparire.The all-rounder. If you would rather open one bottle and stop thinking about it, Belisario — Valbona: a Verdicchio di Matelica that shares a home with the pecorino on the board and that, with its freshness, also sits well on the pizzas. It works no miracles on the jams — for those the Riesling stays — but from start to finish it accompanies everything without disappearing.
