In Naples they call it Per'e Palummo, "dove's foot", for the red that stains the stems as the grapes ripen.

È un'uva legata ai suoli vulcanici, sabbiosi e ben drenati. Sulle sabbie dei Campi Flegrei e del Vesuvio molte vigne crescono ancora a piede franco, cioè non innestate: la fillossera non riesce a muoversi nel terreno sabbioso e le viti vivono su radici proprie, alcune molto vecchie. La brezza del mare porta freschezza e quella nota salina che si ritrova nel bicchiere; il Piedirosso matura piuttosto tardi e chiede sole per ammorbidire i suoi tannini.It is a grape tied to volcanic, sandy, well-drained soils. On the sands of the Campi Flegrei and Vesuvius many vines still grow ungrafted, on their own roots: phylloxera cannot move through the sandy ground, and the vines live on their own roots, some of them very old. The sea breeze brings freshness and that saline note you find in the glass; Piedirosso ripens fairly late and needs sun to soften its tannins.

Its freshness and gentle tannin make it perfect with pizza margherita and spaghetti with tomato, where it is the wine's acidity that keeps pace with the tomato. It sits well with aubergine parmigiana, sausage with friarielli greens, Sunday ragù and roast white meats. The more saline, mineral versions from the Campi Flegrei can also partner rockfish, seafood soups and octopus, where few reds do as well.
