Costine di maiale, salsicce con jalapeño e formaggio, salsicce di manzo e una fiorentina: sul tagliere ci sono quattro cose diverse, e un vino solo non le tiene tutte. La bistecca al sangue chiede tannino e struttura; il maiale alla brace, grasso e affumicato, chiede acidità ed effervescenza; il peperoncino ribalta le regole e vuole grado contenuto, poco tannino e un filo di zucchero. La brace fa due cose al vino: lascia sulla carne una nota affumicata e leggermente amarognola, e scioglie il grasso. Il grasso del maiale e quello della salsiccia restano in bocca e vanno puliti, e a pulirli sono l'acidità viva e — meglio ancora — l'effervescenza. È il motivo per cui in Emilia il maiale alla griglia si beve con un Lambrusco secco e non con un rosso pesante.The grill does two things to the wine: it leaves a smoky, faintly bitter edge on the meat, and it melts the fat. The fat of the pork and of the sausages lingers in the mouth and has to be cleaned up, and what cleans it up is lively acidity and — better still — bubbles. That is why in Emilia they drink a dry Lambrusco with grilled pork rather than a heavy red.

La fiorentina è un'altra storia. È una carne al sangue, alta, con un fondo di succo e una crosta di griglia: chiede un rosso di corpo, perché il tannino trova qualcosa a cui aggrapparsi e l'alcol regge la sostanza del piatto. Qui il Sangiovese toscano è la risposta di casa, e non per campanilismo: la sua acidità rimette in ordine la bocca fra un boccone e l'altro, cosa che un rosso morbido e caldo non fa.The Florentine steak is another matter. It is thick, rare, with meat juices and a seared crust: it calls for a full-bodied red, because the tannin finds something to hold on to and the alcohol carries the weight of the dish. Here Tuscan Sangiovese is the answer closest to home, and not out of local pride: its acidity resets the palate between one bite and the next, which a soft, warm red does not do.

Chilli is not a flavour, it is heat, and the alcohol in wine fuels it rather than putting it out. That bite asks for the exact opposite of the steak, which is why a board like this one needs at least two open bottles.

Piatto per piattoDish by dish

Costine di maiale. Sono grasse, laccate e affumicate, e la carne si stacca dall'osso. Il vino che le pulisce meglio ha acidità alta e tannino leggero: un Lambrusco di Sorbara metodo classico, secco, è la scelta più diretta. Se preferisci un vino fermo, un Syrah del Rodano settentrionale risponde alla brace con pepe nero e una nota affumicata, senza il peso di un rosso caldo.Pork ribs. Fatty, glazed and smoky, with the meat coming off the bone. The wine that cleans them up best has high acidity and light tannin: a dry traditional-method Lambrusco di Sorbara is the most direct choice. If you would rather have a still wine, a northern Rhône Syrah answers the char with black pepper and a smoky note, without the weight of a hot-climate red.

Salsicce di manzo. Più asciutte e più saporite di quelle di maiale, con la crosta della griglia a dare amaro buono. Reggono un rosso di media struttura servito fresco, oppure la stessa bollicina rossa delle costine: l'effervescenza alza il sorso e prepara il boccone successivo. Anche un rosato di corpo, qui, fa un ottimo lavoro.Beef sausages. Drier and more savoury than the pork ones, with the good bitterness of the seared crust. They take a medium-bodied red served cool, or the same red sparkler as the ribs: the bubbles lift the mouthful and set you up for the next one. A medium-bodied rosé also does a fine job here.

Salsicce con jalapeño e formaggio. Il formaggio fuso aggiunge grasso, il peperoncino aggiunge calore: due cose che chiedono strade opposte, e la seconda comanda. Serve un vino sotto i 13% vol, con un residuo zuccherino o almeno molto fruttato, e con pochissimo tannino: un Riesling della Mosella in versione Kabinett, un rosato di Montepulciano o una Schiava altoatesina servita fresca.Sausages with jalapeño and cheese. The melted cheese adds fat, the chilli adds heat: two things that pull in opposite directions, and the second one wins. You need a wine under 13% vol, with residual sugar or at least plenty of fruit, and with very little tannin: a Mosel Riesling in its Kabinett version, a Montepulciano rosé or a South Tyrolean Schiava served cool.

Fiorentina. Al sangue, alta, senza salsa. È l'unico pezzo del tagliere che chiede un rosso importante, e il Chianti Classico — soprattutto nelle tipologie Riserva e Gran Selezione — fa esattamente il lavoro: tannino saldo sulla carne, acidità che pulisce il grasso del filetto e del controfiletto.Florentine steak. Rare, thick, served plain. It is the only item on the board that calls for a serious red, and Chianti Classico — a Riserva or a Gran Selezione above all — does exactly that job: firm tannin against the meat, acidity that clears the fat of the fillet and the sirloin.

Il peperoncino cambia le regoleThe chilli changes the rules

Vale la pena spiegare perché, perché non è una questione di gusto. La capsaicina — la molecola del peperoncino — non tocca i recettori del gusto: accende il recettore vanilloide VR1, quello che segnala calore e dolore. Lo studio di Trevisani e colleghi pubblicato su Nature Neuroscience nel 2002 ha mostrato che anche l'etanolo attiva quello stesso recettore e ne potenzia la risposta alla capsaicina. In parole povere: più alcol c'è nel bicchiere, più il jalapeño brucia.It is worth explaining why, because this is not a matter of taste. Capsaicin — the chilli molecule — does not touch the taste receptors: it switches on the vanilloid receptor VR1, the one that signals heat and pain. The study by Trevisani and colleagues published in Nature Neuroscience in 2002 showed that ethanol activates that same receptor and heightens its response to capsaicin. In plain terms: the more alcohol there is in the glass, the more the jalapeño burns.

Da qui le tre regole per quel boccone. Grado contenuto, sotto i 13% vol e volentieri più giù. Un residuo zuccherino, o in alternativa un frutto abbondante e maturo, che copra il calore. Tannino minimo, perché il tannino asciuga e su un boccone piccante asciugare è l'ultima cosa che serve. Aggiungi il servizio fresco e la salsiccia diventa facile.Hence the three rules for that mouthful. Modest alcohol, under 13% vol and gladly lower. Some residual sugar, or failing that plenty of ripe fruit to cover the heat. Minimal tannin, because tannin dries the mouth and drying is the last thing a spicy bite needs. Add a cool serving temperature and the sausage becomes easy.

La conseguenza pratica è netta: il rosso che apri per la fiorentina, su quella salsiccia, è la scelta peggiore del tagliere. Meglio tenere due calici, o almeno versare il rosso importante solo quando arriva la bistecca.The practical consequence is clear: the red you open for the steak is, on that sausage, the worst choice on the board. Better to keep two glasses going, or at least to pour the serious red only when the steak arrives.

Le tolleranze al peperoncino variano molto da persona a persona: se la salsiccia al jalapeño brucia poco, funziona anche il rosato; se brucia davvero, resta il bianco con il residuo zuccherino. E su un tagliere così le bottiglie si aprono insieme: nessuno dei vini qui sopra copre da solo tutte e quattro le cotture.Tolerance to chilli heat varies a great deal from person to person: if the jalapeño sausage barely burns, the rosé works too; if it really burns, stay with the white that has residual sugar. And on a board like this the bottles are opened together: none of the wines above covers all four grilled items on its own.
