I confini del Chianti Classico non li ha disegnati il mercato. Li fissò nel 1716 un bando del granduca Cosimo III de' Medici, che stabilì quale vino potesse chiamarsi Chianti e affidò a una congregazione la vigilanza su produzione e commercio: già allora c'era chi lo contraffaceva, soprattutto per l'esportazione in Inghilterra. Quel perimetro — «dallo Spedaluzzo fino a Greve; di lì a Panzano, con tutta la Podesteria di Radda» — è in sostanza la zona di oggi: settantamila ettari a cavallo delle province di Firenze e Siena, che comprendono per intero i comuni di Castellina, Gaiole, Greve e Radda in Chianti, e in parte quelli di Barberino Tavarnelle, Castelnuovo Berardenga, Poggibonsi e San Casciano in Val di Pesa.The boundaries of Chianti Classico were not drawn by the market. They were set in 1716 by an edict of Grand Duke Cosimo III de' Medici, which established which wine could be called Chianti and put a board in charge of watching over production and trade: even then the name was being faked, above all for export to England. That perimeter — «from Spedaluzzo as far as Greve; from there to Panzano, with the whole Podesteria of Radda» — is essentially today's area: seventy thousand hectares straddling the provinces of Florence and Siena, taking in the whole of the townships of Castellina, Gaiole, Greve and Radda in Chianti, and part of Barberino Tavarnelle, Castelnuovo Berardenga, Poggibonsi and San Casciano in Val di Pesa.
Il disciplinare ammette solo vigneti di collina, fino a settecento metri, e vieta l'allevamento a tendone; chiede almeno 4.400 ceppi per ettaro e non più di 7,5 tonnellate d'uva per ettaro, con un tetto di due chili per ceppo. Sono numeri che raccontano una scelta: poca uva per pianta, su pendenze «non prolungate ma talvolta ripide», in terreni poco profondi e poveri di sostanza organica. Il clima è continentale, sotto i quattro-cinque gradi d'inverno e non di rado oltre i trentacinque d'estate, con otto-novecento millimetri di pioggia concentrati fra tardo autunno e primavera.The production rules allow hillside vineyards only, up to seven hundred metres, and ban the overhead tendone trellis; they call for at least 4,400 vines per hectare and no more than 7.5 tonnes of grapes per hectare, with a ceiling of two kilos per vine. Those figures spell out a choice: little fruit per plant, on slopes «not long but at times steep», in shallow soils with little organic matter. The climate is continental, below four or five degrees in winter and not rarely above thirty-five in summer, with eight to nine hundred millimetres of rain falling mostly in late autumn and spring.

Annata, Riserva, Gran SelezioneAnnata, Riserva, Gran Selezione
Il Chianti Classico è Sangiovese: minimo l'80% per l'Annata e per la Riserva, con un massimo del 20% di altre uve a bacca rossa autorizzate. Dal 1996 il disciplinare ammette anche la purezza, e dalla vendemmia 2006 le uve bianche — la Malvasia che stava nella ricetta divulgata nell'Ottocento dal barone Bettino Ricasoli — sono fuori dalla denominazione. La Gran Selezione, nata nel 2014 al vertice della piramide, è stata poi rivista al rialzo: oggi il disciplinare le chiede almeno il 90% di Sangiovese, il resto da soli vitigni autoctoni a bacca rossa, e uve esclusivamente di proprietà aziendale.Chianti Classico is Sangiovese: a minimum of 80% for the Annata and the Riserva, with up to 20% of other authorised red grapes. Since 1996 the rules have also allowed it unblended, and from the 2006 harvest white grapes — the Malvasia that featured in the recipe Baron Bettino Ricasoli published in the nineteenth century — have been out of the appellation. Gran Selezione, created in 2014 at the top of the pyramid, was later revised upwards: today the rules ask it for at least 90% Sangiovese, the remainder from native red varieties only, and grapes exclusively from the estate's own vineyards.

The Annata is released after twelve months and starts at 12% abv; the Riserva calls for twenty-four months, three of them in bottle, and 12.5%; the Gran Selezione for thirty months, again with three in bottle, and 13%. At the top of the pyramid the Consorzio has grafted on the Additional Geographical Units: eleven mapped areas — from San Casciano to Lamole, from Panzano to Vagliagli — which in this first phase may appear on the label of Gran Selezione alone.
Il Gallo Nero, emblema della Lega del Chianti già alla fine del Trecento, chiude il cerchio. Dal 2005 non è più il marchio del solo Consorzio, fondato a Radda nel 1924 da trentatré viticoltori: è inserito nel contrassegno di Stato applicato a ogni bottiglia della denominazione. Since 2005 it has no longer been the mark of the Consorzio alone, founded at Radda in 1924 by thirty-three growers: it is part of the state seal applied to every bottle of the appellation. If it is not on the neck, that wine is not a Chianti Classico.

Al colore è rosso rubino limpido e vivo, che con gli anni vira al granato. Al naso è intenso e riconoscibile: violetta, ciliegia e prugna, con la nota speziata e balsamica che il Sangiovese porta con sé. In bocca è fresco e abbastanza tannico, sapido, persistente. Non è un vino di potenza ma di tensione: è l'acidità a tenerlo in piedi e a chiamare il boccone successivo, mentre la sapidità allunga il finale e lo lascia saporito.In colour it is clear, vivid ruby red, turning garnet with the years. On the nose it is intense and instantly recognisable: violet, cherry and plum, with the spicy, balsamic note Sangiovese carries with it. On the palate it is fresh and fairly tannic, savoury, persistent. It is not a wine of power but of tension: acidity keeps it upright and calls for the next mouthful, while the savouriness stretches the finish and leaves it tasty.

The Annata is the sprightliest and the most immediate, and it is an honest way into the appellation. The Riserva gains in breadth and lets the oak show, which the rules require to be integrated and never dominant. The Gran Selezione is the most structured and the longest-lived, and it needs waiting for: opening it young means missing it.
A tavolaAt the table
Acidità viva e tannino presente: chiede piatti saporiti e sostanziosi, che la sua freschezza alleggerisce. Con la bistecca alla fiorentina alla brace il gioco è classico e funziona: la carne ricca e appena scottata smussa il tannino, il vino ripulisce e rilancia. Sulle pappardelle al cinghiale, dal sugo lungo e speziato, meglio una Riserva, che ha la persistenza per stare al passo del piatto. E sul pecorino toscano stagionato, asciutto e deciso nel finale, l'Annata più giovane resta la scelta migliore: è fresca, non copre, e alla seconda fetta si sente perché.Lively acidity and a firm tannin: it calls for savoury, hearty dishes that its freshness lightens. With grilled Florentine T-bone steak the pairing is a classic and it works: the rich, barely seared meat smooths the tannin down, and the wine cleans up and starts again. With pappardelle and wild boar, in a long, spiced sauce, go for a Riserva, which has the persistence to keep pace with the dish. And with aged Tuscan pecorino, dry and sharp on the finish, the younger Annata stays the better choice: it is fresh, it does not smother, and by the second slice you can taste why.

Il Chianti Classico è uno dei riferimenti del rosso italiano da tavola: gastronomico, vivo, mai stanco. Non cerca di stupire al primo sorso ma di accompagnare, ed è lì che dà il meglio di sé. It does not try to dazzle at the first sip but to accompany, and that is where it is at its best.
