The wines that suit it best are the Veronese reds built on Corvina, rounded out by Corvinone and Rondinella: Veneto reds of no great depth of colour, with cherry and a hint of spice on the nose, lively acidity and measured tannin. It is the acidity that does the most important work at the table — it lightens the fat and keeps the palate fresh for the next bite — while the gentle tannin never stiffens the food. You don't need one bottle for every course: you need a small progression. A light, fresh red for the antipasto, a fuller one for the first courses and the main, a sweet glass for dessert.

Antipasto: affettati e polenta frittaAntipasto: the cured-meat board and fried polenta

Prosciutto crudo, salame, soppressa e pancetta portano sale e grasso; i sottaceti aggiungono una nota aspra e la polenta fritta una crosta croccante e tostata. A light, fresh red sits well here — a Bardolino, or its rosé version, Chiaretto — served almost cold: the acidity refreshes the palate between one slice and the next, and the little tannin there is doesn't turn harsh against the vinegar of the pickles. Primi: bigoli all'anatra e ragù di corteFirst courses: bigoli with duck and barnyard ragù

Step up a notch with a Valpolicella Superiore or a Ripasso — the latter re-ferments on the Amarone pomace and comes out fuller and warmer. More body to go with the sauce, and that freshness that cleans the fat off the palate. For the firmer bigoli, the Ripasso is the right call; on the poultry gnocchi a Valpolicella Classico is enough, without covering the finer notes of the ragù.

Secondo: la grigliata mistaMain: the mixed grill

Costicine e salsiccia di maiale, una costata di manzo, pezzi di pollo: carne grassa e succosa, con la crosta affumicata della brace. Serve un rosso strutturato, con tannino maturo e buona freschezza. Il Valpolicella Ripasso è il tuttofare; sulla costata e sulle costicine, più grasse e saporite, un Amarone della Valpolicella giovane — servito non troppo caldo — ha la struttura per tenere testa alla griglia. Il pollo, più delicato, chiede meno tannino: meglio non andare più pesanti del necessario. You want a structured red, with ripe tannin and good freshness. Valpolicella Ripasso is the all-rounder; on the rib steak and the ribs, fattier and more savoury, a young Amarone della Valpolicella — served not too warm — has the structure to stand up to the grill. Dolce: cheesecake al mangoDessert: mango cheesecake

Qui cambia tutto. La cheesecake è dolce e cremosa: un rosso secco, accanto, sembrerebbe amaro. Si passa a un vino dolce. La risposta veneta è il Recioto di Soave, il bianco dolce da uve Garganega fatte appassire: albicocca, frutta tropicale e miele, con un'acidità che alleggerisce la crema della torta e ne richiama il mango. The cheesecake is sweet and creamy: a dry red alongside would taste bitter. Switch to a sweet wine. The Veneto answer is Recioto di Soave, the sweet white from dried Garganega grapes: apricot, tropical fruit and honey, with an acidity that lightens the cake's cream and echoes the mango. As a lighter alternative, an aromatic, gently sparkling sweet wine such as Moscato d'Asti, or a Fior d'Arancio from the Colli Euganei made from moscato giallo.
