Corvinone carries Corvina's name in the augmentative — «the big Corvina» — and shares its Veronese home, yet it has larger berries and a sturdier frame. A co-star of Valpolicella and Bardolino, it shines in the appassimento of Amarone, where it adds structure and tannin. Long believed to be a clone of Corvina, it is in fact an entirely distinct variety.
Il carattereThe character
Dove cresceWhere it grows
Corvinone grows almost only around Verona: in the valleys of Valpolicella — from Negrar and Marano to Fumane and Sant'Ambrogio — and on the Verona shore of Lake Garda, in Bardolino. It favours the hills, on mostly calcareous soils, trained to the Veronese pergola or to guyot. It buds late and ripens between mid-September and early October; it is almost never vinified alone: it is a co-star, blended with Corvina and Rondinella.
In Amarone the grapes rest for months on drying racks and lose water: Corvinone's thick, pruinose skin and large berries withstand this drying well, staying healthy and full of substance. To the finished wine Corvinone gives the structure and the tannin that make it a powerful, long-lived red, while Corvina supplies the perfume.

A tavolaAt the table
From fresh grapes, Valpolicella and Bardolino go with cured meats, pasta with meat ragù and white meats; served slightly cool, they are lovely even in summer. Amarone, powerful and warm, calls for substantial dishes: braised meats, game, roasts and aged cheeses such as Monte Veronese. Sweet Recioto closes the meal with dry pastries and dark chocolate.

CuriositàDid you know
The name is an augmentative: «Corvinone» means «big Corvina», because of its more voluminous berries and bunches. It was precisely this likeness that, for centuries, had it confused with Corvina and taken for a large-berried clone of it. Only in 1993 did an ampelographic study (Cancellier and Angelini, «Corvina veronese e Corvinone: due varietà diverse») and later DNA analysis make clear that these are two distinct grapes, sharing the name and the land but not the kinship.
Corvinone is almost always blended with Corvina and Rondinella, rarely on its own: the character described here is the typical one of the grape and its denominations, not of a single vintage.
