The trouble starts later, when water is too scarce for too long: the stomata close, ripening stops and the harvest comes in on fruit that has fallen behind, with less acidity. The line between the two is thin, and it runs through the soil, the variety and the people who work the vineyard.

Una rassegna pubblicata su Frontiers in Plant Science, che ha rimesso insieme i dati di decine di esperimenti su uve bianche e rosse, lo scrive con chiarezza: uno stress idrico moderato riduce il peso dell'acino e l'acidità totale, ma alza zuccheri, antociani e composti fenolici delle uve rosse, e in questo modo migliora la qualità del frutto. Sulle bucce dello Shiraz è stato misurato che i fenoli si concentrano proprio perché l'acino si è ristretto.The idea that the vine loves plenty of water is simply wrong. A review published in Frontiers in Plant Science, which pooled data from dozens of trials on white and red grapes, puts it plainly: moderate water stress reduces berry weight and titratable acidity, but raises sugars, anthocyanins and phenolic compounds in red grapes, and in doing so improves fruit quality. In Shiraz skins, phenolics were found to concentrate precisely because the berry had shrunk.
La stessa rassegna aggiunge però la clausola che conta: superata una certa soglia di stress, quei benefici non si vedono più. Non è quindi «meno acqua uguale vino migliore»; è una finestra, e va centrata. Per capire quanta sete ha una vigna non servono per forza strumenti. Nella scala che Agroscope usa in campo il primo indicatore è l'apice del germoglio: se cresce e porta foglie giovani l'acqua non manca; se la crescita si ferma la carenza è debole; se l'apice imbrunisce è moderata; se l'apice cade, lo stress è forte e prolungato.You don't necessarily need instruments to tell how thirsty a vineyard is. In the scale Agroscope uses in the field the first indicator is the shoot tip: if it keeps growing and carries young leaves, water is not short; if growth stops, the shortage is mild; if the tip browns, it is moderate; if the tip drops off, the stress is severe and prolonged.
Gli strumenti servono dopo, per mettere un numero su quello che l'occhio ha già visto: si misura il potenziale idrico fogliare con una camera a pressione, di notte o nel pomeriggio sulle foglie in ombra. Sotto, il meccanismo è sempre lo stesso. Underneath, the mechanism is always the same. The plant progressively closes its stomata, the microscopic pores in the leaves that let water escape into the air, and a chemical message travels from the roots to the leaves alongside that closure.

Se la chiusura dura, l'uva smette di maturare: l'accumulo si ferma e la vendemmia arriva su un frutto rimasto indietro.Closing the stomata is a defence: the plant stops losing water. But the same pores let in the carbon dioxide that feeds photosynthesis, and without photosynthesis no sugars are made. If the closure lasts, the grapes stop ripening: accumulation halts and harvest arrives on fruit that has fallen behind.
Nel mosto il conto si vede subito. Lo stress idrico abbassa il peso dell'acino e consuma l'acido malico: l'acidità totale scende, e con lei la freschezza del vino. Terra, vitigno e mano dell'uomoSoil, variety and the human hand
Il primo argine è il suolo. Un terreno che immagazzina l'acqua dell'inverno e la restituisce d'estate cambia il destino di un'annata secca: è quello che fanno la creta della Champagne, l'albariza di Jerez e certe argille profonde, che nella stagione delle piogge si comportano da riserva.The first line of defence is the soil. Ground that stores winter water and gives it back in summer changes the fate of a dry year: that is what the chalk of Champagne, the albariza of Jerez and certain deep clays do, acting as a reserve through the rainy season.
Poi c'è il vitigno, e qui la ricerca invita alla prudenza. Una rassegna di Tombesi, Poni e Palliotti su Italus Hortus ha esaminato gli studi sul comportamento delle varietà sotto stress e ha trovato che le stesse uve venivano classificate in modi diversi da gruppi di ricerca diversi: il Tempranillo, per dire, compare in entrambe le categorie. La conclusione è che non esistono due caselle, ma un continuo di comportamenti; le differenze vere si vedono nei dettagli, come le foglie più piccole e i vasi conduttori più larghi del Montepulciano rispetto al Sangiovese.Then there is the variety, and here research calls for caution. A review by Tombesi, Poni and Palliotti in Italus Hortus went through the studies on how varieties behave under stress and found that the same grapes were classified differently by different research groups: Tempranillo, for one, appears in both categories. The conclusion is that there are no two boxes, but a continuum of responses; the real differences show up in the details, such as the smaller leaves and wider conducting vessels of Montepulciano compared with Sangiovese.
Infine c'è la mano dell'uomo, e una pratica che molti credono vietata. In Piemonte, per i vini a DOC e DOCG, l'amministrazione regionale mette nero su bianco che l'irrigazione di soccorso non è una pratica di forzatura ma di buona gestione della pianta, e che può essere applicata per evitare i danni nei momenti critici in cui è a rischio la sopravvivenza stessa della vite. Bagnare, quando serve davvero, non è barare: è tenere in piedi la vigna che darà l'uva dell'anno prossimo.Finally there is the human hand, and a practice many believe is banned. In Piedmont, for DOC and DOCG wines, the regional authority states in writing that emergency irrigation is not a forcing practice but sound management of the plant, and that it may be used to prevent damage at critical moments when the survival of the vine itself is at risk. Watering, when it is genuinely needed, is not cheating: it is keeping alive the vineyard that will give next year's grapes.
