Asprinio

Campania · l'Agro Aversano, fra Caserta e NapoliCampania · the Agro Aversano, between Caserta and Naples

The name says it all: Asprinio comes from aspro, sour, and acidity is what defines this white grape of the Agro Aversano, between the provinces of Caserta and Naples. It grows on flat land, yet part of the wine starts high up: on the alberata, the historic training system in which the vine is married to a poplar and reaches as high as twenty metres, the harvest is still done from ladders. The result is dry whites, light in alcohol, and above all sparkling wine.

Il carattereThe character

ColoreColour
Straw yellow, more or less deep, in the still wine; in the sparkling, straw yellow of varying intensity with a fine, persistent mousse. These are the descriptors the rules prescribe for the two styles.
NasoNose
Intense, fruity and typical in the still wine, fine and fragrant in the sparkling. In practice you pick out citrus and white fruit, flowers and a mineral streak; with long lees ageing come bread crust and struck match.
BoccaPalate
Dry and fresh, as article 6 requires, and light in alcohol: the rules start at 10.50% vol for the still wine and 11.00% for the sparkling, and allow no total acidity below 6.0 grams per litre (7.0 in the sparkling). It is an acidity that makes you salivate and keeps the wine upright; the finish is savoury, with a salty edge.

Dove cresceWhere it grows

Asprinio lives on a plain, not on a hill: the Aversa DOC area takes in twenty-two municipalities — nineteen in the province of Caserta and three in that of Naples — north of the Campi Flegrei, in what were once the Regi Lagni. It is all flat, between the 10 metres above sea level of Villa Literno and the 101 of Qualiano, with vineyards facing mainly south; the climate is Mediterranean, with hot summers, mild winters and 702 millimetres of rain a year, about 60% of it falling between autumn and winter. The soil comes from the geology of the Campi Flegrei: loose pozzolana and yellow tuff at the surface, grey tuff below.

The training system that identifies Asprinio is the alberata aversana, which survives on part of the vineyards, and it is no affectation. The vine is married to a living support, usually a poplar, and reaches as high as twenty metres, with the canes strung in festoons from one tree to the next. The rules protect it as part of the environmental and cultural heritage, allow it by way of exception to the vertical trellis, which is the prescribed system, and give it yields of its own: no more than 4 kilos of grapes per square metre of canopy wall and 240 kilos per stock, with a maximum of 50 stocks per hectare. Anyone harvesting from the alberata must say so on the label, with the wording «alberata» or «vigneti ad alberata». Beyond the Aversano the National Register admits the grape in fourteen IGT zones across Campania, Puglia and Basilicata — Terre del Volturno, Roccamonfina, Valle d'Itria — and in Puglia, the rules report, some ampelographers recorded it as Olivese and Ragusano.

Aversa Asprinio DOC
Campania · Agro Aversano

The National Register admits Asprinio in one DOC only, and this is it, recognised in 1993. The rules protect it in two styles: «Aversa» Asprinio, with at least 85% of the grape, and «Aversa» Asprinio spumante, which calls for 100%. On the label the name may also appear as «Asprinio di Aversa», as article 7 allows. Here the high acidity is not a fault to be corrected but the raw material: it stands up to long lees ageing and gives taut sparkling wines, and the harvest is brought forward on purpose to keep it alive.

The basic version: fermentation and a few months in steel, then the bottle. The rules allow up to 15% of other non-aromatic white grapes from the provinces of Caserta and Naples, but many houses make it from Asprinio alone.
Spumante metodo classicoTraditional-method sparkling
The sparkling category in the rules calls for 100% Asprinio. With the second fermentation in bottle, lees ageing in the more ambitious labels runs from three to almost five years: the high acidity stands up to time, and the wine rests in caves dug into the tuff, where the temperature stays low by itself.
Spumante metodo MartinottiMartinotti-method sparkling
The second fermentation takes place in tank, with a few months on the lees: the result is a more straightforward, citrussy sparkler, to drink young. It is the style that brings sparkling Asprinio onto the shelves at a modest price.
Frizzante e metodo ancestraleFrizzante and ancestral method
Some houses go back to the old farmhouse practice: the wine ferments again in the bottle with must and yeasts, sealed under a crown cap, and stays on its own sediment. The rules recall that in the tuff caves Asprinio turned frizzante of its own accord, through a slow fermentation encouraged by the cool.

A tavolaAt the table

The classic local match is Campanian buffalo mozzarella: its creaminess asks for a wine that makes you salivate and cleans the mouth, and Asprinio does it without weighing the mouthful down, because it carries little alcohol. The same goes for fried food — zeppoline, small fried fish, courgette flowers — where the bubbles lighten every bite. In «Le Corricolo», his account of the journey to Naples published in 1843, Alexandre Dumas named it as the wine that went well with pizza and spaghetti: on Neapolitan pizza, between the tomato and the fiordilatte, the advice still holds.

In tavola: l'Asprinio fermo giovane a 8-10 °C, le versioni più strutturate — quelle affinate sulle proprie fecce o in anfora — a 10-12 °C, il metodo classico a 8-10 °C e lo spumante Charmat bianco a 6-8 °C.With raw fish and shellfish the still wine works, served cold; with fried food and fresh cheeses, the sparkling. At the table: young still Asprinio at 8-10 °C, the more structured versions — those aged on their own lees or in amphora — at 10-12 °C, traditional-method sparkling at 8-10 °C and white Charmat sparkling at 6-8 °C.

CuriositàDid you know

The National Register of Vine Varieties has listed Asprinio bianco since 1970 under code 016, and beside it sets an official synonym that has been argued over for two centuries: Greco. In 1804 Nicola Columella Onorati wrote that «the Asprinia grape, a white variety from which much of the Greco of Campania is made, is known under the name of Asprinio di Aversa»; his own contemporaries objected that the differences in shape between the two grapes left no room for doubt. The rules record the debate without settling it, and the two entries stay separate in the Register.

Traces of its old fame survive in the papers. Sante Lancerio, cellarman to Pope Paul III, noted that «the wine Asprinio comes from a place near Naples: the best are those of Aversa», and that the pope drank it in summer to quench his thirst before going to bed. A wine price list of 1640 set Asprinio at nine denari the carafe.
