A Santorini tutte le luci vanno all'Assyrtiko. L'Aidani è l'altra uva bianca di casa: nel bianco secco della DOP il disciplinare le lascia, insieme all'Athiri, il quindici per cento che resta, e in quel quindici per cento mette fiori e frutta gialla dove l'Assyrtiko mette tensione e sale. Oggi esce anche da sola, con l'indicazione più larga delle Cicladi. Ha acidità contenuta e corpo medio, il contrario del suo vicino famoso, ed è per questo che nel bicchiere i due funzionano insieme.On Santorini the spotlight belongs to Assyrtiko. Aidani is the island's other white grape: in the PDO's dry white the rules leave it, together with Athiri, the remaining fifteen per cent, and into that fifteen per cent it puts flowers and yellow fruit where Assyrtiko puts tension and salt. Today it is also bottled on its own, under the wider Cyclades indication. It has moderate acidity and medium body, the opposite of its famous neighbour, and that is why the two work together in the glass.

L'Aidani è un'uva delle Cicladi. La casa è Santorini, che con la vicina Thirasia forma l'area della DOP, e dove le viti crescono ancora intrecciate a canestro sulla sabbia vulcanica — la kouloura — per ripararsi dal vento. Home is Santorini, which together with neighbouring Thirasia forms the PDO area, and where the vines are still woven into a low basket on volcanic sand — the kouloura — to shelter from the wind. It does not stop there: the Greek producers' federation records it in Naxos and in Paros too, although the Paros PDO does not admit it, and notes that in recent years growers have begun trying it beyond the archipelago.

In the dry white it sits in the fifteen per cent Assyrtiko leaves, alongside Athiri; in Vinsanto, the sweet wine from sun-dried grapes, it goes with Assyrtiko through years in cask. Volcanic sand holds no water and yields are very low: the grape ripens without losing its scent, which is exactly what a white of moderate acidity needs. The varietal version, on the other hand, the PDO cannot host — the dry white calls for at least 85% Assyrtiko — so Aidani on its own is released as Cyclades PGI. And that space has narrowed recently: until the amendment to the specification communicated in January 2021 the minimum share of Assyrtiko in the dry wine was 75%, not 85%. Aidani and Athiri lost ten points at a stroke.

The producers' own sheets point the same way: vegetables, salads, small fish, fresh cheeses.

Su un piatto di cozze o di vongole saltate con aglio e prezzemolo l'acidità contenuta non è un limite, è il punto: il piatto è già saporito di suo, e un bianco troppo teso lo indurirebbe. Ci vuole un bianco secco, di corpo medio, profumato e senza legno — l'Aidani in purezza delle Cicladi, ma anche un Vermentino ligure o una Garganega del Soave fanno lo stesso mestiere. Con le sarde fritte o i gamberi al limone il gioco è identico, e il richiamo di sale del vino allunga il finale. Sui formaggi freschi di capra, dove nel piatto c'è un filo di acidità, la morbidezza del vino lo rimette in equilibrio.With a plate of mussels or clams tossed with garlic and parsley the moderate acidity is not a limit, it is the point: the dish is savoury enough already, and too taut a white would harden it. What you want is a dry white, medium-bodied, scented and without oak — varietal Aidani from the Cyclades, but a Ligurian Vermentino or a Garganega from Soave do the same job. With fried sardines or prawns with lemon the game is the same, and the wine's saline echo lengthens the finish. With fresh goat's cheeses, where the dish carries a thread of acidity, the wine's softness brings it back into balance.

Esiste anche un Aidani Mavro, a bacca nera, che i cataloghi europei tengono come varietà distinta: stesso nome, uva diversa, e non si sostituiscono.Two warnings about the name. The first: «Aidani» on its own is short for Aidani Aspro, that is «white Aidani». There is also an Aidani Mavro, black-berried, which the European catalogues keep as a separate variety: same name, different grape, and one does not stand in for the other.

La seconda riguarda un'etichetta. A Pyrgos, sul versante interno di Santorini, i due fondatori di una piccola cantina stavano decidendo come vestire il loro primo Aidani, mentre accanto a loro la figlia, che allora aveva tre anni e mezzo, disegnava. It was her mother, one of the two founders, who looked at the drawings and said one of them would make the perfect label; the other founder did not entirely agree at first, and she won him over. That drawing is still on the bottle, and today the founders' children run the estate.
